Recently I did a live Q&A and one of the questions I got was how to make crispy sweet potato fries without burning them.

So I got bizzy in my kitchen and figured it out!  The trick is to simply microwave the sweet potato fries for one minute.  This is just enough to make them slightly fork tender, but they will continue to cook in the airfryer once coated.  This method ensures that the outside gets crispy, the insides stay tender, and no burnt fries.  Winning!

Why do you soak potatoes in an ice water bath?

Many moons ago, I saw on America’s Test Kitchen they were making homemade steak fries.  They deep fried their potatoes, but I distinctly remember the step they said not to skip is soaking the potatoes in an ice water bath for an hour or up to 24 hours.  Mine soaked for only 10 minutes for the small amount of potatoes I had and it worked wonderfully.  That soaking helps remove some of the starch for a c

In the past I’ve thought it was a waste of time to buy precut vegetables and fruit.  I couldn’t have been more wrong.  It makes me more inclined to eat them when they are already prepared.  A couple days ago I lucked out and bought a container of raw sweet potato fries for under $3.00.  Note, when you buy discount produce or fruit, use within 24-48 hours, or freeze before going bad.

Crispy Sweet Potato Fries

Yield: 1 serving
Prep Time: 5 minutes
Cook Time: 17 minutes
Additional Time: 10 minutes
Total Time: 32 minutes

Typically I burn sweet potato fries on the outside before the inside is cooked. No more! Just a quick minute trip to the microwave before soaking in ice water for 10 minutes did the trick!

Ingredients

  • 122 grams sweet potatoes, cut into fries
  • 1.5 tablespoons cornstarch
  • 1 tablespoon everything but the bagel seasoning
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Microwave the sweet potatoes in the microwave in a paper towel for one minute.
  2. Soak in ice water for 10 minutes. While the potatoes soak, preheat your air fryer at 400 for 10 minutes.
  3. Lightly pat the potatoes dry. In a ziplock bag, add the cornstarch, bagel seasoning, parsley, salt and pepper and shake to combine.
  4. Add sweet potatoes and toss until the potatoes are coated on all sides.
  5. Air fry for 15-17 minutes, or until desired doneness. I cooked mine the full 17 minutes.
  6. Serve with ketchup and enjoy!
