Dinner was SO good! It took about 15 minutes to put this together. First thing I did was preheat my oven to 350 and popped in 4 white corn tortillas (they took about 5 minutes, then I just turned the oven off and kept them in the oven until I was ready for them). While those were crisping up for my tostadas, I chopped up my veggies.
- 2 white corn tortillas
- 2 ounce ground sirloin
- 1 ounce broccoli
- 1 ounce avocado
- 1 ounce red pepper
- 1 ounce lettuce
- 1 ounce red cabbage, chopped
- 1/2 ounce pepper jack cheese
- 1/2 ounce corn tortilla chips
- 1/4 cup fat free refried beans
Once the corn tortillas were done, I removed to cool slighly. I took 1/2 ounce of tortilla chips, schmeared (not sure that’s really a word!) about 1/2 teaspoon of refried beans on each chip and divided the broccoli and pepper jack cheese. I put under the broiler for about 3 minutes.
I was going to use ground chicken breast as the meat, but my grocery store didn’t have it, only ground chicken with the dark meat. When I compared the ground chicken with the ground sirloin, the only difference was the beef was 10 calories more and 2 grams of fat more – done!

That looks really good. I never thought of using cabbage for a Mexican dish like that. It adds nice color.
