Healthier Marry Me Chicken

Marry Me Chicken has been all over TikTok lately, and I’ve never had it.  Probably because it calls for a cup of heavy cream, which is 57 WW points!  This healthier marry me chicken is delicious and you’ll never know it’s lightened up.

What is Marry Me Chicken?

Marry Me Chicken is a popular and delicious chicken dish that’s known for its creamy, flavorful sauce, which often leads people to joke that it’s so good it could make someone propose marriage. The dish typically includes:

Chicken breasts (boneless and skinless)
Heavy cream or half-and-half
Chicken broth
Parmesan cheese
Sun-dried tomatoes
Garlic
Olive oil
Seasonings like salt, pepper, and Italian herbs
Fresh basil or parsley for garnish

Here’s a basic outline of how to make Marry Me Chicken:

First, sear the Chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken breasts until golden brown on both sides. Remove the chicken and set aside.

Secondly, make the Sauce: In the same skillet, add minced garlic and sauté until fragrant. Add chicken broth, heavy cream, grated Parmesan cheese, and chopped sun-dried tomatoes. Stir well to combine.

Thirdly, simmer: Return the chicken breasts to the skillet, making sure they are submerged in the sauce. Reduce the heat and let the chicken simmer in the sauce until it is cooked through and the sauce has thickened, about 15-20 minutes.

Finally, finish and serve: Garnish with fresh basil or parsley and serve hot. The dish pairs well with pasta, mashed potatoes, or a side of vegetables.

This dish is known for its rich, creamy sauce and the combination of savory and slightly tangy flavors from the sun-dried tomatoes.  My healthier version is just as tasty!

Ingredients Needed for This Dish:

  • chicken breasts – if you want to spend more points, or love the flavor of chicken thighs, feel free to substitute!
  • flour
  • seasonings: poultry seasoning, onion, garlic, paprika, salt and pepper
  • flour – all-purpose – feel free to use 1 to 1 Gluten free flour that uses white rice flour as an ingredient
  • light butter
  • fat free half and half
  • chicken and beef broth – feel free to use boxed broth, or use powdered bouillon

Marry me chicken has been floating around the interwebs for a long time, and the only reason I didn't make it was because it was high in WW points. By just subbing in fat free half and half (not a cup of 57 point heavy cream) makes this dish only 2 WW points! Feel free to serve over white rice, cauliflower rice or mashed potatoes.

Ingredients

  • 1 pound chicken breasts (about 2 large)
  • salt and pepper
  • 4 tablespoons flour
  • 1/2 teaspoon poultry seasoning
  • 1 teaspoon dried parsley
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 tablespoons light butter (I used I Can't Believe It's Not Butter Light)
  • 3 cloves garlic
  • 1/2 cup chicken broth
  • 1/2 cup beef broth
  • 1/4 cup fat free half and half
  • 1/3 cup sundried tomatoes, drained

Instructions

    Begin by seasoning the chicken breasts with salt and pepper on both sides.

    In a shallow dish, combine the flour, poultry seasoning, dried parsley, onion powder, and garlic powder. Dredge each chicken breast in the flour mixture, shaking off any excess. Reserve excess flour.

    Heat the light butter in a large skillet over medium-high heat. Once melted and hot, add the dredged chicken breasts to the skillet. Cook for about 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    In the same skillet, add the minced garlic and cook for about 1 minute, or until fragrant. Add in remaining flour from dredging and cook for one minute.

    Pour in the chicken broth and beef broth, scraping up any browned bits from the bottom of the skillet. Allow the broth to simmer for about 5 minutes, reducing slightly.

    Stir in the fat-free half and half, followed by the sun-dried tomatoes. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.

    Return the cooked chicken breasts to the skillet, spooning some of the sauce over the top. Allow the chicken to heat through for a few minutes.

    Once the chicken is heated through and the sauce has reached your desired consistency, remove the skillet from the heat.

    Serve the Marry Me Chicken hot, garnished with additional parsley if desired. Enjoy!
