Easy Chicken Tortilla Soup Recipe

This easy chicken tortilla soup recipe is ready in about 30 minutes.  There is nothing better than a soup recipe that comes together mostly with pantry ingredients you already have in your pantry.  Fire roasted tomatoes, jarred salsa, pinto beans, hominy, corn and chicken broth do most of the heavy lifting.

My trick is blending the fire roasted tomatoes, salsa and pinto beans together before adding them to the pot.  The beans help thicken the soup and give the broth a creamy texture without adding any cream.  Theh chicken cooks right in the soup, so there is no need to cook it separately, and the finely chopped corn tortillas break down as the soup simmers and thicken it even more.

This soup will taste like you’ve spent hours making it, but most of the ingredients come straight from your pantry or freezer.  It’s hearty, packed with flavor, and perfect for a quick weeknight dinner.  For my Weight Watchers friends each two cup serving is only ONE Weight Watcher point and has 43 grams of protein.

This soup is easy to customize depending on how spicy you like your soup.  By subbing in hot salsa for medium salsa, it will give this soup a spicy kick.  You can also customize your toppings to taste: sour cream, chopped cilantro, crushed tortilla chips, cheese – the possibilities are endless!

One pot and minimal prep.  There is no need to cook the chicken separately.  The chicken poaches right in the soup, which not only saves time and dishes, but also keeps the chicken tender and flavorful.

This easy chicken tortilla soup is made with simple pantry ingredients, tender chicken, hominy, corn and beans. A hearty, flavorful soup that comes together in about 30 minutes.

Ingredients

  • 1 (14.5 ounce) can fire roasted tomatoes
  • 1.5 cups canned pinto beans
  • 2 cups hominy (drained)
  • 1 cup jarred salsa
  • 4 cups chicken broth
  • 1 cup frozen corn
  • 2 tablespoons minced garlic
  • 1 teaspoon ground cumin
  • 1/2 teaspoon white pepper
  • 1 pound chicken breast, cut into four big chunks
  • 2 corn tortillas, finely chopped

Instructions

Make the soup base. Add the fire roasted tomatoes, pinto beans, and salsa to a blender. Blend until smooth.

Combine the soup ingredients. Pour the blended tomato mixture into a large stock pot or Dutch oven. Add the chicken broth, drained hominy, frozen corn, garlic, cumin, white pepper and chopped corn tortillas. Stir to combine.

Add the chicken. Cut the chicken breast into four large chunks and nestle them into the soup, making sure they are mostly submerged in the broth.

Simmer the soup. Bring the soup to a gentle boil, then reduce the heat to low and simmer for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165 and is cooked through. Stir occassionally to prevent the tortillas from sticking to the bottom of the pot.

Shred the chicken. Remove the cooked chicken from the pot and shred it using two forks. Return the shredded chicken to the soup and stir to combine.

Finish and serve. Simmer for another 5 minutes to allow the chicken to soak up all that flavor. Taste and adjust the seasonings as needed.

Serve hot with your favorite toppings, such as fresh cilantro, sliced jalapenos, avocado, shredded cheese, lime wedges, crushed tortilla chips or a dollop of sour cream or Greek yogurt.

Easy Chicken Tortilla Soup FAQ

Can I use rotisserie chicken?  Yes.  Skip the poaching step and stir shredded rotisserie chicken into the soup during the last 5 to 10 minutes of cooking, just to heat the chicken through.

Can I use canned black beans?  Yes.  Black beans would work well, although they may make the finished soup slighly darker.

Is the chicken tortilla soup spicy?  The heat level will depend mostly on what salsa you choose.  Choose milk, medium or hot depending on your preference.

What can I substitute for hominy?  While this isn’t a typical pantry staple for most people, you can leave it out.  Simply add additional corn or beans, although you’ll lose some of the distinctive texture and corn flavor hominy brings to the soup.
