I loved reading that a few of you would have even tried the goat meat at the restaurant we went to the night before last – I don’t think I am that adventurous . . . yet. Although if I was with someone who ordered it, I might try a bite!
Two people gave me links to hot crab dip recipes, and both sound amazeballs.
Peggy sent this recipe to me via facebook – I love that it has artichokes in it because I love artichoke dip and what better than to add crab?! Thanks Peggy! How delicious does that look? And it’s low carb if you use veggies for dippers. Very cool new to me blog by the way – please check it out if you have a second.
And loyal blog reader Randi sent me this link, equally delicious. Thanks Randi! This one is from Coastal Living magazine.
It’s so sad that I never really even tried seafood until I was in my 30s. Growing up we’d have summers in Virginia, newspapers on picnic tables with bushels of blue crabs and I stuck my nose up to it – such a waste! No worries though, as I am making up for lost time.
So after my indulgent, 1100 calorie dinner the night before, I reigned it in and had a green monster smoothie. Now, you need to pay attention to what you put into these smoothies, because these can still be a calorie bomb.
- 1.5 cups light vanilla soy
- 1 container Chobani yogurt (mine was mango)
- 1 frozen banana
- 1 tablespoon of peanut butter
- 1 tablespoon of honey
- 2 cups of baby spinach
Total: 484 calories, 17 fat, 53 carbs, 7.4 fiber and 32 protein
While this is high in carbs for me for breakfast, it has so much other stuff going on, that I can have this a couple times a week – 190% of Vitamin A, 64% of Vitamin C, 39% of calcium, 23% iron and 30% of your daily fiber intake.
Plus it’s delicious, even though I can’t get Tony to try one! He’s always joked that if he even tried to drink one, he’d have to drink it over the toilet because it would probably go right through him!
It again was only 72 degrees yesterday, but now that I know that my body will get used to the cold pool within a couple minutes, I cannot tell you how refreshing this is. How lucky am I that I get to swim outside on my lunch break?! 40 minutes done and done. I kind of look like I have to take a shit in this picture, but I assure you I was just chilly getting out of the water.
I made a quick stir fry for lunch yesterday – literally 10 minutes before I had to leave the house I was like, I can make it! It helped that the noodles were already cooked. It was 3 ounces of chicken breast tossed in a bit of corn starch, carrots, broccoli, water chestnuts. The sauce was sriracha mixed with this stir fry sauce that’s been in my downstairs fridge for who knows how long – it was still good though!
When I got home from work Tony was mowing the lawn, so I started making dinner. I love chicken thighs but they take longer to cook than chicken breasts, and the last couple times I’ve slightly undercooked them – just ew.
Because the thighs are higher in fat, I decided to cook them on top of a rock over a cast iron skillet so that I wouldn’t get any flare ups. It worked out perfectly!
It was when I took this picture that I realized “do I forget that there are only two of us for dinner?” We each ended up only eating one piece of chicken, so I think I’ll take the meat and make it into a soup over the weekend.
I ended up making a mustard bbq sauce. While I love the Rudy’s bbq sauce, its really Tony’s favorite, so I want to ration it as much as possible. And, turns out, I love all things mustard!
Horseradish Mustard BBQ Sauce
- 12 servings – about 1.5 tablespoons each
- 35 calories, .5 fat, 6.5 carbs, .65 protein
Mix together:
- 3/4 cup horseradish mustard
- 1/4 cup balsamic vinegar
- 3 tablespoons brown sugar
- 1/2 tablespoon smoked paprika
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon black pepper
- 1 teaspoon hot sauce (I used buffalo Tabasco)
- 1 tablespoon ketchup
- 1/2 teaspoon celery salt
Mix together and store in a mason jar.
I know it kind of looks like peanut butter in a jar, but trust me, this has a lot of flavor going on. You can taste the kick of the horseradish and the tang of the balsamic, and of course, the mustard flavor is the star of the show.
An hour after dinner it was time for Day 15 of Insanity. Now I know I am about 4 days behind, but I am totally okay with that. It might take me 65 or 70 days, but I’ll finish it! My step-son Joe apparently likes to check on Instagram to see my sweaty pic of the day! He told his Dad he was proud at how I’ve kept up at it!
I got a couple emails from readers asking me if its gotten easier to do, and the real true answer is not really. However, I am able to complete more of the exercises, and I’d say I am consistently able to do 90% of the exercises – the other 10% I modify. My belly keeps getting in the way of doing side plank obliques!
Stats for the Day:
- 1788 calories, 59 fat, 209 carbs, 21 fiber and 107 protein
- (not photographed – 160 calorie pack of pretzels eaten at work, a café latte at work and an ounce of almonds before bed)
- 47% of calories from carbs, 30% from fat and 23% for protein
- 40 minute COLD swim
- 40 minute Day 15 of Insanity
- no alcohol
I am making more pancakes for breakfast, now that I know how to store flax seeds! And I am going out to lunch for a co-workers birthday today. I already splurged once already this week, so I’ll keep it in check at lunch.
We’ll make it up to 82 today! Come on summer weather. Make it a great day!
CAN NOT wait to make this! LOVE LOVE LOVE mustard and horseradish!
Swimming is my favorite, it’s supposed to be super nice the rest of the week and I can’t wait to spend it in my dad’s pool. My cousin just finished Insanity and she looks amazing, but one thing she did say is that it never really got easier then entire time.
I am beginning to realize that Sam – I just find that I can keep up more the further I go along. But now I pretty much know all the workouts so I know what’s in store – I kind of liked not knowing what was going to come next! 😀 Hope you are doing well on it!
my sister lived near boston for a couple of years and refused to eat seafood. Now she loves it and is kicking herself much like you are 🙂 Also, you can get a cheapo meat thermometer so you don’t get that ick chicken. I did it way too many times and just hopped on Amazon, no more undercooked meat!
I actually have a remote thermometer, but I was trying to be a bad ass like Bobby Flay and thought I could tell when meat was done! #not!
Ok your way to cook the chicken thighs on the grill over the cast iron skillet – genius! Keep those great ideas coming, love them!
It’s almost your vacation time!! You will have so much fun!
side plank obliques! OUCH! Keep up the good work. I don’t know HOW you do it at night. I can only exercise in the morning. It’s amazing how many people differ in their time preference to work out. I do it 6am on an empty stomach. You should take a survey on that…
I like to ease into the day Jody – I am more of a night person anyway. I used to never get up early, even timed it to see how long I could sleep before I had to get up and get ready for work. Now I love my hour and a half in the morning – so much time for cooking – ha! 😀
Ditto Suzie, you had me cracking up over your caption on the swimming photo! So nice to have a pool at the office- you ARE lucky!
Well, to clarify – the gym Tony signed me up at as a surprise last year is actually a fancy tennis club, but since I work in the same village, I get resident rates – its literally a 60 second car ride from my office, so no excuses! 😀
I’m so cracking up over, “I kind of look like I have to take a shit”, girl you is crazy!! 😉 The pool would be refreshing! Today I can actually get in mine and I plan to, the water is 78 and it’s 78 outside…yay!! Pretty sad that’s it’s June 20th and this is my first swim of the year! That mustard sauce sounds awesome, I like every ingredient in it!
Hooray for getting in the pool! I was picking up a couple things at the grocery store yesterday and they had all of their plants 50% off because it was an “end of season sale.” WTF?! We haven’t even started the summer season!
I’m pretty sure that Insanity never gets easier – you just end up pushing harder because Shaun T is yelling at you to dig deeper!!! The sense of accomplishment is the best part for me (and being done!).
Must try that horseradish mustard BBQ sauce…..sounds good. Have a great day!!!
Sounds like a phenomonal sauce. Lucky Tony!
I had to chuckle at your comment Abbe, because Tony wouldn’t touch that bbq with a 10 foot pole! And that goes for about 70 percent of the food I make!
That bbq sauce sounds amazing! And you can’t go wrong with crab dip…ever 🙂 I like smoothies, but I’m not a big fan of drinking my calories because I never seem to feel full afterwards…or at least I feel like I get hungry quickly after. Hope you have a good one
I have to agree Erica – sometimes they keep me full for hours, other times a couple hours later I am hungry!
We went to an Indian buffet this past weekend. I always fill half of my plate with salad and that doesn’t leave me a lot of room for other things. No stacking allowed and no second trips either. Anyway, one of the things I tried was a goat and spinach dish that was so spicy my lips were burning. It was really, really good. 🙂 With your love of hot things, you would have enjoyed it very much.
Brave woman to try that Caron! I guess if it was on a buffet, I would venture to try it too. 😀 I love your buffet philosophy too!
Love me some crab artichoke dip!
