I guess I can be a bit impatient sometimes. After a week of consistent exercising and staying away from my beloved wine, I thought I’d wake up yesterday feeling. . . thinner. But I didn’t. In fact, I just felt fat.
Mind you, I know my last weigh in was at 170 pounds, and I told myself I wasn’t going to weigh myself until after my 21 day challenge, and I won’t. But how I thought a magical transformation would happen in just one short week, is beyond me.
So when I stopped by Brooke’s blog yesterday, her post was exactly what I needed. Here is a girl who’s lost over 150 pounds doing it the right way, with diet and exercise. Yes, it’s taken her four years, but she’s stuck with it. Rome wasn’t built in a day, and I have to know that if I string more good days together than bad, that I will eventually reach my goal. One of my favorite lines of the post was “telling that inner negative voice to shut up.” I know a lot of us have that voice in the back of our heads, just tell her to shut the f_ck up!
I have Tony to thank for my breakfast yesterday. While I was up at the crack of dawn on Saturday morning and he slept in, the roles were reversed on Sunday. He ended up making me a fruit compote, for lack of a better word. He put frozen blueberries, frozen raspberries and fresh chopped apples in a small baking dish and baked it for about 30 minutes in our convection toaster oven. I couldn’t eat it Sunday morning after eating his delicious eggs and hash browns, so I saved it for yesterday.
I think because the fruit was frozen, it got so juicy. My co-worker asked if I was eating beets when she saw the red juice – nope, just delicious fruit juice! I had it over a container of plain Chobani and a couple tablespoons of granola. Amazeballs. Perfect balance of sweet and tart. This comes in at 318 calories, 3 fat, 53 carbs, 9 fiber and 22 protein.
I ended up doing the 30 minute Classical stretch before work and it felt amazing. After my rest day on Sunday, it makes all the difference when I stretch out – I know I don’t do it nearly enough. So my legs felt good on my 5k at lunch:
It’s funny, I spent so much time in my kitchen on Sunday making things for other people, that I realized yesterday morning I never put anything together for my lunch! So I kind of threw this together – I cooked up 1 hamburger patty that was frozen. My plan was to have a sort of Mediterranean lunch with a whole wheat pita, hummus and cucumbers.
While this looks pretty (the red is pickled cherry peppers!), the burger tasted like ass. Tony likes these frozen burgers, but they were pretty tasteless, and I think the fact that I reheated the burger again at lunch, they tasted just like rubber. This plate comes in at 369 calories, 11 fat, 30 carbs, 6.2 fiber and 14 protein.
So remember last week I bought these sirloin/blue cheese burgers for a steal?
I put the two patties together to make my Company Salisbury steak. I ended up weighing out the meat since I had too much – the dog appreciated it in his bowl. Not bad for $1.80 worth of meat!
I love the crispy top of the Salisbury steak – I start it out at medium high heat to get a nice crust on it. And I know my Mom will say something, but I know this plate is lacking veggies – I will eat more today Momma!
Stats for the Day:
- 1441 calories, 45 fat, 164 carbs, 21 fiber and 80 protein
- 30 minute stretch before work
- 45 minute treadmill, included 5k run
- average blood sugar 161
- no alcohol

I loved it and so filling. I’ve never made salisbury steak but I obviously need to. That looks so good!

You can’t go wrong with more veggies!! Especially with options available right now. Do you like winter squash? I love it–so good. Hang in there–you are really rockin’ this challenge, and some days it may not feel like it, but focus on the bigger picture. In the grand scheme of things, how do you feel? Better than a year ago? Stay positive!

That sweet/tart breakfast is the kind I could really go for. One thing I miss about August is going outside and picking blackberries right off the bush. That was breakfast. The dogs pick them too! 😉 Your doing great on the exercise Biz! I always think that about you. You have a lot more motivation than I do!
