I had every intention of walking my neighborhood yesterday morning – the temps were in the low 80’s – it wasn’t too hot. But then I started reading blogs, I grabbed a cup of coffee, and then realized I had wanted to make a breakfast risotto and decided to cook instead of exercise. 😀
I love abborio rice – my MIL taught me how to make it, and I’ve had great results making it at home – subbing in apples for onions! My spring time risotto recipe is here.
But I wanted to do a different method for breakfast risotto – instead of adding the broth slowly, I mixed 1.5 cups of rice to 3 cups of water with a pinch of salt. Brought that to a boil then reduced the heat to low, put a lid on and then set a timer for 15 minutes.
After 15 minutes, I added 1/2 cup of milk, 1/2 cup light coconut milk, 1/4 cup sugar free pancake syrup and a pinch of cinnamon. I just kept it on low and stirred the rice for about 5 minutes, until the rice was really creamy. This made six, 3/4 cup servings for 6 Points Plus. I added fresh strawberries and bananas and 1/4 teaspoon of sugar/cinnamon over the top for an extra point – breakfast comes in at 7 Points. 😀
So there was no way I was going to walk in the heat – I have been so good about exercise these last few months, that taking one day off isn’t going to break the bank. The old me would just throw in the towel and I might not exercise for days or weeks, but I plan on walking at lunch today and maybe doing 30 day shred tonight.
Lunch was leftover salad – I had leftover beef and rice from our taquitos. My mix:
- 2 cups romaine lettuce (does anyone count lettuce as a vegetable serving? I don’t, just wondering!)
- 1 carrot
- 1 radish
- 1/2 a cucumber
- 3 ounce ground beef (3)
- 4 ounce cooked yellow rice (3)
- 2 tablespoons light ranch dressing (2)
- 2 tablespoons taco sauce
- splashes of hot sauce 😀
- cherry peppers
This delicious HUGE ASS salad is 8 points.
I had steak kabobs on the menu last night. About 4:30 I texted Tony and said “do you think its too hot to grill?” Yep was the answer! So we ordered individual pizzas – mine was pepperoni, banana pepper and spinach – I ate 3/4 of the 8″ pizza, so I am calling it 13 points – too much?
So Hannah and I went to see Horrible Bosses – it was really funny – and thanks Shelley for telling me to stay for the credits! I got home around 9:45 and then Tony and I watched Biz t.v. – two episodes of Master Chef. I would suck at that show because I am a total recipe cook, while Tony can scan the fridge and put something together.
Stats for Wednesday
- no exercise
- 36 points (yep, I got movie theater popcorn for 8 points!)
- average blood sugar 98 (since I didn’t work out I took my full insulin at breakfast)

I took Tuesday and today off from exercise – Tuesday because it was hot and my body was asking for a break and today because it was my first day at my job and I WANTED to 🙂
I went to the movies on monday night and I wanted popcorn, but I couldn’t bring myself to pay almost 6$ for a teeny small!
That risotto looks delish! I always want my breakfast in a hurry because it is after my workout. I can barely wait for oatmeal to cook LOL! I should make some of this up ahead of time.
Our heat index is at 107 today. I think my bird bath is boiling!
Yeah we are dying of heat here too. Our gym is in a warehouse with no AC so it is tough!

I have never made risotto but it’s on my list of things to try.
I would definitely count the lettuce as a vegetable serving, especially if it is anything other than ice burg lettuce.
btw… I think it’s more of a “skinny ass” salad than a “huge” one. 😉
Why wouldn’t you count lettuce as a vegetable serving? 1 cup of leafy greens (lettuce, spinach, kale, etc) counts as one serving (at least here in Canada). Totally counts. Plus romaine has more vitamins & minerals than say, iceberg.
And your breakfast risotto is almost like a delicious rice pudding. Yum!

A day off is never a bad thing when you’ve been so consistent with workouts! I took last night off, but I’m back at it today!

Loving Masterchef! I agree…I am a total recipe cook too…I could never put anything decent together on the fly like that. I might have had a chance with the eggs benedict challange..but I am not sure I would remember the exact measurements for the sauce…but then again…I am much more of a baker than a cook..which is why I need exact measurements! lol
