For some reason yesterday when I woke up, I had a taste for blueberry pancakes. You guys know how low maintenance I am – in 45 minutes yesterday I wrote my blog, showered, got dressed, took Ed on a 10 minute walk and made these blueberry pancakes So easy! While I normally let my pancake batter sit to let the baking powder do its job, I didn’t do that this time but you’ll see these were just as fluffy.
This makes six pancakes, or 2 servings: 415 calories, 10 fat, 66 carbs, 3 fiber and 14 protein
Blueberry Pancakes
- 1 cup flour
- 1 cup skim milk
- 1 egg
- 1 teaspoon baking powder
- 2 teaspoons sugar
- 1 tablespoon melted butter
- pinch of salt
- 1 cup of blueberries, put on the pancakes before the first flip (thanks for catching that Jody!)
Just mix everything together and cook in a skillet sprayed with Pam. About 2-3 minutes per side. I actually only cooked two and saved the batter for later.
Breakfast comes in at 531 calories, 10 fat, 66 carbs, 3 fiber and 14 protein.
I actually stole my workout from Lisa yesterday. I know I need to incorporate strength training into my routine, and I liked that the one she did was done in 30 minutes. I had to google image some of the moves so I could remember what they were.
I started with a one mile warmup.
Only one slight problem with the routine – my gym does not have kettle bells – wtf?! So I ended up doing squats instead. See that one legged reverse fly on the top right hand corner? That was super hard. I also ended up being to hold a plank for one minute – and did that 5 times throughout the workout. I can definitely feel it in my shoulders today! I am going to give myself a mile for that workout for my 170 mile challenge goal.
Lunch was leftover black bean and rice soup – this time I added the pickled carrots to it to spice it up – lunch comes in at 438 calories, 5 fat, 64 carbs, 7.9 fiber and 29 protein.
And we had party pizza Friday! I picked up a $5 dollar pizza at the grocery store – my side had sausage and pepperoni and I added green peppers and a little more sauce on my side. I ate 2/3 of my side of the pizza, so 540 calories, 30 fat, 40 carbs, 1 fiber and 25 protein.
Last week I saw that Veronica made biscuits and gravy. That’s one of my favorite breakfasts, but obviously not the healthiest choice. We woke up late today, so this will most likely be my breakfast and lunch today. Thanks for the recipe V!! I did make a couple changes – I used unsweetened almond milk in both the biscuits and gravy, and I made half the amount of gravy. And I only got 8 biscuits out of my recipe – maybe my biscuit cutter was a bit bigger?
Biscuits
- each biscuit: 154 calories, 9 fat, 15 carbs, .6 fiber and 2 protein
Ingredients:
- 1.25 cups flour
- 1/2 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 4 tablespoons cold butter
- 2 tablespoons vegetable shortening
- 3/4 cup cold unsweetened almond milk
I am lazy, so I just put everything in my food processor and pulsed until the butter was combined. I put it on my floured counter and kneaded it 10 times. Rolled out the dough to about an inch and cut out the biscuits. I brushed with egg wash (1 egg mixed with 1 tablespoon water) and baked for 12 minutes at 425 degrees.
Super tender and flakey – these are a winner V!
Sausage Gravy for Two
- 2 servings, 225 calories, 15 fat, 6.2 carbs, .4 fiber and 12 protein
Ingredients:
- 4 ounces good quality sausage (I used Jimmy Dean)
- 1/8 cup flour
- 1 cup unsweetened almond milk
- salt and cracked pepper
Brown the sausage. When it’s done, mix in the flour and slowly add the milk until the gravy thickens. Season with salt and cracked pepper.
All together that plate comes in at 531 calories, 34 fat, 36 carbs, .4 fiber and 14 protein. I ended up eating only three, lets just say the dog appreciated my sharing!
- I have 135.85 miles to go in my 170 mile challenge
I hope to get to the gym today for a long bike ride.
Check out this loot I won from Ally! I’ve never had gluten free pasta, but it I eager to try it. Thanks for picking my name for your giveaway!
I also figured out how to add a Pinterest button at the bottom of each blog post. Are you as obsessed with Pinterest as I am?? Feel free to pin any of my recipes!
I can’t wait to make these baked veggie spring rolls. I’ve had rice paper wrappers forever, but only thought I could use them cold, and I didn’t like the chewy texture. I didn’t know you can bake with them!!
Alright, I guess the kitchen isn’t going to clean itself. I may have been a bit crazy with the flour while making the biscuits! And you’ll be happy to know, the deep fat fryer is down in my basement.
Those biscuits look perfectly golden brown and delicious! Nice job 🙂
And although I like cold/raw rice paper wrappers on my fresh spring rolls, I’m intrigued by these baked ones.
My husband is a southern pan and LOVES biscuits and gravy.
Also, I’ve found that KB swings kinda work with barbells.
Have a great week!
Just went to make the blueberry pancakes – referred to your recipe and noticed you have no blueberries in the recipe…HUH? Did you just add them when you put the batter in pan? I usually use bisquick but thought I’d use your recipe…..I was introduced to biscuits and gravy while travelling to field hockey games in college to the southern states……oh boy – those are good!!!
Sorry Jody! Yep, I learned a while ago just to add the blueberries before the first flip – they will stay in place and they won’t make your batter blue when you stir them in.
I always miss field hockey in the fall (but I don’t miss the brutal workouts!)
I’m craving blueberry pancakes now! And biscuits, yum, I love biscuits 🙂
Hey! Hope youre having a good weekend. Great job on the workout. How good are pickled veggies? Yayyy for southern food
Your husband would love them Erica! A spicy kick with a vinegary taste. Love. 😀
LOVE those biscuits and gravy, seriously jones’n now. YUM! love pinterest, i know i spend way too much time on that website.
Yes, I am obsessed with pinterest!
I don’t know what I did before that.
Everyone keeps pointing out that it will be nice for me when I get married to have pinterest since there are sooo many ideas. I am sure it will be a bit overwhelming cause there is almost too much good stuff. 😉
The biscuits and gravy look just delicious!
Oh my… I don’t think I have ever seen such a fluffy pancake. I have tried a lot of the gluten free pastas. I don’t feel as bloated when I use them.
I LOVE pin! I try not to get on too much because I find it very hard to walk away.
I am not worthy…I cannot hold a plank for a minute. My new workouts require plank-like things every workout. I hate planks.
I was definitely shaking Marcia! Know what I hate? Lunges!
I’d have never thought a replacement milk would work with gravy-did it taste OK? It sure does look good! I”m glad you liked the biscuits! I think when I cut mine I got 8 as well, but got nine when I made them into drop biscuits. Your pancakes are so FLUFFY I could die!
It tasted great V! A slight nuttiness from the almond milk, but it tasted wonderful.
John loves biscuits and gravy!
I am totally addicted to Pintrest! It took a while for me to figure out what was so cool about it and now I am all – PIN ALL THE THINGS!!
Yummmmy. Would you believe me if I told you I have never had biscuits and gravy?! And my grandpa was from Texas!
Wow, those biscuits with gravy look divine! I know I’m always going to get some good food porn on your site 😉
