I can’t remember the last time I’ve felt this sick for so many days in a row. I think I just kept thinking that every day I’d wake up and feel better, but as soon as I would sit up, I would start a coughing fit that would last for 15 minutes.
A trip back to the doctor, a Chest x-ray, it was still confirmed that I have a bad case of acute bronchitis. I had a nebulizer (sp?) treatment while waiting for the chest x-ray, I have an inhaler and this morning I started on prednisone. I was told by many people that the prednisone will spike my blood sugar and make me cranky. When I told Hannah that, she said “glad I’ll be at work today!”
I haven’t had much of an appetite either. I didn’t eat a thing until I made this tomato soup. It’s my go to when I am not feeling well.
It starts by roasting carrots and celery at 350 for 40 minutes, or until fork tender.
Then throw everyone in the pool, and using a stick blender, blending the veggies together. I let it simmer for about an hour on low heat. Because of the veggies, this was really thick, and I think I may use some of it for a marinara sauce. To make my soup though, I added 1 cup of chicken broth to my bowl to thin it out.
Since I didn’t have anything to eat other than fruit before dinner, I added a cup of elbow macaroni, and some chicken sausage meatballs, to kind of make like a grown up spaghettios.
I added a cup of baby spinach to the bottom of my bowl.
Topped it with a cup of cooked elbow macaroni (side note: always store your noodles separate from your soup if you know you will have leftovers).
Top with the cooked meatballs and a sprinkle of Parmesan cheese, and you are good to go.
It was 10 points for the whole bowl and super filling. The perfect bite!

I am taking one more day off of work, hoping the steroids kick in today. At least it will be just one day back to work, and then another couple days to get better. I am sick and tired of being sick and tired!

I’m new to your website but I’m enjoying tremendously. It was recommended by a great cook so I was excited to look at it. You see, I was widowed when I was 53. My husband died after a long bout with leukemia. He was my best friend and soul mate. The next year after that my brother died from cancer. My dog died the next year (my animals mean a lot to me and she was our dog). This year my died from cancer. It’s been a long struggle with grief and trying to figure it out. I have not cooked in years-my husband was a great cook and loved it so I gladly let him.
As I’ve slowly climbed out of grief, I decided I want to eat more than sandwiches and fruit.
You came along at just the right moment. I tried the “shower omelette “. It didn’t turn out exactly right but I added fiesta black beans and cheese. It was edible but I need practice. I cooked some broccoli too. The dishes weren’t ready at the same time (see need to practice), but I thoroughly enjoyed my meal! Thank you!
I read the ugly letters from “haters”. Reminded me exactly of 14-15 year old girls who hate themselves so much it comes out in words they say to themselves. Please don’t stop-you motivate me tremendously!
Wow, I am so sorry for your loss – it’s hard losing your best friend and husband on the same day when they are the same person. Glad I can inspire you to get back in the cooking – and cooking for YOU because you deserve it! Hugs!!!

Glad you got a nebulizer treatment. They can really help open open the airways. The cough and lack of energy are two of the worst things to deal with in my opinion. Hope it gets kicked to the curb soon.

Have you tried Ronzoni Quick Cook Elbows (aka three-minute pasta)? They’re a little bit thicker than most elbow macaroni.

Get better lady! Soup recipe Isn’t awesome. Great idea with the sausage, I’ll have to stock up on that. You’ll be happy to know I raided the meat bin and am stocked for a at least a month with ground turkey, beef, chicken and salmon. Even got the freezer paper.

I hope you start feeling better soon! It’s a bummer. At our age colds turn into bronchitis easily and it takes FOREVER to get over it. I swear Mike had a cough for 2 straight months. I know because I ended up on the couch for 2 months.
