I can’t believe we are staring our FIFTH year of Cooking Club!   A lot has changed in five years.  That first August cooking club, I was a widow for just ten months,  Courtney our host has moved twice, gotten divorced, is now happily married and having baby #3!  Mary Beth has adopted baby #4 and has brought three new borns to Cooking Club.  But through all the changes, we’ve managed to get together six times a year to break bread and enjoy each others company.

Catherine made this delicious strawberry salsa, and she looked me dead in the eye and said “Biz, I know you and I don’t like onions but the recipe called for it.”  Um, next time, you can leave them out for us šŸ˜€  I did taste it and it was great. šŸ˜€

Courtney made Half Baked Harvest’s Lemon Feta Dip with Garlic Tomatoes – holy balls this was good and I can’t wait to make this and spoon it over grilled chicken.

Mary Beth made a copy cat caprese salad with strawberries that she loves from Panera.

Tina made these butternut squash and sage wontons which she will post on her blog soon.  You need to check out her blog because she’s an amazing cook.  I can’t wait to recreate these with . . . delicata squash!!

Lindsay made a seasonal drink – Captain Morgan’s, apple cider vinegar and Prosecco – cheers!

I made Certified Angus Beef that I bought at Meijer Grocery store.   They had their beef tenderloin on sale for $5.99 a pound – I bought 8 steaks for $26!!  I made a chimichurri sauce – which I realized as I am typing this that the recipe is in my book on my kitchen counter, so I’ll update this post tonight to add the recipe.  Just cooked the steaks 8 minutes total in a hot grill.

And Mary Beth out did herself with the lemon and raspberry cake, and Donna made these rich and decadent chocolate cookies – so good!  And insulin and point worthy šŸ˜€
