I am the first one up, I have mile high biscuits in the oven and the coffee is brewing. It’s days like today that make me slow down, and appreciate all the little things in my life that when put all together are wonderful things!
First I am thankful for my family. They put up with me banging around the kitchen at all hours of the night and day, leaving a shit storm of dirty dishes in my path. For waiting the few extra minutes to eat because I have to take “just one more picture” before they can dig in. Thank you for your support Tony and Hannah – I love you!
I didn’t realize how little I ate yesterday until I downloaded my pictures. Breakfast was a simple scrambled egg with two pieces of bacon. If you can get bacon at your deli – get it. Ours sells for $2.99 a pound, and you can get it cut thick and it is so delicious compared to the thin Oscar Meyer that sells for $5 for 12 ounces!
Later on I got hungry and had a 1/2 cup of cottage cheese with Tabasco:
Hannah got home from work, and after she ate lunch, we went to the thrift store. So.Many.Snowmen! I didn’t buy any though:
When I got back home I was really hungry, so I made a quick pork taco with a leftover pork chop, 1/4 cup hominy and taco sauce.
Then it was time to make pie! I made two this year. Tony and Hannah’s favorite is Pecan Pie. Look no further than Ree’s pecan pie from Pioneer Woman Cooks. I made it last year and it was a huge hit.
And I made a sugar free apple pie. I am using artificial sweetener and while I usually use fuji apples for my apple pie, I couldn’t pass up 4 pounds of apples for $1! So this pie has honey crisp, gala and golden delicious apples.

When I met up with Christina and the other bloggers last week, I wasn’t just excited about seeing Christina again, but also getting my hands on her Dad’s homemade sausage! She gave me some last year, and when she emailed me if I wanted more I didn’t hesitate.
I made red beans and rice on the side and some quickly sauteed zucchini. I slow simmered the sausage in beer on the stove, then grilled them. So delicious!! I ended up only eating one link though for dinner, and diced up the rest and put in a pot of homemade marinara sauce.

ha–love the video! I have to say, pecan pie is my kryptonite and I was soooo happy we had it this year at Thanksgiving. I don’t make it though, b/c I like it too much. I don’t make cookies very often for the same reason. Or lasagna. Am I alone here? Do you not make things that you’d eat the whole recipe of? Or maybe you don’t have that problem.
