Skinny Pizza Dough Apple Fritters

These skinny pizza dough apple fritters will hit the spot this fall season.  Did you know that Dunkin Donuts apple fritters are 23 WW points?  Mine won’t break the WW bank – only 3 points on the regular plan, or 4 points on the diabetic plan.

What is skinny pizza dough?

In November 2017 the WW plan changed to make Greek yogurt a zero point food.  2 ingredient dough was born, where you mix equal parts Greek yogurt and self-rising flour to make a dough.  I hated it from the start.  The dough was sticky, I found I had to add so much more flour to the recipe to make it even possible to roll, so I came up with Skinny Pizza Dough.  By simply adding, water, salt and yeast, a delicious dough was born and it’s great for so many things.  You can find my original recipe here.  My first cookbook is also available on Amazon, and you can check it out here.  That cookbook makes so many things with the skinny dough other than pizza – from these apple fritters, to pork bao buns, bagels, toaster strudel to pasta.

What kind of non-calorie sweetener should I use?

Lately I’ve been using monkfruit as my sweetener of choice in baking.  It feels like real sugar and I find I don’t have to use as much, making it a bit more cost effective.

Skinny Pizza Dough Apple Fritters

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Skinny pizza dough does it again - this time in a delicious apple fritter! Growing up my Dad (also type 1 diabetic!) would come home with a couple apple fritters and joke "I have no idea how these got here!"

Ingredients

  • 16 ounces skinny pizza dough
  • 1 large apple, diced
  • 1/2 cup water
  • 1 tablespoon cornstarch
  • 2 tablespoons Truvia
  • 1 teaspoon cinnamon
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon milk (for glaze)
  • Avocado oil spray

Instructions

    Prepare the Apple Filling:
    In a small saucepan, combine the diced apple, water, cornstarch, Truvia, and cinnamon. Cook over medium heat for about 5 minutes, or until the mixture thickens and the apples are softened. Remove from heat and allow the filling to cool.

    Roll Out the Dough:

    On a lightly floured surface, roll out the skinny pizza dough into a large rectangle. Optional: sprinkle with additional cinnamon and Truvia.

    Add the Filling:
    Spread the cooled apple filling evenly in the center of the dough.

    Fold and Cut the Dough:
    Fold the dough over the apple filling to cover it, then cut the dough into 8 equal squares. Shape each square into a circle, pressing the edges to seal in the filling.

    Cook the Fritters:
    Heat a nonstick skillet over medium-low heat and spray it with avocado oil. Cook each fritter for 4-5 minutes per side, until golden brown and cooked through.

    Make the Glaze:
    In a small bowl, whisk together the powdered sugar and milk until smooth.

    Glaze the Fritters:
    Once the fritters have cooled, drizzle the glaze over each one.

As of the date of this publication, each fritter is 3 WW points on the regular plan, or 4 points on the diabetic plan.

These are so delicious.  Light, fluffy, spiced apples and that glaze is just enough sweetness for me.  Be sure to give these a try!  Note:  these are best the day they are made.  However, if you reheat in an air fryer for 2 minutes at 350, it brings them back alive.
