The weather in Chicagoland could not have been have been better this weekend! Low 60’s and sunny. I was really happy because my twin sister was volunteering at Gourmet Chicago which was happening this past weekend. Last year was a bit chilly and rainy. She got the opportunity to volunteer at the Celebrity Chef book signing table – as soon as she writes about her experience, I’ll link to it. Next year I am going to join her!
Just a bit jealous that she got to meet Rick Bayless!
Tony and I ran some errands on Saturday and ended up hitting Chili’s for lunch. I already checked out the nutritional information before we went, and knew I was going to have the citrus chicken with black beans and rice – the whole plate comes in at 590 calories. I ended up only eating half the chicken – this was so delicious, I recreated it for my SIL’s lunch this week.
And for the record? Their bbq cheese burger? Comes in at a whopping 1440 calories! So crazy!
Later this week I have two amazeball banana recipes – both from the latest cooking light magazine – a nutella banana bread and a caramelized banana bread, which I turned into muffins – the muffins also had a brown butter glaze. Swoon! Why so many banana recipes? Check out what I got on the $1 rack (sorry Kym for rubbing it in on my grocery store finds!)
Tony and I were going to have a bon fire Saturday night, but it was a tad windy. We did enjoy sitting outside, sipping some wine, listening to music and grilling. I love it when the leaves are changing but still on the trees!
Since Hannah’s car accident a week ago is still being investigated, she’s temporarily without a car, so I went to pick her up. It took me an hour and twenty minutes to get to her house – traffic wasn’t too bad! Can you see the Sears tower in the distance?
I decided to make a quiche for our brunch. My Mom loves them. She also loves my cheese souffle for one, but thought that might be hard to transport. So I made a potato crusted quiche.
Potato Crusted Zucchini Quiche
- makes 4 servings: 249 calorie,s 10 fat, 21 carbs, 3 fiber and 24 protein
Ingredients:
- 12 ounces white potatoes (1 large) cooked in the microwave and cooled
- 1 teaspoon olive oil
- 1 cup diced zucchini
- (3 oz.) deli ham, diced
- 1 clove garlic
- 3 egg whites
- 2 eggs
- 1/3 cup skim milk
- 1/2 teaspoon red pepper flakes
- 2 ounces sharp cheddar cheese
- salt and pepper
Heat oven to 400. Shred the potatoes and layer them on the bottom of a pie plate. Heat olive oil and cook zucchini and ham for about 3-4 minutes with the garlic. Take off the heat and mix in the crushed red pepper flakes. Layer the zucchini/ham mixture over shredded potatoes. Mix the egg whites, eggs, milk, salt and pepper and pour over zucchini. Top with the cheddar cheese and bake for 30-35 minutes, until golden brown and the eggs are set.
With the caramelized banana muffin on the side. My mom kept two and I sent the rest home with Hannah.
We sat outside and got caught up – it was very relaxing! And guess who else likes to relax? My Mom’s cats! Meet Rose – she is a prima donna and likes to take it easy and lays on my Mom’s bed most of the day.
Lucy is the crazy one – she kept on climbing on the screen door to try to get out when we were outside. When my Mom is working on her computer, this is where Lucy hangs out.
It was a nice time and a great way to spend the day as a football widow. And I got to see Hannah twice this past week!
And now I have to get my shit together – I have to be to work a little early this morning. I have my chicken parmesan meatball soup for lunch – can’t wait!
How was your weekend?
Hannah looks so much like you
I, too, scored bananas I made Popsicles with some and am now whining for a yonanas
Brown butter glaze – wha?!?!
Since you and your sister look so much alike, you can totally steal that pick and say you met him 🙂
Love the last pic of you and Hannah, you both look so happy.
Looks like Jenn had a great time! How on earth do you find such good grocery prices- that is amazing. My kids would be hounding me for banana bread if I scored like that. I am loving your chicken parm soup, it looks sooooo good. When it gets a bit colder here, I will be making more soups.
I am jealous of your sister, and those lucky lazy cats 🙂 My weekend was low key, still recovering from the creeping crud I had last week. I am trying to get my energy back, getting old sucks.
Love the last picture. Hannah totally looks like you 😉
Those muffins look awesome – I saw those recipes in Cooking Light and they’re definitely both on my ‘to make’ list – glad to see they’re as good as they look!
Love the pics! You and your daughter are so cute together. Lucy looks like our departed Harryboy–so glad there’s another CatLady out there!
We’ve told my Mom that she has to stop at two – we don’t want her to become one of those cat ladies with 20 cats!
Must admit… I am a little jealous of your sister!
Back in April I was in Vegas at Mandalay and saw Hubert Keller walking out of his restaurant (I think he has one in there?) and I am kicking myself for not stopping him!? I was a bit tipsy and got all self conscious. lol!!
If I were tipsy there wouldn’t be anything to stop me from saying hello!
Those black beans look so good. I shop the bargain produce rack like it’s nobody’s business. I scored 4 packages of bananas last week. I replenished my frozen banana supply for smoothies and made peanut butter banana oat muffins.
You and Hannah are adorable. What a treat to see each other twice. My weekend was good, busy with soccer and skating for Carlos. He is having a so much fun. I love it!
I love watching soccer at that age – check out my great-nephew!

great pic of your sis and bayless, i’m jealous too! i can’t wait to see those banana bread recipes.
the cats crack me up! i had a cat who would literally get in the shower with me. what?! he was a bit cracked.
What a nice weekend! I love caramelized anything. Yummers! Our weather this weekend was pretty crappy, but the trees should be peaking this weekend and hopefully the weather will be nicer.
Sorry you didn’t get your bike ride in over the weekend, but just think of all the flooring you got done! Looks great by the way. 😀
I love any kind of banana bread. I recently made a banana’s foster banana bread and it was gone in one day, my kids inhaled it, it was so good.
Big fan of black beans, love that lunch.
OMG so jealous of your sister!!
I love the picture of you and Hannah – adorable!
We used to have a tiger-striped cat named Lucy! Love her perch, and Miss Rose is so elegantly pretty amongst her boudoir pillows…too cute!
Glad you had a great visit!
Sounds like you had a nice relaxing weekend. I love the colors this time of year. I need to get out and take some pictures before the leaves are all gone. Your quiche looks yummo! I had a 50th b-day party Sat. and a fundraiser dinner that night. Sunday I was as lazy as your Mom’s cat…lol! 😉
Love that you were lazy like a cat!
OMG OMG OMG! RICK BAYLESS!!! I just “yelped” at my desk when I saw that picture. I’m taken back to my trip to Chicago last fall when I got to dine at Frontera…oh I wanna go back now, more than ever! 🙂
Yep, when I worked downtown I ate there once every couple of weeks. The photography is shitty in this post, but here is one of Rick Bayless’s soups I’ve made – I need to make this again soon!

I picked up a bargain bag of bananas at our grocery store too! 79 cents for a large bag (against my hubby’s advice) and I have nutella sitting in my cupboard, so please share that recipe when you’re done.
It will be posted tomorrow! 😀
That quiche looks amazing! I have most of those ingredients. I should make it!
Rose and Lucy are just adorable! I have two cats also! 🙂
I actually thought about you when I took the pictures!
I can’t wait for the banana recipes 🙂 The quiche looks very yummy. I wonder if I can pretend the zucchini is spinach so my husband will try it.
You were really rubbing it in this time. A good sale and fantastic weather. It will be 92 degrees here today. It is really chipping away at my weight loss motivation. It is so hard to force myself to go out in the heat when I get home after being in and out of it all day. Someone is going to have to slap some motivation into me. Any takers?
Rose and Lucy are cute. I love kitties!
Sounds like a great weekend! I do miss the fall colors in IL, pretty much we get yellow here!
I buy the discount bananas every time I see them! SO awesome to have them on hand to bake with (and I freeze what I don’t use for smoothies). The quiche looks yummy too
Yep, I see some green monsters in my future! 😀
Good idea checking out the menu prior to getting there. I usually end up getting their fajitas – so good.
That quiche looks yummy and the potato crust is a nice change from a pie crust. So glad you had some girl time with your mom and Hannah!
Oh yes, the weather was perfect!! At first I thought you were hanging out with Rick!! I must have missed that Hannah had an accident. She looks o.k.. Hope that’s true and all will be worked out soon.
Best,
Bonnie
Yep, just a fender bender!
