I did not want to get up this morning! I wanted it to be Sunday morning, but sadly its Monday!
I have a recipe I am doing tonight that only calls for the top two inches of asparagus, so last night I made a batch of asparagus guacamole – the only thing I did differently was add fresh cilantro and a whole seeded jalapeno.
I ended up making both chicken and steak kabobs – they had this meat on sale, I picked it up and used my super duper meat tenderizer before marinating the meat – it turned out great!
The recipe I am trying tonight is from LaCucina magazine – a farro, scallop and shrimp dish with a saffron sauce. I found the farro – guess how much it cost for an 8 ounce package?? $8.45! Then I moved on to find the saffron – $9.85!
So I decided to switch out the farro for orzo, but felt the recipe needed the saffron and I bought it – the other factor was if it fit into my $125.00 weekly food budget, and I had her ring that up last – my total grocery bill came to $121.10 – made it!
I am still using up my 1 pound of baby spinach and I ended up using the rest of my liquid egg whites: Breakfast comes in at 265 calories, 1 fat and 42 carbs:

That meal on the BBQ makes me wish I had a grill of my own – and that it was summer so we could get some local corn on the cob. Yum!
Asparagus guac is a good sub. 🙂 We’ve made it and loved it.

When I was little I remember exploring the spice cabinet and found my dad’s stash of saffron. Needless to say, I used way, way, way too much and I remember him explaining only HE would use it in the future – it’s the most expensive of the spices!!
