Saturday morning I headed over to Meijer to pick up some Certified Angus Beef ® – the Super Bowl is this weekend and while I don’t care about football at all – I am all about the food. 😀
I had the pleasure of participating in Certified Angus Beef ® Brand the Barn last summer, where I had the pleasure of meeting Certified Angus Beef ® ranchers and learn the dedication these ranchers have and how high their standards are. You’ll see angus beef in grocery stores, but Certified Angus Beef ® has the highest standards in the industry.
Beef can be expensive – and I get that. But have you ordered a sandwich at Jimmy John’s lately? In Chicago a sandwich, chips and a drink will cost you $13. That roast below? Yes, it’s $20, but even if you get only four servings out of it, that’s only $5 per serving!
I am very proud of myself – we are in the last week of January and I’ve stuck to my new years resolutions – tracking my WW points, and while chicken breast is free on their program, beef is my true love. There are 19 cuts of lean beef to choose from! I decided to make a WW friendly Super Bowl snack plate. These beef kabobs are so flavorful and easy to make – they can be made the day before, and cooked right before your guests come over, they are delicious hot and room temperature as well. Serve with some fruit and veggies, and you’ve got a tasty Super Bowl snack.
This marinade is enough to marinate the beef, shrimp and veggies – you just want to marinate them separately. You most likely already have all the ingredients to make this! I marinated this for 60 minutes. If you decide to marinate overnight – just marinate the veggies and the beef – the shrimp will start to cook if you marinate more than 60 minutes.

How delicious does that look?!
And it’s okay if you bring this to your Super Bowl Party and you if you keep it to yourself – I won’t tell!
What’s your favorite cut of beef?
You can check out more game day recipes here – Big Game = Big Steaks with Evander Holyfield. If you are intimated about cooking your beef, you can also check out this quick video – steak your claim on perfect doneness. I am definitely team rare/medium rare.
What’s on your Super Bowl menu? I’d love to hear.

Who are you rooting for? I hope the RAMS!!
My family would laugh and shake their heads if I presented them a Super Bowl platter with fruit. I of course, would love it! We are actually not watching Super Bowl this year. No teams in it we care about so lucky for me, no extra food temptations to worry about. I might make some kabobs just because ribeyes are sale this week. I’m also going to need to find an excuse to make that horseradish sauce. I was so shocked in your story that you can buy a 5lb. bag of potatoes for 99 cents. I don’t get it, this is Florida, not NYC, why are our prices for produce so high? Sorry, for the rant.
Kym. When I come home to S. FL( I live in Cali now). I’m always amazed at grocery prices. Produce is very expensive. I do love the cut up fruit at Publix though. Its always so ripe and juicy. I eat so much of it when I’m in FL on Vacation. Dairy is more expensive in FL too. Not sure why either.
