I have to say that I think I am building up my stamina because usually after working the farmers market two days in a row, I am really slow the next day.  My back is a bit sore, I can feel muscles in my legs I didn’t even know I had.  But yesterday I got up at 7:30 and went to town on my to do list.  One of the things I love being off is being able to make different breakfasts and not eating McDonalds!

I found I had wonton wrappers in my fridge, so breakfast wontons were born.   This time I used an egg, egg whites, mixed green scramble and topped the wontons with cooked uncured bacon and shaved radish.  You can make a bunch of the baked wontons ahead of time and keep them in an airtight container and they will stay crunchy.  This plate was only 7 smart points!  (2 for the egg/egg white mixture, 3 for the wonton wrappes and 2 for the bacon).

It was a hot day out so I got my walk in before noon yesterday.  I did what I call “mailbox sprints.”  Helen does something similar with telephone polls – you just sprint to one mailbox, walk to the next one, then sprint again.  It shakes things up a bit and it felt really good.  And the houses are pretty spread apart, so it was a bit of a challenge!  Had to cool down by the river though!

You can’t tell in that picture, but I was RED when I got back.  Not too long after I got in the car to run errands – no wonder – check out the temp!

I found frozen shrimp in my freezer so decided to do a quick stir fry.  It helped that Hannah and Jacob ordered Chinese takeout when I was gone and there was still some white rice in the fridge.  4 ounces of shrimp (1) broccoli slaw, zucchini and chopped romaine ( 0) 3/4 cup leftover white rice (4) and a 2 point stir fry sauce:  one tablespoon black beans sauce (1) 1/2 teaspoon soy sauce (0 ) 1 tablespoon teriyaki sauce (1) and 1/2 teaspoon sriracha (0 ) with a squeeze of half a lime.

I did all my laundry, washed sheets, paid July bills that aren’t auto pay, did some more computer work on my linked in Instagram account (check it out if you have a chance!) and was all around productive.  Love!

So also in my deep freeze I found pulled pork that I have no idea how long it’s been in there, but maybe a month or two?  Pulled pork sammies were on the menu.  Long time readers remember how Tony and I hate onions, except for the fact that we loved onion rings – only if they were really thinly sliced and had a light batter on them.  I continue to rave about the Hardcore Carnivore Black Rub and decided to add that to my onion ring batter.  Well, duh, it turned the batter black, so I decided to add black sesames to the mix:

  • 1/2 of one large onion sliced thin
  • 1 cup flour
  • 1 tablespoon Hardcore Carnivore Black Rub
  • 1 tablespoon black sesame seeds
  • 6 ounces lime seltzer (or beer)

Mix up the flour, black rub, sesame seeds and lime seltzer – you kind of want a pancake batter consistency.  Dip the sliced onions into the batter and deep fry at 350 degrees for only about 1-2 minutes per side.  Salt when they come out of the fryer, otherwise no other seasoning is needed.

Um, I may have thrown a couple dill pickles in the fryer too!   1.5 ounce roll (3), 3 ounces pork (3), Stubbs spicy BBQ sauce (0 ), 4 points for 1 ounce of the onion rings and 2 points for the fried pickles.  Oops – I said 11 points on Instagram, turns out it’s 12 points, but either way, I had the points for it.  This burger was perfection:  soft bun, spicy pork, salty onion rings and tangy pickles – umami sandwich!

Alright – I have to scoot to WW really quick.  I am going to face the music – I know I am probably up from vacation – lots of wine, and chips and onion dip among other things.  But it’s all good!  Make it a great day – another hot one here today, so I’ll be headed to the gym.  Make it a great day!
