At first I thought the two bottles of Pinot Grigio weren’t going to be enough – but it was. Here is my favorite (and only!) wine cork!
I didn’t realize the spiral ham I picked up had to cook for two hours! I thought maybe an hour at tops. So we ended up having to cook the turkey and ham on the same shelf side by side, so they both took longer to cook. I expected to eat around 3:00, but it was closer to 4:00. No big!
Once I took out the ham, I was able to start rotating the side dishes.
Here is Tony’s sausage stuffing:
One of Hannah’s side dishes: tater tot casserole! It was a giant bag of tater tots, a can of cheddar cheese soup, shredded cheddar cheese, sour cream and good old Kellogg’s corn flakes on top!
Um, okay, so here was the whole not healthy menu:
- turkey
- ham
- cajun turkey (brought by my SIL – thanks!)
- creasant rolls
- homemade macaroni and cheese
- tater tot casserole
- green bean casserole
- sausage stuffing
- gravy

I am happy too that my pecan pie turned out! My only problem was that I should have sprayed my pie plate with Pam because I kind of formed the dough in the pie pan and it stuck a bit. So sweet! My 1/16 slice of pie clocks in at 250 calories, 12 grams of fat and 31 grams of carbs!
My mom made me a sugar free pumpkin pie. Thanks Mom! It was interesting because her pie crust was actually phyllo dough! We loved it, but both agreed that if made again, more phyllo dough sheets should be used.
She also brought sugar free cool whip! I didn’t even know they made that!
What am I thankful for?
- My wonderful husband Tony, who puts up with me each and every day, even when I never put anything back in the same spot and half of my food never comes out as good in my head as it does on the plate! But he eats it no matter what! His loving support in anything I choose to do is a gift I get every day. I love you Tony!
- Our kids Hannah and Joe are awesome – they have grown into wonderful young adults! I appreciate Hannah’s cleaning and organizational skills and if I don’t tell her enough I appreciate all that you do around the house! Joe is going on five months of living on his own and loving it. He’s started cooking for himself and calls his recipes “Joe V.-cipes!” I am truly amazed at how well he’s adapted, how he budgets his money and is going to school and working. Keep up the great work Joe!
- I am thankful for my Mom, who was able to come over today. She’s retired now and loving all the freedom this life gives her. She’s taken a trip to Italy this past October and has plans to go to Vegas in January to, among other things, see Bette Midler in concert! She’s got tons of stamina, and I am glad she is enjoying her life.
- I am thankful for my twin sister, and even if we don’t see each other as often as I would like, we still talk on the phone all the time. We can talk about food all day long together too!
- I am thankful for my brother, who I just talked to from New York! His daughter marched in the Macy’s day parade today! Our DVR didn’t tape it right so hopefully my sister can put it on tape for me. We also communicate mostly by email, but it is great to “talk” to him all the time.
- And I am thankful for Tony’s family who were able to spend their Thanksgiving with us. Sorry I missed the call from my parents-in-law! They called when Hannah and I were walking Ed.
So all in all it was a wonderful day! Off to go watch t.v. with Tony and enjoy another glass of wine. I hope everyone had as great a day as me!

Tony’s helpful hint.
Wear sweatpants for the big Thanksgiving day meal, that way no belt adjustment required. Although, my underwear seems a little snug.
I am thankful for my family, my dog, pizza puffs, rolaids, clear skin, not being bald (both grandpa’s and dad are bald), being Italian and having two eyebrows and minimal back hair, artificial heart valves and the love of the most amazing woman I have ever met.
I don’t think this was profound but it was from the heart!
