Silken Tofu Pudding

If I didn’t make this silken tofu pudding myself, I would never guess that there is tofu in it.  While I am known for my Weight Watchers recipes, this dessert is 9 Weight Watchers points.  However, it’s only 238 calories per serving, so I am enjoy this without any guilt.

The base of this recipe is not mine.  Sarah’s Vegan Kitchen is one of the channels I subscribe to on YouTube, and while I am not vegan, I love her approach to cooking and food.  The only change I made to her recipe was to add FlavCity Brownie Batter protein powder to boost the protein.  Note, however, that by doing so, this recipe is no longer vegan.  You can find her recipe here.

Give Credit

It’s so important to give credit where credit is due, especially when it comes to recipes. If you tweak someone else’s recipe, the respectful and honest thing to do is acknowledge the original creator. Over the years, I’ve had entire recipes copied from my blog, word for word, with zero credit given, even when mine was clearly published years earlier. It’s not just frustrating, it’s disheartening. Developing, testing, and photographing recipes takes real time and effort, and it’s just common courtesy to recognize that. A simple mention or link back goes a long way, and I truly wish more people in the food space would honor that.  So thank you Sarah for your amazing recipe!

We bumped up the protein of Sarah’s recipe by adding a scoop of FlavCity Brownie Batter All-In-One Protein Smoothie powder.  His protein smoothies are complete, meaning you don’t have to add anything to them.  Made with 100% grass-fed whey, all natural and organic ingredients, it’s delicious on it’s own as a smoothie, but I love adding it to recipes.  This pudding is rich, chocolately, and you’d never know there was tofu in it.

Silken Tofu Pudding

Yield: 4 servings

Total Time: 1 day 5 minutes

This recipe is slightly adapted from Sarah's Vegan Kitchen. She has an amazing YouTube channel. Her original recipe can be found here. The only difference is I added protein powder to mine to bump up the protein, however with that change, this is no longer vegan.

Ingredients

  • 16 ounce silken tofu
  • 4 ounces sugar free chocolate chips
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1 teaspoon instant coffee
  • 2 tablespoons cocoa powder

Instructions

The tofu blends best if it is at room temperature. Just microwave for 30 seconds before blending if you are pulling it straight from the fridge.

Add all the ingredients to a food processor and blend until smooth. Place in containers with a lid and refrigerate overnight for best results. Enjoy with whipped cream.

 This silken tofu pudding is decadent, deeply rich in chocolate flavor without being overly sweet.  Definitely going to make this when I need to have a make ahead dessert for a dinner or brunch.
