I only had legs for strength training yesterday – it was a rest cardio day.  So I slept in until 7:00!  I still had an hour before I had to leave for work – it was nice having a leisurely morning before work.

I had a Green Monster for breakfast.  It’s the last of the Good Belly that I bought at Whole Foods – I’ll have to see if they sell it in a regular grocery store.  I wasn’t a huge fan of the taste by itself, but its tasty in a smoothie.

Since my workout wasn’t very long, I had time to accessorize my taco salad that I brought from home.  As usual, by the end of the week the only veggies I had in the fridge at home was carrots.  My thought was that I would hit up the salad bar at Mariano’s to bulk up my salad.

Well, what I didn’t know is that it seems Friday afternoon is a big sample day.  As I was walking around I mindlessly helped myself to:

  • cheddar popcorn
  • CHEESE – a 2 year aged sharp cheddar was amazeballs
  • salami
  • pasta chips – these were amazing too
  • two flavors of gelato – apple crisp and pecan pie – YOLO!

It was after that second bite of gelato that I suddenly thought “what the fuck am I doing?”  It was such mindless eating that I haven’t done in a long time.  I quickly got my salad bar ingredients and got the hockey puck out of there!  I must have had temporary insanity!

Well, after I looked and drooled over the cheese!  Jacky, I am so happy you finally got to go to a Mariano’s – there is talk that they may take over some of the Dominick’s stores!  Maybe the Oak Park Dominick’s would become Marianos!

I got back to my desk and had my taco salad – I used 1/2 a cup of the leftover beef and rice from the arancini I made the night before.  I got broccoli, green peppers and carrots from the salad bar for $1.24.  The dressing is 2 tablespoons of my tomatillo salsa mixed with 2 tablespoons light dressing.

Since I knew that we were going to have Party Pizza Friday last night (much to Tony’s chagrin!) I made my pizza dough before work.  Took me all of about a minute?

  • 1.75 cups flour
  • 1 teaspoon yeast
  • 1 teaspoon sugar
  • 3/4 teaspoon salt
  • 3/4 cup cold water
  • 1 tablespoon olive oil

Mix the dry ingredients first, then add the water and oil.  Mix until combined,  Put a kitchen towel over the top and let it rise all day.

When I got home, I saw bubbles!

It will be quite stringy and sticky – just dump it out on your counter and add enough flour so you can roll the dough out – I probably added about 1/4 of a cup.

I set my oven to 475.  Baked the pizza for 7 minutes on the lower third of my stove, then finished it off under the broiler to melt the cheese.  I like adding the baby spinach after it comes out of the oven – it kind of wilts from the heat of the cheese.

The verdict?  While this looks super crunchy, the dough was really soft and chewy.  Which we don’t mind, but we missed the crunchy crust.  I am thinking I should have taken the pizza off the pizza pan for the last few minutes.  I am going to heat up the leftovers later in the convection setting of our toaster oven and see if I can capture the crunch.

So I added my mindless eating to caloriecount – my guesstimate was that I ate 388 calories – which will take 60 minutes of walking to burn off – gah!

Stats for the Day:

  • 1886 calories, 206 carbs, 69 protein, 89 fat, 17 fiber
  • 41% of calories from fat, 14% from protein and 43% from carbs

My goal for next week is to lower the carbs and fat – I think I had at least four days last week where the majority of my calories came from fat – I’d like to bring that number down between 25-30%.
