I had the last square of my Green Monster casserole left for breakfast yesterday, but I decided to switch it up – the store brand of tortillas I buy says 16 chips are one serving for 140 calories, I ended up using 8 chips and then after i heated the casserole, I cut it into 8 pieces, topped the egg on the chip and sprinkled 1 ounce of shredded cheddar cheese over the top of the nachos and put them under the toaster oven broiler for a few minutes.
Then topped with some avocado and hot sauce – bam – breakfast party on your mouth!
I had half a day at work so straight from work I went to the gym. My ultimate goal for 2013 is to run a sub 30 minute 5k. My PR right now is 32:11, so I am getting close! I decided to do an interval on the treadmill, running longer and farther to build up my running stamina.
Five sets of 12 minutes – 4 minutes at 4.0 mph, 4 minutes and 5.0 mph then 4 minutes of 6.0 mph – then repeat that 5 times for a 60 minute treadmill workout. I set my stop watch for 4 minute intervals and it beeped at me when it was time to change the pace.
I ended up running 4.54 miles without stopping! The change of pace was perfect – after running at 6.0 for the four minutes, it was great to come back down to 4.0 and recover and by the time I got back to the next 6.0 pace I was ready for it.
I had some errands to run, one of them hitting up the grocery store for our burger contest ingredients. I also wanted to pick up some Mission extra thin corn tortillas to make tortilla chips to have at the house and to bring to Hannah’s block party I am going to later today. Couldn’t find them though.
So I bought blue corn tortillas – huh. This whole 2 pound package was only $1.49!
So I did a test batch last night for Tony and I. OMG, these chips are amazing. I just put them in the deep fryer at 350 for about a minute – 30 seconds a side and then drain them on paper towels and salt. Yum!
Yep, I had a couple beers with the chips and salsa. That was pretty much my “lunch” because I only had some of my granola before the treadmill workout.
We need to tweak the recipe more – but these were some damn fine burgers. It was a combo of ground beef and pork. I can’t give away any of the other ingredients though! Although I did come close to get Chicago’s neon green pickle color!
Jacky, I ended up adding green food coloring to your grilled pickle recipe – I think the longer they sit the more food coloring the pickles will absorb, we’ll see! But I thought your son would love the color of these pickles!
Since we had chips and salsa before dinner, I didn’t even bother with sides last night!
I did have a few glasses of wine last night too – and I don’t feel bad this morning but feel super dehydrated and I have a slight headache. I think I may kick alcohol to the curb for a while – it was about 600 empty calories last night!

- 2260 calories, 59 fat, 172 carbs, 14 fiber and 70 protein
- 30% calories from carbs, 24% from fat and 46% from protein
- 60 minute treadmill workout
I can’t wait to see Hannah! It’s been a few weeks since I saw her, and once school starts for her, with work AND school her schedule, she is quite busy. It’s a gorgeous day too – it’s sunny with a high of 75 today.
Alright – off to make Hannah some crack granola, make some salsa and fry up some more chips.

Well John, its one of the pitfalls of having a deep fryer, you just try to find as many things to deep fry! I actually really liked how the blue corn tortillas though. 😀

Great job on your workout! One of my favorite interval workouts is what I call 1-3-1: One minute of fast walking, 3 minutes of moderate running, one minute as fast as you can. It’s a great way to sort of shock your body and also doubles as a type of speed workout to make you faster.

Congrats on the 4.5 miler!! That’s huge! And you treated yourself with some delicious food, as always. You’re lucky you aren’t like me…I can only drink the really heavy beers, with tons of calories. My favorites are pale ales with around 180 calories each! Yikes.
I do like the heavy beers better – any Sam Adam’s, Boddingtons, Goose Island Sofie – just wish they weren’t so calorie heavy!

Great job on the run! Running is like the last thing on my mind right now but on the bright side, I have been squatting heavier and heavier so I am making progress in terms of lifting.
The Budweiser Clydesdales were in our town today, so we hung out downtown and watched the parade, spent some time at a festival in the park, and generally plugged our noses at the horses. They stink to high heaven! Much worse than normal horse smells…
Besides the stink, that sounds like a fun day Erin!
