Good morning and Happy Friday!! Gotta love a three day weekend to get to the weekend that much quicker. One of my bosses is gone today, I think the other one will only be in this morning, and I’ll be able to finally get some shit off my desk. Whoop!
I made this delicious chia pudding yesterday. I stopped by Beatrix on my way to work and picked up $2 of accessories to go on top – some toasted almonds, dried cranberries, citrus and cantaloupe – so good!
I had to run an errand for work, so no Biz and Jenn show yesterday. I got out for a bit and went to the Farmers Market – bought some tomatoes to make pasta sauce this weekend. It was such a gorgeous day.
How gorgeous are these tomatoes?
My office had a luncheon for the attorneys – they ordered way too much food. I ate half of this hummus chicken wrap and brought the rest home to put on my leftover pizza I was making for dinner.
Those kefta meatballs I made were sliced and topped my pizza. However, I can’t believe I am about to say this, but I only had ONE ounce of Trader Joe’s light mozzarella cheese – cannot wait to do a TJ run this weekend. I used Alouette cucumber dill as the base of this pizza, with 2 points of my sliced kefta, the leftovers from the wrap above – romaine, spinach, tomatoes, beets, olives and a bit of feta cheese.
I drizzled with a bit of my golden tumeric sauce, and this my friends, was an epic 10 point pizza – swoon!
My skinny pizza dough is about 6 days old and it literally gets better every day its in your fridge.
So I have been at a plateau for a long time – like the first six months. Yes, I haven’t gained all my weight back, I am maintaining a many years 34 pounds off of the 70 I originally lost, but I am just going through the motions. I think I’ve been doing WW so long that I’ve just become complacent.
But here’s the thing, without WW, I’d have already gained back those 34 pounds that I’ve managed to keep off, so I have that.
For the month of June I’ll be carb cycling. I did it several years ago and I think I lost 10 pounds in a month. I’ll still be counting points (and probably calories too because I am like that!). Who knows maybe after a week I will say F this – but I know being diabetic, having lower carb days could help control my diabetes.
So I’ll keep you posted. I’ll do daily recaps of my eats and workouts. Wish me luck!

Those tomatoes look gorgeous! We don’t have anything like that at my local farmers market. I tried Keto for 2 months hoping to break my year long plateau but that didn’t work. So I went back to what did n the past. Low fat & calorie counting. Finally in the last few months I have lost 8-9 pounds. I hope you share about the carb counting. I need more help.
Hi Biz….Could you explain what you mean by carb cycling? How many carbs a day do you limit yourself to….? How long do you keep it up?
I , too, am on WW. Life plan……. My sister is doing another program that limits your carbs to 100 daily. For me, WW is a much better plan and I’m losing…. 50LBS so far. Much more to go, but I know with the WW program I can do it because I’m not denying myself anything! Just have to count it! 🙂
I think carb cycling varies by the plan.
The plan that I did was (loosely, don’t remember exactly) like this:
5 meals per day
Low carb day: breakfast includes one carb and protein. Lunch/snacks/dinner (other 4 meals) include only protein and veggies and fat.
High carb day: one carb, one protein, veggies for each meal (breakfast/snack/lunch/snack/dinner)
We all have to do what works for us and the only way to know is to change it up. I’m guessing that will mean less pizza recipes for us 🙁 I just cringe when I see those chia seeds and wonder why I can’t bring myself to get past the “slimey” texture of them. My daughter got a new drink from Starbucks that had them in it and couldn’t drink it all due to the seeds growing and getting slimey. Looking forward to some low carb recipes!
I will be interested in seeing how you do with the carb cycling….I have been adding too much carbs to my diet lately and gained 7 lbs. after losing almost 35 lbs. on the keto diet. Time to get moving on it again. I might give Carb Cycling a try. Carbs are the killer for me….I love my carbs…..I will be watching your progress.
PS love your pizza dough…but how many carbs are in the pizza dough????

Good luck with the carb cycling. I have to say, once I hit 40, WW stopped working for me. I tried a couple of different versions as they changed it.
Eventually post baby (at 42!) I started losing weight. I think I was 44 by then. I used 21-day fix but what REALLY kicked me into gear was carb cycling. I bought the book from Chris Powell on E-book for 99 cents. I did it for a month and lost 7 lbs. I think the reason it worked for me is that before then, I really couldn’t figure out HOW to eat a meal without carbs. A month of that shook me up a bunch.
Also I had success before and after just giving up wheat, sugar, and alcohol for 30 days. Bad carbs. It turns out, now, that it was probably just the wheat the whole time. I didn’t know it then though. (Though I admit, my scale broke this winter and we got a new one. A winter of no wheat but plenty of chocolate and ice cream and I gained 7 lbs!) I’m ok with it though, been lifting a lot.
YOU CAN DO IT. I basically eat salad for lunch every day, and I’m pretty sure during carb cycling my dinner was always a meat/ veggie stir fry.
I so very much enjoy reading your post! You make me feel like I’m your next door neighbor! Although if I were, you’d be in trouble as I would probably be over all the time! LOL Just kidding. I am 69 years old and live by myself – I do not say I live alone…as I am not lonely 🙂 I enjoy my freedom. I have been on WW now for 2 months tomorrow – I have lost 18 pounds and it has been great.
