I wasn’t hungry for breakfast yesterday, so I didn’t eat. Let’s just call it an intermittent fasting. 😀 Right before I went on my lunch time walk with my sister, I ate a banana and I was good to go. It was so humid outside, we walked Macy’s. Pretty day before the storms came through mid afternoon.
This screen shot makes me laugh so hard. Anywho, Jenn picked up these shoes because she loved them and I thought she lost her mind. Well, 25% of those who took the poll think they are cute too, so I guess she’s not alone.
Lunch was my zero point filling made into lettuce cups. I added 1/2 ounce of cheese, my homemade salsa and while I thought this could be finger food, but I needed a knife and fork to eat these – two points for the whole plate!
Side note: I was going to the bathroom at work, and one of the stalls has an auto flush, which I never remember until I am sitting down. After the third time it flushed, I had enough and started to stand up, when I went to pull my pants up, my key card for work popped off my pants . . . and straight down the toilet. Doh! There are signs everywhere saying not to flush your tampons, but there wasn’t anything about flushing down your key card. It will pop up somewhere with my name on it! 😛
Like most holiday weeks where I entertain, I don’t do a full grocery shop, because I know I have plenty of food to come up with something. This started out being buffalo shrimp and grits, but quickly turned into something I am calling Dirty Shrimp and Grits. I didn’t even google that to see if that is a thing, but after I made a quick pan sauce, that’s what it looked like.
I simply tossed my shrimp in a teaspoon of flour and teaspoon of corn starch – not so much to coat the shrimp to make it crispy, but to help make a pan sauce later on. When I first started this dish, I thought I could make it in about 7 minutes. It took me 11 minutes – but still, super quick weeknight dinner, or good enough for when company comes over.
I used quick cooking grits – 1/4 cup of grits to a cup of water – place in a large bowl because it puffs up and you don’t need a mess in your microwave. Not that it’s ever happened to me – I heard it from a friend. Once it comes out of the microwave, stir in an ounce of cheddar cheese.
For the pan sauce, I added 1/4 cup of chicken broth to the buffalo/butter sauce, and scraped the sides and cooked on high for a minute until it thickened up.
Pour that over your cheddar grits and garnish with parsley. So easy, spicy, cream and delicious!
I tried to use my DSLR last night, but it was so humid my lens cap kept fogging up. Today is gorgeous – 70 degrees and low humidity – love!
Seriously though – you guys need to put this on the “must make soon” list – you’ll thank me later.

I am such a good dog grandma. Rummy hated this and would’t take a lick. Roman, however, loved it! But I can’t really take that as a compliment because he tries to eat his vomit. 😛
My 10k streak is going strong! I tracked like a boss this week, so hopefully it will show up on the scale tomorrow at Weight Watchers. It’s funny because the weeks I think I will have a loss, I gain, and when I think the scale will be up, I lose!
Show of hands how many of you planned ahead for party pizza Friday?! This dough comes together in less than two minutes, and it can rise all comfy in your microwave until you get home from work. I even put the recipe screen shot in this post so you don’t have to click a link to find it – I am just so giving like that!
This dough is 1 smart point per ounce, so it depends on how big a pizza and what toppings you put on top. Um, can you check out my battery on my phone this morning? I think my bedroom outlet that I plug my phone in isn’t working. I woke up at 6:05 to go to the bathroom and it was DEAD. I need my phone as my hot spot on the train, so hopefully I have enough power to post this before getting to work. In an hour it only got up to 18%!
Happy Friday friends – what’s on tap this weekend? I leave for vacation next Wednesday, so I am looking forward to that. It’s supposed to be gorgeous, so many a mini road trip? We’ll see what happens!

I had every plan to make this shrimp dish on Friday but as it got later and later and I was hungrier and hungrier it just didn’t happen. It is on the menu one day this week when my daughter is at work. She doesn’t like shrimp.
So we had party pizza Friday last night! Made two pizzas with the skinny pizza dough, one for my husband with turkey pepperoni, mushrooms and red onion (sorry) and mine a veggie style. The weird thing is the crust on mine was perfectly crispy like yours but my husbands wasn’t which was too bad cuz he’s such a fuss budget lol. I can’t figure out why that happened, made them exactly the same except his had pizza sauce and mine didn’t. I baked them on a stone as I don’t have the baking steel yet! The only other difference is mine was on the bottom rack and I had my husbands on the rack above it. Would that make the difference? Anyway I’m anxious to try again as mine was delicious!! I wish I could be a cook like you are. I am lost without a recipe! Great job walking. I’ve been running but the heat in the upper Midwest has been just killing me. My plans for the weekend were going to my Dr appointment yesterday ( starting on hormone replacement) with another visit for blood work on Tuesday. We might go hit the farmers market or go for a hike. Picnic in the park is our summer time activity. Hope your weigh-in is a good one. Mine saw a gain. Hoping HRT will help but it will take weeks before I know.
I made your pizza dough on Tuesday night for the first time and it was SO GOOD. I had made the other version without the yeast/water and didn’t care for it as much. Had some on Wednesday with a friend for lunch, and then my daughter finished it off last night. It does get better and better in the fridge! YUM!
