I had a very productive day yesterday! I think I am getting used to all the manual labor, because I wasn’t as lethargic yesterday like I normally am after working markets two days in a row. #winning! I made a list of everything I wanted to get done, and did it all except get gas, but I can do that today. It was gorgeous out yesterday morning, and even though I wanted to sleep in, I was wide awake at 7:05. I took my office outside and sat outside doing some computer work for a couple hours with the gentle breeze, the chirping birds, coffee and this delicious 6 point parfait.
I used my very berry sauce recipe – only 1 smart part for a cup, a container of plain Chobani (2) and an ounce of granola (3).
Um, turns out the dogs love Chobani too! Roman wished he could have stuck his whole head in the jar!
I was really happy to get bizzy in my kitchen. I had a morning glory mason jar recipe pinned for a while, realized I had all the ingredients, so got bizzy making then. When I calculated the points each mason jar was 6 smart points. But, it was a Pinterest Fail. The original recipe didn’t call for any flour, baking soda, etc., which I thought was weird, so I tinkered with the recipe a bit. That may have been my fault, but I basically mixed a bunch of morning glory muffin recipes together to get a nice batter. It tasted good going into the jar, but even after cooking it 15 minutes longer than the recipe suggested, it never got fluffy, and when cooled I tasted it, and the muffins were all gummy. I would have been better off making just regular morning glory muffins!
I had leftover steak from Saturday night, and decided to make a stir fry for lunch. My Mom is visiting my brother and his family this week. I got a text just as I was sitting down to lunch from my Mom: “Read blog. Eat veggies!” Thanks Mom!
I am sure I am not the only one that buys an ingredient for a recipe, said recipe never gets made and then a few months later you are like “I didn’t know I had that!”
Why have I not tried this before?? It’s amazing. Such deep earthy flavors, and 1 tablespoon is only 1 smart point. I cut off 4 ounces of the steak and got to work.
Wow, was this delicious. I did end up adding a bit of sriracha after the first couple bites because I didn’t think it was spicy enough, but you can be the judge. This was super filling and 9 smart points total.
I then went to run some errands, and then hit up the gym. I ended up doing 45 minutes on the treadmill, but I did a hill climb the whole time at 12%. I got nearly 3 miles in that time – it was hard!
I ended up needed a new battery for my fitbit – I hadn’t worn it since Friday. It was nice that a few people on my fitbit buddy list asked me if I was okay because I had clocked zero steps over the weekend! After I got done at the gym, I was at 10,400 steps. However, after dinner I looked down and it said I had only walked 405 steps, so not sure if the time changed on it or not? I guess I’ll find out if it’s working today.
Dinner was quick and easy. Taco salad for 11 smart points.
I have WW weigh in this morning. I also need to deep clean the fridge and meal plan for the rest of the week. I hope to walk outside today as well as get to the gym. It’s only going to be 79 degrees today with the sun shining.
Make it a great day!
Awwwwwwwwwww Roman! Bella likes coffee, every night after we finish our coffee she can lick out the cup.
The time on your fitbit will automatically reset once you synchronize it. I have the same as you.
I am a bit too organized LOL I have a list in my kitchen with all the herbs/sauces I have in the kitchen, also have a list with all the stuff that’s in the freezer.
Yep, my Fitbit is working fine again – I didn’t realize that it just had to synchronize. Isn’t Roman so cute?! Makes it hard to get mad at him when he gets into the garbage 😀
I used to cook all the time and loved throwing stuff together. I’m not sure if I just got lazy or stopped caring but I haven’t done much in the kitchen worth mentioning lately. Last night I had some leftover turkey with some new zucchini and I made up a recipe which was delicious! I thought of you – always being crafty with supplies on hand. I was a peacock, I was so proud.
Your stir fry sounds delicious.
Jimmie – your comment made my day! Love that you got yourself back in the kitchen – it’s fun, right?! Hugs!
OH ROMAN!!!!!!! LOL!!!
I know, right? His face is so cute that I can’t get mad at him when he gets in the garbage!
My mom used to email me comments about my food when I was dieting…oh moms. Never stop being you. Of course, I NEVER do that to my kadults, haha. Ha. 😉
Right? Do as I say, not as I do!
Please tell us how you replaced your fitbit battery.
Hey Wendy! I have the fit bit zip – and it takes a CV2025 battery – kind of like a watch battery – I get a two pack of batteries for $8 at Walgreens – the back comes off and I just pop in the new battery. I am sure the more expensive ones are harder to replace the battery, or you need to plug them in to charge? Not sure!
