Low Carb Meatball Subs
These low carb meatball subs are going to be on repeat in your home soon! One of the questions I get asked most as a Weight Watchers member is to find the LOWEST point anything – breakfast, lunch, dinner, snack, or football food.
I don’t subscribe to that philosophy, because personally I found that if I ate super low point throughout the day, the feeding frenzy I had at night was unbelievable.
But, I have to say, these low carb meatball subs are not only delicious, but no one will know that you brought “weight watcher food” to your next get together or tailgate.
How to make juicy turkey meatballs
Adding pepperoni to turkey when making meatballs not only boosts flavor but also helps keep them moist and delicious. Turkey can sometimes become dry due to its lower fat content, but the natural fats in pepperoni help compensate for this, locking in moisture during cooking. The pepperoni also adds a savory, slightly spicy depth of flavor that elevates the meatballs, making them more satisfying. This combination creates a perfect balance of lean protein and rich taste, ensuring the meatballs are juicy and flavorful with every bite.
Ingredients needed for Low Carb Meatball Subs
- ground turkey breast – make sure it is 96% lean in order for it to be zero WW points
- turkey pepperoni – this adds so much flavor to the meatballs!
- seasonings: salt, pepper, crushed red pepper
- egg
- breadcrumbs
- pizza sauce (I use Mid’s pizza sauce – super delicious and low point)
- garlic

Low Carb Meatball Subs
One of the questions I get asked most is "can you make a low point xyz" but make it still taste good! These hearty, delicious turkey meatballs subs will satisfy anyone - Weight Watcher or not! The secret is chopped turkey pepperoni in the meatballs, and these low carb hot dog buns. 3 WW points without the cheese, 4 WW points with the cheese. You're welcome! 😂
Ingredients
- 1 pound ground turkey breast (I used 96% lean)
- 1 ounce turkey pepperoni, chopped
- 2 tablespoons bread crumbs
- 1 egg
- 1 tablespoon oregano (or Italian seasoning)
- 1 teaspoon crushed red pepper
- 1 teaspoon salt
- 1 teaspoon cracked pepper
- 3 cloves garlic, chopped
- 6 low carb hot dog buns
- 1/2 cup Mid's pizza sauce
- 1 ounce shredded mozzarella (optional)
- 2 tablespoons fresh basil, chopped
Instructions
- Mix all the ingredients together. Take a small portion and cook to make sure it's seasoned to your liking. Make any necessary adjustments.
- Divide the dough into 18 portions. Roll and pan fry in avocado oil spray and cook the meatballs over medium low heat, for about 8-10 minutes, browning on all sides, until they reach an internal temperature of 165.
- Place the hot dog buns on an oven safe pan. Add three meatballs to each hot dog bun. Divide the pizza sauce on top, add the cheese if using, and broil for 4-5 minutes, or until the cheese is melty and the buns are browned.
- Garnish with fresh basil and serve!
Notes
As of the date of this publication, each sub without the cheese is 3 WW points. With the cheese is 4 WW points. If you count calories or macros, each one is: 259 calories, 9 fat, 19 carbs, 16 fiber, 28 protein (or 3 net carbs).

Back To School Meatball Subs
These meatball sub sandwiches are perfect when you are low on time. These come together in around 20 minutes and perfect for back to school time when life gets hectic.
Ingredients
- One 30 ounce package of frozen meatballs
- 1 14 ounce jar Mid's pizza sauce
- 8 hotdog buns
- 8 ounces mozzarella cheese, shredded
- 28 ounce package of tater tots
Instructions
Cook the Meatballs
In a large skillet or saucepan, combine the frozen meatballs and pizza sauce.
Cover and cook over medium heat for about 15 minutes, or until the meatballs are heated through and fully cooked. Stir occasionally to coat them in sauce.
Cook the Tater Tots
While the meatballs are cooking, prepare the tater tots according to the package directions. Aim to time it so they finish around the same time as the subs.
Assemble the Subs
Preheat the oven broiler. Place hotdog buns open-faced on a baking sheet. Add three meatballs to each bun, spooning some of the sauce over the top. Sprinkle each sandwich with 1 ounce of shredded mozzarella.
Broil and Serve
Broil the subs for 2–3 minutes, or until the cheese is melted and bubbly and the buns are lightly toasted.
Serve hot with crispy tater tots on the side.
Back to School Version
While I love making food from scratch, some nights it’s just not realistic, especially during busy seasons like back to school. That’s when I lean into quick, easy, and affordable meals that still taste homemade without requiring hours in the kitchen. This version comes together in about 20 minutes, making it perfect for those evenings when time (and energy!) is short but you still want something comforting and satisfying on the table.
To make the back to school version I used Kroger brand frozen meatballs, Kroger brand potato rounds, Kroger brand hot dog buns and Mid’s pizza sauce. While you could totally use your favorite pasta sauce for these meatball subs, I think pizza sauce is a kid favorite. We spent $19.68 cents for the ingredients from Mariano’s and these made 8 servings. These items are also available at Metro Market in Wisconsin.
