Well, I think my meatballs turned out pretty good! Here is the recipe:
- 3/4 pound ground beef
- 1/4 pound Jimmy Dean Sage sausage
- 1 tablespoon minced garlic
- 1 tablespoon Italian seasoning
- 1/3 cup Italian style bread crumbs
- splash of milk
- salt and pepper to taste
Here they are before getting in a smokin hot pan of 1/2 teaspoon oil and Pam:
Pan fried them so they got crispy on the outside:
Once they were browned, I baked them in a preheated 350 degree oven for 10 minutes:
The final step was just to keep them warm in my marinara sauce – which looks strangely orange!
All together I had 5 ounces cooked penne pasta, 4 meatballs, sauce, sprinkle of Parmesan cheese and 1/2 slice of wheat garlic bread. Yum!
My blood sugars were normal all day and I got a total of 75 minutes of exercise today – nice!
Hopefully tomorrow’s walk won’t be as chilly as this morning! See you at breakfast!
Meatballs on marinara sauce is perfect. I love meatballs as lunch, dinner or even a snack. I have learned how to make smooth meatballs with Ina Garten’s show. Your recipe is a new addition to my meatballs recipe and I can’t wait to cook your recipe. Now I’m hungry.

I’ve never pan-fried the meatballs first. It seems like too much of a splatter mess, but I do enjoy the bottom crunchy part that cooked on the pan – so I’d probably enjoy more of a crunchy outside.
It is oddly orange – I thought it was some sort of squash sauce at first! Sometimes food looks so odd in pictures. I usually take a bunch of shots of the same thing and when I upload them pick the best one. The tiniest angle change or light difference can be HUGE in the capture.

I heard that crushed red pepper (or maybe it was red pepper flakes? whatever, same difference) raises your metabolism by something like 20% for an hour or so. It was in an article I read yesterday and now I can’t find it. Kind of crazy 😉
