I woke up this morning thinking it was Saturday and I was panicked because I hadn’t gotten anything ready for my 5k tomorrow. I decided I am going to at least walk it, and maybe pepper in some jogs here and there. I plan on going to the gym today (nearly 4 weeks since I’ve been!) and try out the treadmill to see where I am at. It won’t be a PR tomorrow, but that’s okay.
Breakfast yesterday was a half bagel sammie and some delicious watermelon. I usually suck at picking out watermelons, cantaloupes and honeydews . . . this one was perfect. Breakfast comes in at 343 caloires, 13 fat, 38 carbs, 4.9 fiber and 35 protein.
Lunch was a “throw shit in a bag” day and see what happens once I get to work. I threw in my lunch bag:
- 1 large zucchini
- 1 baggie of plain cooked chicken breasts
- cheddar cheese
- bag of baby spinach
- a can of enchilada sauce
I had to pick up lunch for my boss and my co-worker needed a break so she came with me. To kill some time, I went to my FAVORITE kitchen store:
We have a toaster oven at work, but I don’t have any oven safe dishes to use in case I need one. I found a perfect size dish – normally $24.99 for $8! And a really cute hand towel for $1.99.
I microwaved the zucchini for 1 minute, just enough so its slightly tender, I don’t like an overly cooked zucchini – too mushy. I cut the zucchini in half, then scraped out the seeds with a fork.
In a small bowl I mixed 3 ounces of the chicken with the chopped baby spinach and 1/4 cup of the enchilada sauce (mine was LaPreferida (sp?) brand – its 15 calories per 1/4 cup. I divided the chicken mixture between the two zucchinis, then sprinkled with 3/4 once of cheese, and put another 1/4 cup enchilada sauce in the bottom of my baking dish.
7-8 minutes later under the broiler – lunch was done.
I did add some Tabasco to this to kick it up, but it was really good. Best part – the stats! This whole dish? 299 calories, 11 fat, 14 carbs, 4.9 fiber and 35 protein.
You know I love the 50% off meat rack. Last time I stocked up so I defrosted this for dinner – it’s a boneless chuck pot roast. Like most of you I would have thought that this particular meat was just meant for the crock pot or a dutch oven – low and slow. And Marcia, I know you’ll be jealous, but with the 50% off this was a $2.80 piece of meat!
Tony wasn’t in the mood for a dry rub, so all I did was put some garlic salt and cracked black pepper. On the side were some potatoes/carrots/garlic that I cooked in foil on the grill. With some vinegar cucumbers my mom brought for me.
I may have had a bbq beverage!
I seared the meat for 5 minutes on both sides, then took it off the heat and put it on the cool side of the grill for 10 minutes. And I let it rest 10 minutes before slicing. My one fatal flaw when I use the Weber? Too many coals!
My dinner comes in at 453 calories, 23 fat, 25 carbs, 5.5 fiber and 33.25 protein.
I don’t trim the fat because it adds flavor, I just cut around it and turns out our dog doesn’t mind eating beef fat!
But I ended up eating cheese and crackers later in the night. I have come to the conclusion that I just can’t keep that shit in my house, or if I do, put it in a box with a lock on it so I can’t get to it. I can’t help it, Merkts cheese is just amazeballs!
I am up early today because I have my full body scan for any more pre-cancerous moles. Then the next step is to meet with the plastic surgeon to remove the pre-cancerous mole on my face. Thanks for all the well wishes for my cousin Pam yesterday – more good thoughts and prayers sent her won’t certainly won’t hurt!

Your food looks fabulous! The enchiladas look wonderful, and I plan to try them. I’m a watermelon lover, also, and it satisfies me very well, as a dessert or snack.

GOOD LUCK! I love the 50% off stuff at my store too, and I get in big trouble because they mark down good cheese ALL the time. And if I buy it, I eat it every night until it is gone, because it is going to expire soon!! 😉
You don’t want to waste money by not eating the cheese – totally get that, and I would be in deep trouble if my store sold 50% off cheese – my cart would be full of it!

Merkt’s spreads are awesome. They used to have a horseradish cheddar that I could eat by the bowl. Really tasty.

The zucchini recipe looks great. I can’t keep peanut butter in my house as it calls to me all the time. If I don’t have something to put peanut butter on, I’ll just eat it right out of the jar. Not good. 🙁
My brother is the same way Caron – I think given the opportunity, he’d eat a whole jar in a day!

I was just looking at a chicken enchilada zucchini boat recipe and thinking how good it sounds. Wondering if I can get my kids to eat it without revolting. LOL
I used to love that kind of cheese. Don’t dare keep it in the house anymore – it’s just too good (Jeff and I have a phrase: “this is too good; we can’t have it around”)!
Have fun at the 5K tomorrow – there will be plenty more that you can run and test yourself at. Bring your camera and take pictures of all the craziness!

Hey Biz – I was curious about one thing. I know you have said before that you don’t snack during the day because of your diabetes – you have to take another shot. Does this apply to nighttime snacking or does your blood sugar work differently at night? Thanks.
I wish I didn’t have to take a nightly shot, but if I snack at night, I do have to take insulin. I ALWAYS check my blood sugar before going to bed so I can adjust it so that I don’t have high blood sugar overnight. My stomach looks like a pincushion! 🙁

Like you we have a good ol’ fashion charcoal grill. Our gas one died months ago and to save money we got the cheap one. It takes a little prep to heat the coals but the flavor is unbeatable. I’ll never go back to gas.
I love cheese spread and crackers. I had to put the kibosh on my Almond thins for a while because I was mowing through them.

I hate the phrase “full body scan”, it sounds like aliens are taking you over or something! Now you’ll view your xray tech as an alien!
Taking the 21 days to change a habit theory – is there anything you can buy that Tony absolutely loves to snack on that you don’t? So that you won’t even be tempted to snack on that stuff? That’s what I usually do.
