I had the best breakfast yesterday – it was so flavorful and tasty, I might just fix it again today. I used one of my naan breads as the base for breakfast pizza. I scrambled egg whites with jarred roasted red peppers. I put a teaspoon of Sabra red pepper hummus on the bottom of the naan, then topped it with baby spinach, the scrambled eggs, then cheddar cheese and toasted it under the broiler for about 5 minutes. The edges of the naan got super crunchy, yet tender on the inside – then topped with cilantro. This whole pita bread is 347 calories and 25 grams of fiber – so filling!
I put that on Instagram (um, are you following me? mybizzykitchen) and linked to my daughter-in-law and said “I think without the cheese this would be vegan!” Um, turns out vegans can’t eat eggs – I thought it was the egg yolk only – oh well! Speaking of my DIL – today is her birthday – happy birthday Lizz!
I did my usual, take half the amount of insulin at breakfast so my blood sugar is high enough to work out at lunch. Around 11:15 I took my blood sugar – 120. Damn! There were chocolate chip cookies in our coffee nook, so I decided to eat one to bump up my blood sugar. Nope – 15 minutes later, it was down to 111! Double damn. So I ended up taking no insulin and eating my lunch. Using more of the leftover chicken from the rotisserie chicken, I made chicken and corn tostadas with salsa verde.
My co-worker brought me the best salsa verde last week – she cooks her tomatillos on the stove before making the salsa. Huh. I’ve only grilled mine!
- 6 large tomatillos, quartered
- 4 cloves whole garlic
- 2 jalapenos, seeds removed from one
- 1/2 cup cilantro
- 1/2 teaspoon salt
- juice and zest from one lime
In a small stock pot, add the tomatillos, garlic and jalapenos and cover with water. Simmer for 15 minutes, or until the tomatillos are tender. Let cool slightly, then mix with the remaining ingredients in a food processor. The only difference from my friends recipe is that I left out the onion and used WAY more cilantro. I puffy heart that shit.
One of the attorneys is also a salsa fan, so I gave him some as an afternoon snack – he nearly licked that whole bowl clean! Thanks for being my hand model Rob!
So finally 30 minutes after I ate my blood sugar was 231 – I could go to the gym! But I felt sluggish and like I was going to throw up any second – I don’t like working out on a full stomach. I did half my strength exercises and squeezed out a 2 mile walk.
So when Hannah and I went to lunch last Saturday, I ordered this Thai noodle soup with seafood in a sriracha broth – it felt like I was eating for an hour and didn’t hardly make a dent! Check out my leftovers – it took TWO containers!
I heated up about 3/4 of one container – still so good even though the noodles were a bit more soggy, and I had one lone shrimp – I guess I ate most of the seafood on the first run!
While that not look like much, holy balls the flavorful heat that is in that broth is addicting. I was practically coughing while eating it, my nose started to run. Tony just looked at me and shook his head. He just doesn’t get how something spicy like that makes you want to take another bite!
And today is also my FIL’s birthday – Happy Birthday Carl!
I slept in a bit this morning – it was so toasty in bed. Right now its 37 degrees out. I am so not ready for super cold weather yet! Although I think we are supposed to have weather in the 70s over the weekend. Gotta figure out what to put together for food today – make it a great day!
Good God, I love cilantro! I add so much of it to my pico de gallo and guacamole! I can also eat the stuff plain; just pop a little leaf in my mouth here and there. Love it!
Do you use store bought tostadas when you make your creations? I really loved the post Charlie did about his daughters. I too love cilantro. The fritters looked so good and I don’t even like sauerkraut. I’m super excited to be making some of your roasted items, deep dish pizza & bread. We are getting a new A/C system installed Friday. It has been a long hot summer and a working A/C means I can do some serious Biz cooking.
That salsa looks delicious. When I lived in Mexico the little taco stand near my house had the most amazing salsa verde. Simple shaved pork tacos with raw onion and salsa verde were the best! That was obviously before I became vegan. This woman at work the other day insisted that her vegan friend eats cheese and eggs. I said so she’s vegetarian. My coworker shot back no she’s a lacto-ovo vegan! I gave up!!
I used to tolerate spice better than I do now but I do live sriracha! Yum! The tostadas look so good! You’re always so creative 🙂 What knd of naan do you buy? The kind my store has is so high in calories and carbs 🙁

The salsa verde looks incredibly delicious. Did it take you a while to figure out portioning? How do you say “no” If we go out and I get a huge bowl of soup, I eat it all. Even if I am beyond full, I still have a hard time saying no if it is in front of me.
Vegetarians eat eggs, milk, cheese and honey.
Vegan rules –> No meat or animal by products. If it comes an animal (eggs, cheese, milk, honey) then it is out. Most vegans don’t wear leather or wool either. (Only synthetic or cotton sweaters for Christmas)
Reading about your insulin troubles helps me understand one of my good friends. She’s a diabetic and really struggles to keep her levels correct. She likes wine a lot and one day she was acting super drunk, she kept saying she only had one glass, but I just assumed she had forgotten how many glasses she drank. She then drank a soda and was fine. Turns out super low blood sugar can make you act drunk? I had no idea. Now I’ll know for the future though, next time I’ll make her eat a cookie or something!
Cilantro is one of those things I always add more than a recipe calls for!
I hate to workout after eating – hopefully today your sugars cooperate more.
