These beef and potato sliders are perfect for lunch or dinner!
It was a rainy day yesterday, which I actually don’t mind on a Monday. It rained when I was inside, not on the street, so that worked out!
I made an oatmeal/yogurt parfait – I made 1/2 cup of dry oats to 1 cup of water and microwaved for two minutes while I got ready for work. That’s 4 points. I ate 2 points with the Chobani, banana, blueberries and a tablespoon of Safe + Fair blueberry cinnamon granola. Delicious and filling 3 point breakfast.
My sister had the day off yesterday, so it was the perfect time to get my nails done – they were about a week and a half overdue. And Hannah was shocked as shit that I didn’t get blue or grey, as those are my go to colors.
As part of my grill prep this weekend, I grilled up some chicken breasts. Remember, don’t cook your chicken or protein all the way through the first time if you know you’ll be reheating it later in the week. It will taste like ass if you do that – don’t do that. 😀
I made a chicken wrap using a Tumaro wrap, my chicken, shredded carrots, baby spinach and vinegar based BBQ sauce – 2 points for the sammie, and on the side I had Safe + Fair sweet jalapeno chips – those are so good – so 5 points for lunch.

I still didn’t do a full grocery shop this weekend. We cleaned out our pantry and fridge/freezer and I have plenty of stuff to work with this week.
Last week I made zucchini beef sliders, but I had a baked potato in my fridge, and was like – duh! Potatoes for buns!
Um, these were amazing. And also a knife and fork dinner – maybe I could have picked these up with my hands, but it was easier to use a knife and fork, that way I got a taste of potato and burger in each bite.

Potato and Beef Sliders
Ingredients
- 4 ounces lean ground beef
- 1 teaspoon steakhouse seasoning
- 2 tbsp mushrooms
- 1/2 ounce swiss cheese
- 1/2 cup baked potato
Instructions
- 1️⃣ Heat air fryer at 400 for 5 minutes. Spray potatoes front and back with @chosenfoods Avocado spray salt and pepper2️⃣ heat skillet with avocado spray and add mushrooms - cook for 3-4 minutes.3️⃣ add potatoes to air fryer and bake for 8 minutes, flipping half way through4️⃣ season burgers with Daks and salt, add burgers to the pan with the mushrooms and cook two minutes, flip, add cheese, put a lid on the pan and cook 2 minutes more5️⃣ to plate - potato/burger/mushrooms/spinach/mustard/potato/pickleEach slider is 3 points, 9 for all three.
Yesterday I started my second round of 500 flights in 7 days challenge for an Instagram challenge. I didn’t want to go. At all. But I did. It took me 35 minutes. I literally did that, and got the hell out because it was nearly 10 p.m. by the time I left. I met my step bet steps for the day as well, so I called it a night.
Last round I was really close to doing it under 30 minutes – and that’s my goal this round too – we will see!
