Over the weekend Tony and I stopped by Caputo’s to pick up prosciutto. If you’ve never been to Caputo’s in the Chicagoland you have to check out their produce section and their deli. It’s pretty amazing. There is always a huge line at the deli, but it’s worth the wait. While I was waiting for my turn, I saw this hot capicola and decided I had to have it. This meat is like butter it’s so tender and delicious. While driving home Tony had the idea of me making breakfast cups in my muffin tin with the capicola – genius!
[amd-zlrecipe-recipe:22] These were so delicious! Best part? Breakfast is done for 4 out of 5 days this week. #winning!
So I finally went to Dick Pond over the weekend to get fitted for good shoes. They had me get on a treadmill and actually videotaped me walking and running. Turns out one foot has supination and the other pronates. These are words I didn’t really knew existed. Bottom line was that I needed to get “stability” shoes to help with both feet. I ended up buying a pair of Brook’s – a shoe I never bought before. Luckily I was using gift cards I got for Christmas – I don’t think on my own I would spend $109 on a pair of shoes, but I know it’s worth it. As a total coincidence, my blog friend Catherine bought the same pair of shoes over the weekend – she’s found them at DSW for $70 – when these wear out, I’ll have to check that out.
As luck would have it, while walking into the office yesterday, I completely slipped on ice that was outside our front door. I landed on my left knee and side – and of course when I walk into the vestibule there are THREE bags of unopened salt, so I quickly got it salted so no one else would fall. I ended up just walking 2 miles to break in my shoes and not put too much pressure on the knee I fell on.
Over the weekend I made Tony one of his favorite soups – navy bean soup with smoked ham hocks. I left it simmering when I went to the restaurant on Saturday night. Later that night Tony texted me and said “I just had a bowl of soup – it was awesome!!” Two thumbs up. Only one slight problem. It kind of looks like dog food in a bowl, but trust me, there was some great flavors going on here. I didn’t really follow a recipe – just started out with carrots, celery, potatoes and garlic. Then added two cans of drained navy beans, 6 cups of chicken broth, and then three smoked ham hocks.
On the side I had a serving of these flat bread crackers – I am on the fence with these – some were really salty.
It started snowing really hard and our office ended up closing at 3:30. My normal 35 minute drive home took me an hour – some parts were pretty slippery and slushy. Yesterday’s snow pushed us into the 5th snowiest winter in history! Gah. I ended up making us some more prosciutto wrapped cantaloupe as an appetizer. Tony didn’t have a taste for any of my menu ideas, so he ended up having a salad and I made . . . wait for it . . . PIZZA!
While the stove got to temperature, I decided to do the T-25 workout before dinner. I have to say, I missed me some Shaun T! Last night was Cardio – I have to say, I love the count down clock because believe it or not, even though there aren’t any breaks for 25 minutes – it was over before I knew it. I like that the equipment needed? NADA!
Note to self: clean your desk!
I used the second half of my sourdough bread. I par-baked the dough on my pizza stone at 450 for about 7 minutes. Took it out of the oven, put my toppings on it (sausage, pepperoni, baby spinach) and finished it off on the bottom rack for about another 9-10 minutes. This crust was awesome. It was thicker than thin crust, but had such a great crunch to it.
I had two slices of this. I think I could eat pizza every day and never get sick of it! And later that night, Tony and I each got a snap-chat from my step-son Joe. He likes to rub his Austin weather in our faces – especially this winter!
Alright, I am off to shovel before work and still have to put my food together for the day. Tonight’s T-25 is Speed 1.0 – can’t wait to see what that one is like! Make it a great day!
I know I’m about 5 million days behind but… Isn’t t25 great? I love it
Yep – I love how it seems to go by so fast!!
So what does Joe think of the 100-degree heat in the Summer? Because I get tired of it really quick here in Dallas! I’m enjoying this colder (for us)winter here, but would not want nearly as cold of weather as you are getting there.
I’m so glad you finally went and got fitted for shoes. Now that you know what style (Stability) and size of shoe you need, you’ll find you can buy them at discounts all over the place. Next time ask me I can direct you to a bunch of discount websites where you can even compare different brands of shoes, i.e. Brooks vs. Asics vs. New Balance for example.
Thanks Helen – when these wear out I’ll let you know! 😀
Yum those breakfast cups look delicious!
I only buy Brooks shoes for running and I love them.
I loved that cardio workout too and you’re right it’s over before you know it. The first part of the workout I had to adjust a little but in the end I played with the grown up kids 🙂
I keep giving Tania the stink eye too Fran! 😀
Love your new shoes! What a shame you took a fall on the ice. I hope winter gets over soon for you.
Me too Tami – I just don’t want to see dirty snow anymore. 🙁
oh no! I’m so sorry you fell! 🙁 I’m with you about Caputos’s! I used to take L there when he was 2 or so and he wouldn’t be patient enough to wait in the deli line, so, I would enter the store, bee line it for a deli ticket, shop for my produce, and then head back to the deli section. I never missed my number! 🙂
That soup sounds like something my husband would love!
Had I done my full grocery shop there Court, that is the best technique!
That pizza looks so good! I really need to get a sourdough starter going again! 🙂
after years of never falling on ice, i’ve fallen twice this winter…WTH? is it our age? Who knows, but wowza, not fun! Glad you are ok! I’ve been wearing brooks for at least 30 years. Your meals all look delish! Thanks for sharing.
I hope it’s not our age Jody! And so far so good on the Brooks shoes!
Capicola is an Italian cold cut. Southern Italians call it Gabagoul. The variety Biz bought has a spicy coating on the outside of the roll. It is to me an un-aged version of Prosciutto.
As most of you are aware I will not put hot things into my pie hole, so I never eat this.
Ha – nope, no hot things in your pie hole!
Breakfast cups and pizza! Yum! I do love the idea of having breakfast done for the whole week!
It’s like I am having your Wahoo Fish tacos every day!
Oh yum! I’ve seen these egg cups on pinterest and really want to try them. Maybe next week!
You’d love them Lisa because you can just grab them and go to work. 😀
Brooks shoes it is…going to check out DSW on my next shop outing. Good shoes are important. We take our feet for granted when we’re young. Cause in older years, the feet pay for the abuse.
So I need to make those cheese and broc breakfast cups….that’s a great idea. My goodness that pizza looks yummy, yes, I could do pizza every day too, but then I would probably look like a pizza in a couple of weeks (fat and round).
Sorry about your fall…it happens so quick, I fell on my tail bone about 3 weeks ago (in the house, slippery floor, husband moved the rug) and it still hurtz!!! Take care Biz!!
Oh no! Yep, the tail bone fall hurts the worst. I am 90% better today. I suggest you spray your muffin tin with Pam so they come out easy – some of mine stuck a bit. 😀
OOOH….those breakfast cups look GREAT!!! LOL at “looks like dog food in a bowl” Can’t say I agree, looks like yummy soothing soup to me. Maybe I’m part dog.
Ha! Love this comment Roz!
I made egg cups over the weekend too! Mine kinda sunk in after they cooled so they resemble a flat tire. lol But they were tasty! This is sad..but I’ve never heard of capicola before. Our grocery stores are so limited in our area. The pizza looks awesome. Hubby would be all over that pot of Navy Bean soup! That’s his kind of meal!
Nice shoes! Never had Brooks before but I’ve heard they are comfy. Sorry about your fall but glad you are ok! Hurry up Spring!!! 😀
Capicola is an Italian cold cut – and before Tony, I never heard of it either! You can get it regular or spicy – I of course get it spicy!
Ouch re the fall!! I hope you’re not sore today – but if you keep moving (especially with your lunchtime swims), stiffness hopefully won’t be an issue. I walk part of my work commute and I have some spikey things I wear on the soles of my shoes so I get better traction.
Those egg cups look yummy! I may finally make some for myself! I’m pretty boring with my breakfasts – usually cold cereal/skim milk/banana – and I don’t really mind that except that they lack enough protein.
I’ll be interested to hear how the new shoes work out for you. Yeh, they’re expensive, but if that’s what works, they’re probably worth it. I try to reserve mine just for my workouts to make them last longer. I’ve worn New Balance for the past several years, but I’d like to give Brooks a try because it looks like they offer the stability and wide width I need.
Yep, the swim helped a lot and today I have just a touch of knee pain – could have been worse!
Loving the shoes – and I am like you, I only wear them in the gym (not even outside!) to make them last longer. One reader said she found this brand of shoe at DSW for $70!
Brooks = <3 Been wearing them for about 10 years now. LOVE! Be sure you sign up at Brooks website for great notices on new shoes, sometimes clearance things, etc. I'm looking forward to hearing all about T25 – almost got it but chickened out. I have never tried capicola before – will give it a try soon. (Instagram @toulousethewonderweenie)
I love your Instagram page!!!! And I am loving the shoes so far – and Shaun T and I are going to be BFFs again!
Everything about this post made me happy (especially the return of Shaun T!!) except your fall (and the snow but I’ve already moaned a lot about winter) – hope your knee is completely OK.
That pizza looks awesome!!! And, I think I might make the breakfast cups but I don’t know if we have the capicola so I will just use proscuitto.
Love the new shoes!!
Ham would work too Kim!
You look great!!
Funny about the weather thing. I chuckled. But it was 72 here yesterday. 🙂
Thanks Marcia – and yes, I am jealous of your weather too! 😀
Nothing worse than the slip and fall! I hope that you recover from that OK! You still did your cardio, amazing! Your soup recipe looks yummy, I think I will do something similar with lentils. You rock!
Jan, if you have lentils, you might like this recipe for a lentil bolognese – I need to make this again!

70*??? I miss that temperature. Where is it??
Ouch about your fall! Glad to hear you didn’t get super hurt. We’ve had tons of people fall lately in our work parking lot due to black ice, so I usually walk like a 90 year old shuffling across so I won’t fall.
That is going to be my strategy from now on Courtney! Slow and steady so I don’t fall.
The breakfast cups look great! I cannot believe it is snowing there AGAIN!
We are supposed to get rain tomorrow, so we’ll probably flood – so done with this winter!
I got fitted at a local running store too, and have been getting Brooks ever since. Love them. I gotta find me the T25 workouts. I think that would be right up my alley. I liked Insanity, but a 25 minute workout would be great!
You would LOVE T25 Wendy! I swear it’s over before you know it – and super intense.
Whatttt? I had no idea your feet could do different things when you run! I love Brooks- they’re my go to shoes. Those little egg cups look totally delicious (for breakfast lunch or dinner!).
I didn’t either E! But I am loving the shoes – it’s like I am not wearing anything at all!
I am all over those broccoli cheese cups. I can’t wait to make a batch. I think the Cappy will convince my husband to try them. I have him addicted to your breakfast tacos:)
Yeah for good fitting shoes.
OMG, I love capicola – I hope your hubs likes them – and glad he loves the breakfast tacos! I think they are so filling. 😀
LOVE that picture of you – you’re looking amazing as ever!
Umm…that pizza…in my belly now please!
Love the new sneakers! I”m going to call them the silver bullet! I’ll be interested to hear how they feel since you were fitted properly. Such a great idea for a runner.
Well, in that angle of the camera Lori, you can’t see my muffin top! 😀 But thank you!
I am LOVING the shoes – my right foot stopped hurting by the second day – winning!
your breakfast broccoli cups looks awesome, i appreciate the recipes.
