Viral Crispy Potato Salad Bites

These viral crispy potato salad bites are going to be a hit at your next BBQ.  Crispy potatoes topped with a creamy salad – the best of both worlds!  Be sure to follow along for more Weight Watchers recipes.

A video on TikTok went viral for this crispy potato salad, but every video I watched, they tossed the delicious crispy potatoes into the creamy salad, and you instantly would lose the crunch of the potato.  If you’ve followed me for any length of time, you know that I love crispy, crunchy food.  After the potatoes came out of the oven, it became clear that the potatoes would be a vessel to hold the creamy salad.  Swoon.

Ingredients for Crispy Potato Salad

  • baby new potatoes 
  • celery
  • pickles (I prefer dill)
  • seasonings: cayenne pepper, garlic powder, onion powder, salt, pepper
  • mustard
  • French onion dip
  • hard boiled eggs

Once the new potatoes have been drained and slightly cooled, carefully smash the potatoes down with a mason jar or glass to about 1/4 of an inch.  This way the potatoes will stay in tact, and be easy to flip after the first bake.

While I prefer a creamy topping, feel free to reduce the French onion dip to 1/4 cup.  The above photo is shown with 1/3 cup French onion dip.

Viral Crispy Potato Salad Bites

Yield: 4 servings
Prep Time: 5 minutes
Cook Time: 45 minutes
Total Time: 50 minutes

This viral crispy potato salad lives up the hype. I've made this version more Weight Watchers friendly, as well as using french onion dip in place of the mayo. This whole recipe is only 8 WW points, or 2 WW points per serving.

Ingredients

  • 1 pound baby new potatoes
  • 1/2 cup celery, chopped
  • 1/4 cup dill pickles, chopped
  • 2 hard boiled eggs, chopped
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt and pepper to taste
  • 1 tablespoon pickle juice
  • 1 tablespoon Dijon mustard
  • 1/3 cup French onion dip

Instructions

Preheat your oven to 425°F (218°C).

Boil the potatoes: Place the baby new potatoes in a pot of salted water and boil for 15–20 minutes, or until fork-tender. Drain and let them cool slightly.

Smash and bake: Line a baking sheet with parchment paper and spray with avocado oil spray. Add the drained potatoes to the sheet and use a mason jar or glass to press each one down until they are about 1/4 inch thick. Season with salt and pepper. Bake for 20 minutes, flip, and bake for another 20 minutes
until golden and crispy.

Make the salad topping: While the potatoes bake, mix together the chopped celery, dill pickles, hard-boiled eggs, cayenne, garlic powder, onion powder, pickle juice, Dijon mustard, and French onion dip in a bowl. Stir until well combined.

Assemble: Once the potatoes are crispy and out of the oven, top each one with about a tablespoon of the salad mixture. This helps keep the potatoes crispy and adds a cool, creamy contrast.

Notes

This can absolutely be made ahead! We tested the potatoes an hour after baking and they were still crispy.
Want them warm again? Just pop them in the air fryer at 375°F for 2–3 minutes before topping.
Delicious served warm or at room temp—great for parties or meal prep!
