I love bagel Wednesday. I have Lori to thank for that – I love bagels, but they are quite point heavy – but having one a week works in my plan. š Life is too short not to have bagels!
Mine was an everything bagel with an egg and 1/2 ounce of cheese – breakfast comes in at 11 points.
If the weather could be like it was yesterday all year round, I wouldn’t complain about living in Chicagoland at all. When I left for my run at 12:30 it was partly sunny and 72 degrees.
I did another 5k, and I was feeling so good about the temperature that I started out running too fast, so I had to walk a bit, but still finished my 5k in 35:20 – I’ll take it!
Since I love all things spicy, I decided to make southwestern meatballs – I ended up with 32 big marble sized meatballs – 8 balls in a serving for 4 points.
I got that whole package of serrano peppers for only .98 cents! Be careful with serrano peppers – they are typically about 5 times hotter than jalapenos!

I had my balls with 1 1/4 cups whole wheat pasta and some marinara sauce – lunch comes in at 11 points.
I’ve been lost without my dinner meal plan this week. The freezer saved me – I made meat ravioli – I guess yesterday was just a pasta day for me. š Surprisingly, dinner also came in at 11 points.
Guess what? Today is my Friday! Yep, I am going on vacation tomorrow! My Mom and I are headed to Virginia for a family reunion and then to my Aunt’s Lake house in Smith Mountain Lake (Roanoke). And I haven’t even packed yet – I am the ultimate procrastinator. š

I have TONS of jalapeƱo peppers that I could probably sub in here. Not a huge fan of spicy things but a little heat is nice. Great lunch time run!

There is nothing like a real, point-heavy chewy bagel. But I think eating it everyday will diminish its awesomeness.

Ireland was my favorite ADVENTURE, but I guess my favorite vacation was Singapore & Hong Kong. My family trip to Montana comes in a close second because it was pretttttty freaking awesome to take my 76 and 80 year old grandparents skiing in Montana since they’d never skiied anywhere but the east coast.

Spicy meatballs sound so yummy. I learned my lesson about serrano peppers a few weeks ago. It was not a pretty recipe blunder.

Your balls look very yummy and not tough at all. Question: Do you have to take more insulin when you eat that much pasta to keep your blood sugars that low? Or does the exercise bring it down enough?
For lunch I didn’t have to take as much insulin because I did just workout – its a fine balance – but I did have to take more at dinner time. It took me a long time to dial in what works for me, and sadly what works for me may not work for another diabetic.
I’m not diabetic (yet š You do such a great job controlling your blood sugars and I was just curious.
Have fun on vaca! My favorite was staying in a cabin by a lake last year. It was so peaceful and we weren’t on any schedule, we just enjoyed each day as it came.
