Black Bean Salsa

Everyone needs a great salsa in their back pocket, and I have to say, I think this black bean salsa is my new favorite.  The secret to this salsa is using dried ancho chiles.  Best of all, zero Weight Watchers points!

What are dried ancho chiles?

Dried chiles are a fantastic pantry staple that can instantly elevate the flavor of soups, stews, sauces, and marinades with their deep, smoky heat and complexity. Unlike fresh chiles, they have a long shelf life and are easy to store in a cool, dry spot, making them perfect for last-minute flavor boosts. From mild varieties like ancho and guajillo to spicier options like arbol or pasilla, dried chiles are incredibly versatile and can be rehydrated in hot water or blended directly into sauces. Best of all, they’re now readily available in the spice or international aisle of most grocery stores, making it easier than ever to add authentic depth to your dishes.

Black Bean Salsa

Yield: 8
Prep Time: 2 minutes
Cook Time: 10 minutes
Total Time: 12 minutes

This zero Weight Watchers point black bean salsa is so delicious and ready in about 10 minutes. This will keep in the fridge for up to a week, but it won't last that long!

Ingredients

  • 2 dried ancho chiles
  • 1 cup seasoning black beans (canned)
  • 1 cup beef broth
  • 1-2 chipotle peppers to taste
  • 15 ounce can fire roasted tomatoes
  • 1 cup cilantro
  • 2 tablespoons minced garlic
  • salt to taste

Instructions

  1. Bring two cups of water to a boil. Add the dried ancho chiles and remove from heat, cover with a lid and let sit for 10 minutes.
  2. Carefully remove the chiles from the water, slice and remove most of the seeds.
  3. Add everything to a blender and blend until smooth.
  4. Season with salt to taste.
