My office is closed for Good Friday, so I got to sleep in – I just woke up at it’s 8:15 – nice! My sister has to work, but I am going downtown to meet her for lunch to finally celebrate our birthday which was last month. I can’t even remember the last time I went to Chicago – maybe last year when I went I went to see Riverdance with my Mom and sister? I think that might be right because Tony was sick all summer, we went to Mayo in July, so yep, I think its been a year!
It’s weird that Chicago is only 55 miles away from where I live, and I don’t take advantage of it enough. It’s only an hour and ten minute train ride for me to get down there! I plan on taking advantage of some summer festivals this summer and I’d love to go to the Green City Market, I’ve never been!
Breakfast was the last of my overnight cottage cheese blueberry pancakes, with almond butter syrup and walnuts and a spicy egg on the side. Breakfast comes in at 474 calories, 55 carbs, 31 protein, 15 fat and 2.2 fiber. So filling and delicious! I had a medium almond milk cappuccino from Hannah’s work, and that helped me reach my 30 grams of protein goal for breakfast.
One of the secretaries was out so we had to stager our lunches, so by the time I left the office, it was already 1:15! I did a quick 2 miles on the treadmill at 5% incline.
I put this photo on Instagram yesterday as my Throw Back Thursday. The White Sox season has begun and their home opener is next Friday. I knew my step-son Joe would like that picture and he was the first one to like it – I think this probably would have been about 2008?
I can’t believe I forgot to tell you guys this. Remember the article that ran in the Suntimes in February about Tony? Well when I was in Key West, I got a letter from the White Sox!
Yep, that’s signed by Jerry Reinsdorf – the owner of the White Sox! How cool is that? I’ve already made the prediction that the Sox will win the World Series this year, you know, in honor of Tony!
By the time I got back to my office it was already 2:15 and I was getting hungry, so I just quickly heated up another meatball sub and had some cottage cheese on the side – lunch comes in at 33 grams of protein.
And since the office was closed today, I had to get a bunch of stuff done and ended up working 30 minutes late. My first gut reaction was to just say “fuck it” and not go to the gym to get my strength training in, but I immediately put that thought out of my mind and did my 30 minutes of upper body, meeting another PR! Okay, I am going to sound like I don’t know what I am talking about, because I don’t. The weight room has all the free weights where you can add as many plates on as you want. I don’t actually know how to secure the plates on those bars just yet, and there were a bunch of teenagers around, so my first thought was to try to use 35 pounds on the free weights to up my PR of 30 earlier in the week. But the fixed barbells only come in increments of 10, so I said to myself “just try 40 pounds for one set and if its too much, go back down to 30 pounds.” Yep, I have conversations with myself people!
Well guess what? I did 5 sets, 10 reps each at 40 pounds – woop! Just kicking ass in the gym and taking names! Then did 2.5 miles on the treadmill at 8% incline.
I declared last night leftover night. It’s weird because all while married to Tony, we never had leftovers for dinner because he didn’t like them. I always ate them for lunch. But we had plenty of stuff to choose from, and by the time I got home from the gym it was already 7:15, so I made a quick naan pizza using some of the spinach meatballs. This hit the spot – and even by itself has 24 grams of protein – not bad!
And here’s Hannah and I being goofy – I love seeing her face every day!
Alright, time for me to shower and head downtown in a little bit – follow my on Instagram! (my bizzy kitchen).
Hope you have a wonderful Easter! My Mom and sister-in-law and her family are coming over, along with one of Hannah’s friends and her son. Not sure what I am making yet though – what’s on your Easter menu, I need ideas other than ham!
Have a great weekend – see you on Monday!
That letter is so cool and thoughtful! And how cool would it be if Joe could come over to go to the game with you.
Our nearest city is just a 10 minute drive away from me but I never go there. I don’t like the city. However this morning I read a blog about a food festival and a quick google showed that there is a food truck festival in the city in May. I do want to go there. There is also a food truck festival in the town I work at, also 15 minutes away in September and want to go there too.
The letter is awesome!
Hope you are having a great weekend!

Oh my goodness – sounds like you’re going to be invited to the White Sox stadium! What a wonderful way to honor Tony!!
55 miles is not really that short of a distance, especially when you’re driving into a city – but the fact that you can take the train? Well yes, I think you should go to Chicago more often 😀
I know, it wasn’t a bad train ride at all – I watched Parenthood on Netflix so it flew by! Have a great weekend Helen!
<3 PS don't forget we all went to Chicago 🙂
