Made right here in Illinois since 1925. You guys, this cheese. There are no words. It’s soft, slightly salty, smooth, with just a slight pungent kick. And melty! #swoon
Long time readers will know that I love baking up a bunch of potatoes on the weekend, letting them cool, and then storing them in the fridge. Perfect for last minute dishes, because the potato is already cooked!
The best part is that when you shred baked potatoes, the pulp goes into the cheese grater, leaving you with the skins – how cool is that?!
Simply mix the shredded potato with an egg and divide in between 12 muffin cups.
You simply prebake the potato mixture for 10 minutes to crisp it up a bit. While that’s going, divide 12 ounces of turkey sausage into 12 portions and pan fry for 8 minutes. Let cool slightly.
Mix up the egg mixture, pour between the muffin cups, careful not to overflow. It’s okay if you have a little filling left, you can store it in the fridge for later.
Now the best part – this creamy goodness of cheese!
Bake for another 15 minutes and you’ll get the most amazing creamy, yet crusty topping to these breakfast muffins.
Garnish with chopped parsley or cilantro, fresh fruit, more sliced cheese and you’ve got the perfect Sunday or holiday brunch.

Such a pretty food photo shoot. Does Hannah do the fancy schmancy cutting of the kiwi and strawberry? You are a true food blogger taking time to make it all so pretty. I’m just give me all the food now because it has been smelling so good while I’m cooking. I need to remember to have some snacks close at hand while I cook. I just love these egg muffins. I think little mini egg cups are one of my favorites. I buy the Jimmy Dean Frittatas all the time but if I could figure out a way to make something like this that would freeze well I would be so happy.
do these freeze well? and would they reheat well in a microwave?
They should freeze well, but I haven’t tried it. If you reheat it in the microwave, you’ll lose the crispy bottom, but I’ve reheated refrigerated ones in a skillet with a bit of Pam with a lid on – the muffin gets warm and crispy again. 😀
