Homemade Yasso Bars

These homemade Yasso bars are so delicious.  Seriously, the best dessert I think I’ve ever made.  Are these Weight Watchers friendly? Absolutely!  That’s what your weeklies are for. 

Ingredients needed

  • nonfat Greek yogurt
  • protein powder
  • cool whip
  • vanilla extract
  • powdered peanut butter
  • peanuts
  • melting chocolate

Can you use a different chocolate?

When it comes to melting chocolate for these bars, I used Ghirardelli 80% dark melting chocolates because they melt like a dream and the rich, smooth flavor is hard to beat. That said, if you’re looking to reduce calories or Weight Watchers points, there are some lighter options to try. Lily’s no sugar added dark chocolate chips are sweetened with stevia and still melt beautifully. You could also use Enjoy Life mini chips if you need a dairy-free option, or even opt for a lower-point chocolate like Hershey’s Sugar Free chocolate chips, though the flavor isn’t quite as deep. Ultimately, I stick with Ghirardelli because it tastes luxurious and you can decide how much chocolate to add to your bars.

Homemade Yasso Bars

Prep Time: 5 minutes
Cook Time: 2 hours
Total Time: 2 hours 5 minutes

These homemade Yasso bars turned out so good! Sadly, they are 12 Weight Watchers points. But if you count calories or macros: 293 calories, 17 fat, 25 carbs, 2 fiber and 12 grams of protein.

Ingredients

  • 1 cup nonfat Greek yogurt
  • 1 scoop Vanilla protein powder (I used FlavCity)
  • 1 cup no sugar added Cool Whip
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered peanut butter (I used PB2)
  • 120 grams melting chocolate (I used Ghirardelli 80% dark melting chocolates)
  • 4 tablespoons peanuts, finely chopped

Instructions

Mix the Base:
In a medium bowl, stir together the Greek yogurt, protein powder, Cool Whip, vanilla extract, and powdered peanut butter until fully combined and smooth.

Form the Bars:
Line a baking sheet or flat tray with parchment paper. Using an ice cream scoop or large spoon, divide the mixture into 6 equal-sized oval mounds. Use the back of a spoon to smooth and shape them into bar-like forms.

Add Popsicle Sticks:
Carefully insert a popsicle stick into the center of each bar. Don’t worry if it’s a little soft—just wiggle the stick in gently so it stays in place.

Freeze:
Place the tray in the freezer for at least 2 hours, or until the bars are completely firm.

Melt the Chocolate:
In a microwave-safe bowl, melt the chocolate in 20-30 second increments (or according to package instructions), stirring between each round until smooth and fully melted.

Drizzle & Top:
Remove bars from the freezer and, using a spoon, drizzle the melted chocolate over the top and bottom of each bar. Quickly sprinkle chopped peanuts on top while the chocolate is still soft.

Final Freeze:
Return the bars to the freezer for an additional 30 minutes to fully set the chocolate.

Store:
Once fully frozen, transfer the bars to a ziplock bag or airtight container and store in the freezer for up to 4 weeks (if they last that long!).
