So this weeks BSI ingredient was a lot easier to work with, simply because I like it! That being said, I decided that I was going to come up with a recipe using only ingredients I had on hand. Easier said than done! Well, when I saw these guys, this was ingredient #1:
Chipotle Pepper Black Bean Potato Salad
- 15 ounces potatoes
- 2 eggs
- 2 tablespoons Dijon Mustard
- 1/2 cup sour cream (I don’t like mayo that much!)
- 6 ounces canned black beans
- 1 tablespoon chopped cilantro
- juice of half a lime
- 2 chipotle peppers in adobe sauce, chopped
- salt and pepper to taste
Boil the eggs and potatos until done. Let cool. Peel eggs and chop. Chop potatoes in quarters. Add sour cream, mustard, cilantro, black beans, chipotle peppers and salt and pepper and mix well. Sprinkle with lime juice and mix again. The best part is the nutrition! Each heaping 1/2 cup serving comes in at 100.5 calories, 2.3 fat, 15 carbs, 2.8 fiber and 5.5 protein! Sadly, I think I am the only one in my family who will eat this, but I think a couple of my friends at my office will like this!

And I found out that www.calorieking.comhas Sweet Tomatoes on there! So my lunch came in at 578 calories, 26 fat and 72 carbs.

- 1410 calories
- 59 cat oops! 59 grams of fat – nice catch Tony!)
- 163 carbs
- 68 protein
- 20.3 fiber
No exercise – we leisurely walked at the mall so I don’t think that counts! Off to clean the kitchen and watch Donald Trump’s Show tonight – that is a guilty pleasure of me and Tony to watch that show! See you tomorrow!!

I had diabetes during my last pregnancy and it is sort of like being vegetarian, if you don’t get creative you will die of boredom. Also one of my favorites was a half bagel, cream cheese and fresh strawberries, etc. or any ripe fruit. That got me through.
