I kinda hate oversleeping. I can’t really remember the last time I did it! Since I was starting this team beach body diet this week, and since I went out last night, I didn’t have time to prep my food last night, so it had to get done this morning.
I adjusted my food yesterday because for one, I was only doing Insanity at lunch and two – I didn’t know exactly what I was eating for dinner. Breakfast was a team beach body Denver omelet – I am showing their version, and will show my changes.
Beach Body Denver Omelet – Serves One
- 343 calories, 14 fat, 8.3 carbs, .9 fiber and 41 grams of protein!
Ingredients:
- 1/2 teaspoon canola oil
- 3 tablespoons chopped onion – NOPE!
- 3 tablespoons each red and green pepper
- 4 ounces of deli ham (I reduced to 3 ounces – still a ton!)
- 1/2 cup egg whites
- 1/2 cup of egg beaters
- 1/2 ounce of reduced fat cheddar
- 1/2 cup chopped fresh spinach (I added this)
- salt and pepper
- I also added crushed red pepper
Heat the oil over medium heat. Add the peppers and saute until desired doneness, I still like them a bit crunchy, so I only did that a few minutes. Add the egg whites and egg beaters, mix up a bit. Once the bottom is set, add the ham and cheese in the middle, salt, pepper and crush red pepper to taste. Flip to one side and put a lid on until cooked through.
With a cup of raspberries and 8 ounces of plain unsweetened almond milk.
Only one tiny problem. Um, unsweetened almond milk, all by itself? Kinda tastes like ass. My co-worker Cassie came to the rescue though – she had some chocolate protein powder stashed in her desk for emergencies. When she asked what the hell I was drinking and told her she said “this is such an emergency!”
Luckily this wasn’t a meal replacement size – only 95 added calories, and with the almond milk being only 30 calories, this became my mid-morning snack. Not sure why I need 1667% of thiamin though!
Since I am back to the first round of Insanity – the workouts for the next 30 days are between 40-45 minutes. Yesterday’s cardio power and resistance was only 40 minutes, so I was able to borrow my office’s lap top and use the gym that has group exercise classes. They don’t have any during the day usually so it was wide open.
Here I am finishing up the stretches at the end, even though it looks like I am trying to do the Stayin Alive pose!
I went over to show you the view from the gym – the outdoor pool – it was on the chilly side yesterday but there were still a few kids out there.
When I was walking out the door – I saw this ball though. Huh. Not exactly what it’s used for? I texted it to Tony asking “wonder what this is for??” His reply? “Sit on it and find out.” Any of you exercise guru’s out there know what this is used for?
So lunch was another beach body recipe – Greek Style Shrimp salad. Can you believe the original recipe called for 8 ounces of shrimp for one person? I reduced it to 5 ounces.
Greek Style Shrimp Salad
- one serving: 409 calories, 7 fat, 52 carbs, 6.6 fiber and 35 protein
Ingredients:
- 1.75 ounces dry orzo
- 1 teaspoon lemon juice
- 1 teaspoon red wine vinegar
- pinch of black pepper
- 1 teaspoon olive oil, divided
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon Greek seasoning (I added that)
- 2 tablespoons green onion – NOPE!
- 1/2 cup chopped jarred roasted red peppers (I subbed this for the nasty grape tomatoes called for in the recipe)
- 1/2 cucumber, chopped
- 1 small zucchini, sliced (my addition)
- 5 ounces of shrimp
- 5 black olives (left out)
- 1/2 ounce feta cheese (subbed in 1/2 ounce of cheddar cheese)
- 1 cup chopped Romaine lettuce
- big pinch of crushed red peppers
Directions:
Heat half a teaspoon of oil in a pan. Add shrimp and zucchini and saute until the shrimp is cooked. The zucchini will still be crisp tender. Set aside to cool. Cook the orzo for 5 minutes in boiling water – drain and let cool.
In a medium bowl, whisk the lemon juice, vinegar, pepper, Italian seasoning, Greek seasoning, and remaining 1/2 teaspoon oil. Wash and chop the cucumber and romaine. Chop up roasted red pepper.
In a large bowl, toss everything together. I didn’t add the romaine until it was lunch time because I thought it might get too wilty.
I have to admit – I was a bit nervous because I wasn’t sure how I’d feel about a cold shrimp salad. I like shrimp cocktail, and cooked hot shrimp, but I actually really loved this dish. The crushed red pepper kicked it up and I loved the vinegary tang. It made a lot too!
Then it was a race until 5:00 until it was time to meet my twin sister Jennifer, Sophia and Christina for dinner at Maya del Sol in Oak Park. Sadly, it was getting dark by the time we met and gathered in their outdoor seating area. We were so busy talking that none of my pictures turned out that great of the girls – rats!
My sister and I got there first – Sophia and Christina weren’t far behind though.
Since I don’t drink during the week, I envied my sisters beer!
Since my the Architectural firm my sister works at did the remodel of this restaurant, we were presented with two free appetizers:
avocado relleno avocado · blue crab · red pepper ·
red onion · avocado-tomatillo sauce
mussels p.e.i. mussels · white wine · garlic · cilantro ·
leeks · tomato · toast
I am actually very proud of my sister for trying the mussels. OMG, these were amazing – they were swimming in a cilantro wine garlic sauce that was to die for. If I would have had a spoon I would have eaten spoonfuls of it! When the plates were cleared, it was a tie between me and Sophia who ate the most – my sister? Just one!
Of course, they offered delicious tortilla chips and salsas – I tried a few – they had a dark green salsa that reminded me of my baja fresh salsa that was really spicy and good.
We also got a side of their homemade guacamole – tiny chunks of onion, but I was able to see my way clear of them. 😀
I ended up ordering the carne asada tacos – no onions. It also had a creme fresh cilantro sauce on the bottom that was delicious! I ate about 1 1/2 tacos – I wished I had room for more! I gave the third taco to my sister to take home.
Yum and yum. I ended up adding a bit of the green salsa leftover from the tortilla chips over the top. The meat was perfectly cooked and seasoned.
While no one had room for dessert, I did have coffee to round out the meal – nothing like a great cup of coffee to finish of a great dinner!
While I’ve met Christina a couple of times and know that she is crazy as ever, which I love – my sister and had never met Sophia, but it was like meeting an old friend. We’ve “known” her since 2008 when she was a freshman in college recovering from anorexia. I was just so happy at how healthy she looked – she looks nothing like her former self and I am so happy for her recovery.
She leaves Chicago at the end of this month back to Los Angeles. She’s been loving Chicago although has learned her lesson on being on the L in the wee hours when it becomes a drunk train!
Thank you ladies for such a great dinner of great food and conversation. I love that our little blogs found each other and we’ve gotten a chance to get to know one another!
So here are my stats for the day – a bit high on the calories from my 2100 calorie goal – my guestimate of dinner was around 831 calories, 37 fat, 91 carbs, 10 fiber and 40 protein.
- 40 minute Insanity
- 2209 calories, 84 fat, 216 carbs, 37 fiber and 148 protein
- 39% of calories from carbs, 35% from fat and 26% from protein

If you ever go to Maya again, you should ask for a side of the hot sauce that comes with their cochinita pibil. It is amazingly hot-one drop will do ya!

Oh wow. I overslept the next morning too!! I have to be at work at 10 am….and I woke up at 10 am!!! We must have been way too satisfied the previous night. Hee hee, I’m glad Jenn tried a mussel too! The sauce was delicious…the mussels themselves were anorexic though. Emaciated flesh! Hahaha!
I wanted to have a drink or two, but…as you know, I had to write that night. But it was a blast! 😀

What a lovely evening! And I agree that my blogger friends whom (in my case) 99% of them I never met are my friends. Sure internet friends but most of you know more about my daily life than my real life friends. I don’t see them every week and most of them don’t read my blog (although they know I have a website and they have the link).
I met one blogger. She’s an American living in Belgium and we ran a race together. A couple of months later she was having a vacation about 30 minutes from where I live and we met for coffee.
I need to book a round trip to the USA and visit my blogger friends!

I’ve met a couple bloggers in person; two that live in Omaha and one that lives in Lincoln. One of the Omaha bloggers has become a very good friend; she no longer blogs but we still text/email and get together once in awhile (busy lives, busy lives).
I love that you said this, “…I don’t drink during the week…” – you could have so easily said, I don’t “normally” drink during the week, and made an exception. Good for you sticking to your ground and avoiding extra booze calories. That first appetizer looks amazing; I’m so hungry now! Going to bed instead. 🙂

Don’t lie, you were bustin’ out the stayin’ alive moves!!! Lol!! The pool is absolutely gorgeous, what I wouldn’t do for a huge pool like that. Your outing looks like it was a lot of fun and the food sounds great! I haven’t “met” any bloggers that were close enough to hook up with. But, I am still friends with people (like V) from Myspace and that’s been awhile. I agree with you that you can still know people via online and not in the real world! I also have some bloggers on my facebook but, most have deleted me…I can’t figure out why? Bwah!!!!! Lol!! It’s all good and I still laugh on there almost daily 🙂

I hate oversleeping too, and waking in a panic. Dinner looks amazing. We are bringing friends from out of town there Thursday night. I may try the mussels, though I am making them at home on Friday. Decisions, decisions.

I love making those omelets for a morning breakfast. Only I use two eggs, Olive oil, spinach cook it up a bit, lay a piece of ham down, mozz cheese, cover, fold over and put on rye toast with some (not so hot – hot sauce)
Which reminds me, over the weekend I found a new store that sells maybe 20 varities of hot sauce…..I found one for you, that was so hot…..YIKES…..all I did was dab the end of a small pretzel in the hot sauce……whew the inside of my mouth was burning for 5 minutes!!!! Well I thought of you….think I will buy you this sauce for Christmas…..this just might be the hottest sauce this side of hell…….no kidding!!!
Food sure looks good at Maya del Sol. I have read Sopia’s blog a couple of times….she is a good writer. Looks like you all had fun.

I haven’t met any bloggers in real life yet, but I enjoy watching their lives unfold via my feed reader. 🙂 And I think it’s funny when I’m out in public and I see someone and think it looks like a blogger I follow. I’m still trying to be brave enough to put the details of my own life on my blog, I think I’m afraid of offending someone or attracting mean comments. I worry too much about what other people think.
My guess is those protrusions on the exercise ball are handles for some complicated moves? I’m so uncoordinated that I can never do any of the things involved with those exercise balls anyway.

BIZ where are you getting the menu???
I paid 2.99 to get access to it online – basically I filled in a “questionnaire” and based on 90 minutes of working out (45 at lunch and 45 of Insanity) most days, they wanted me to eat 2400 calories! Gah! I backed it down to 2100 – its lower in carbs (don’t count last night!) at around 150 grams and usually 200 grams of protein.
And snacks, which I normally don’t eat, but will – I had granola for my morning snack and a chobani and almonds for my afternoon snack.
I am super interested to see how this goes for you, if you see the results you expect to see. That is a BOAT LOAD of cal, and I like the focus on lowered carbs (of course, for B) He had less than 1/2 cup of CORN last night for the first time since May, the ONLY thing out of the ordinary for him last night and he tested 176 this am where he has been running right around 65-80!!!!!!!!!!! FROM CORN!!!!!!!!!!!!! Not gonna lie, I loved every second of silent validation that he needs to go gluten, dairy and grain free……albeit for a cheat day here an there just to satify a guilty pleasure. still blown away by CORN. crazy. I see arrowroot replacing corn starch in my near future! does any weird thing spike it for you?? Such an indiviualized diesease…….I need to make your granola sometime. I have been eyeballing (BALLS, just for you ;)….) a granola from taylormadeitpaleo, she is a type1 diabetic….one of these days….. HAVE A GREAT DAY!
Peggy – its different for me because I can take insulin for anything I eat to regulate my blood sugars – not to say it is easy because of how insulin is different in my body at different times of the day – in the morning if my blood sugar is normal and I work out – it jumps to the 300s, vice versa, if I were to work out at lunch on normal blood sugar, it would drop like a stone.
One of my good friends and registered dietician Nicole (preventionRD.com) doesn’t like me to have less than 125 grams of carbs a day as a diabetic, carbs are still needed in a healthy diet. Did B eat the corn by itself – typically before insulin I would make sure I had a protein with it – like adding corn to a steak taco – the protein and carb balance out and I didn’t have that much of a spike.
Diabetes sucks, doesn’t it?! Hang in there – I think you are doing great with his diet!
it does suck! LOL! no, we are emptying the fridge/freezer/cupboards so we had grilled chicken, brown basmati rice (this has not spiked it in the past, maybe the combo w/ the corn??) roasted broccoli and CORN. This is the last bag in the freezer, trying to meter in the spikers to get it out of the house, a little at a time. He has a A1C appt coming up soon, WE WANNA SEE GOOD NUMBERS! He did work out prior to taking his number this am, maybe that did it? but he tests the same time pretty much and on other days the workout has not impacted the blood draw. I even asked, ‘did you have toothpaste on your finger?’ LOL and so he took it again, different finger, same number. I am guessing, the corn paired w/ the rice he should have had MORE protein, like a nice snack of CHEESE later on last night.
I think that diabetes is like a naughty little kid, just when you think you have em figured out, they do something else! Oh well, day at a time, right Biz? Some days, B thinks insulin maybe wouldnt be too bad of a deal, I don’t know what the answer is. We have a road trip coming up, the ultimate test of managing sugars, I think, cause seriously who doesn’t wanna have chips, and junk food on a road trip? In my mind I have a cooler with pickles, raw green beans, raw carrots, raw celery, green apples, venison sticks, CHEESE and a whole lotta watta….I wonder if reality will work out that way? there may or may not be some spicy pork rinds in there too somewhere……. 🙂
THAT’S IT! Sadly, when you wake up your pancreas “sleeps” for lack of a better word. If my blood sugar is normal waking up and I work out – it can jump to 300! I wouldn’t jump to any conclusions just yet – the A1C will tell everything – let me know!
