I never really had a sweet tooth until a few years ago. Like seriously I could pass by cakes, cupcakes, etc. I was a salty girl through and through – salt and vinegar chips, cheetos, doritos – you name it I loved it!
But then my love affair of gummies came about. Damn you Albanese gummies! Why do you have to be so good and so high in points?! Is it weird that I want to do a tour of your factory? I think its only a 90 minute drive from my house – road trip!
But over the weekend, I found myself wanting something sweet. And I only had two points left. Frick. Baked apples – yes! That was the beginning of something. I only used 1 teaspoon between two apples (1 point – but only 5 calories for 1/2 a teaspoon so I didn’t count that. I am a WW rebel that way.

I feel so good that I have my meal plan in place this week. Although, just because I write it down doesn’t mean I will exactly eat what I wrote down for each meal for each day – but I use it as a guideline – some days I don’t feel like what I had planned, so I switch days around – but I know that I have all the stuff to make what is on my meal plan which leaves little room for going off track.
Yesterday’s breakfast is what I call a “picky plate.” Just an FYI, if you have a picky plate for lunch or dinner, it must have pickles on it. π That’s for my friend Ashley. π
When we were cleaning out the fridge I had 3 points worth of chia pudding left, so there was chia pudding with granola and pom seeds, apples dipped in Better N Peanut Butter and two hard boiled eggs.
My sister and I met up for lunch to walk – it was fricken cold outside! We went to an art supply store, then walked to our old WW workshop to check out the new WW scale – apparently is weighs in points as well as ounces and grams. It was already closed by the time we got there, so we are going back today. It’s $40, but I have a gift card burning a hole in my pocket, so it will basically be free for me – we’ll see!
Lunch was lasagna soup – without the cheesy goodness – I forgot the cheese at home. Still tasty AF though!
And dinner was my artichoke and spinach stuffed chicken with pan sauce and salt and vinegar spinach.
The spinach is just a tablespoon of apple cider vinegar – bring that to a boil in a big skillet, add a couple big handfuls of spinach, turn off the heat and it will wilt in 1-2 minutes. Simple lightly salt when you plate it – if you love vinegar like I do, you’ll love this. It’s like eating healthy salt and vinegar potato chips – well, not really, but you get the idea! 7 points for this whole plate – and 5 of that is the prepared mashed potatoes. π

Eek – I didn’t realize I had so many notifications on the WW app – gotta check that out – so that’s how my day worked out – I also had just under 13k steps – nice! I am mostly proud of the blue dots on the weekend π
I have this new weekly planning sheet – and I had over 50 people ask me where I got it – I said Office Max!

The recipe is below – its half a cup of Greek yogurt mixed with 1/4 package of sugar free vanilla pudding, 1/2 teaspoon of Vanilla and two teaspoons of Splenda – so good!!
Could you freeze the yogurt mixture like frozen yogurt?
I haven’t done it myself, but a dozen or so people did on IG and said it tasted like frozen yogurt! I’m going to try that! Some said 30 minutes was enough, others did it overnight π
Too funny, I am sitting here wondering why is there this weird UPC sticker thing blocking out your meal plan? Note to self read, read, read before your brain scans the photos. Another amazing dinner and congrats on doing so well and sticking to plan. I am in self sabotage mode and need something to pull me out of my downward spiral.
