Yesterday I made one of my bosses favorite breakfasts – breakfast wontons. If you make the wonton cups ahead of time, these are super easy and quick for a weekday breakfast.
Bake the wonton cups in a 12 muffin tin, making sure to press down to make a flat bottom. Heat oven to 350. Bake for 5-7 minutes – don’t walk away because they can go from done to burnt in a few seconds. You can store them in a tupperware container for up to two weeks.
Breakfast Wontons
- makes two servings, 5 wontons each
- 194 calories, 5 fat, 18 carbs, .9 fiber and 16 protein
Ingredients:
- 10 cooked wonton cups
- 1/2 cup egg whites
- 1 egg
- splash of ff milk
- salt and pepper
- 1 cup chopped baby spinach
- 1 ounce 50% reduced fat Cabot cheese, shredded
Cook the egg, egg white, milk, salt, pepper and spinach until eggs are set, about 4 minutes. Remove from heat and stir in the Cabot cheese. Since I was building these at work, I just brought the wonton cups and filling in separate containers.
Once at work, I reheated the egg mixture and divided the mixture among the wonton cups and served it with sliced bananas and blueberries.
I of course topped mine with some buffalo Tabasco.
I decided to do the stair master at lunch yesterday. I did the “fat burn” and it stayed pretty consistent pace, which I think is harder than the interval that goes slow and then goes really fast. I ended up doing 2.5 miles and 120 flights in just over 40 minutes.
I was a sweaty mess! I posted my picture on Instagram (are you following me? biz319) and wrote that sweaty is the new sexy #soImustbesexy!
Over the weekend I made a batch of my cauliflower mac n cheese. I hadn’t made it in ages. A while ago I entered a Cabot cheese contest that were looking for bloggers to run a relay race in Maine at the end of August. I threw my ring into the hat, but turns out I don’t have much of a social media presence – I don’t have a Facebook page for the blog and I don’t tweet, but they were nice to send me some cheese!
I used that cheese for the breakfast wontons and also the cauliflower mac n cheese.
While the end result may not look too pretty, this was delicious and my boss loved it. I had a cup of the mac n cheese mixed with 3 ounces of cooked turkey sausage, with mixed fruit on the side.
I talked to Tony in the afternoon and he asked what was for dinner. I said I was cooking up marinated skirt steak and I was going to be making a broccoli slaw poppy seed dressing side dish. I am pretty sure he went ape shit over more poppy seeds!
I was correct because not too long after that conversation, he sent me an email that said “you knew this existed and you are making me a poppy seed broccoli salad?!!!”
Yep, he’s referring to Suzie’s bacon cheddar ranch pull apart bread. (The same blogger I got the lasagna soup recipe from that I’ve now made 34 times!) He may have suggested I make this for Father’s Day!
Fate was on his side though. My broccoli slaw was in the downstairs fridge and it was frozen. Fudge. So we ended up having a skirt steak taco like salad. The dressing was 2 tablespoons of Bolthouse farms dressing mixed with 1 tablespoon of my salsa. While this wasn’t anything like I was going to make for dinner, it actually turned out pretty good.
About an hour or so later, it was Day 9 of Insanity! I am so proud of myself for having made it this far. I think the difference is that I didn’t put so much pressure on myself, I just told myself that it isn’t an option NOT to do it. And even after making dinner, cleaning up, doing Insanity, Tony and I still manage to watch about two hours of t.v. off the DVR.
I am proud to say that even 9 days in my stamina is better. My goal yesterday was to do all the mountain climbers, and I took inspiration from my step-daughter in law who sent me a text message the other day that said “dig deep!” And guess what? I did all the mountain climbers!
I love that the words are backwards, I wasn’t thinking when I took this picture!

- 1481 calories, 78 fat, 118 carbs, 13 fiber and 104 protein
- 32% calories from carbs, 48% from fat and 20% protein

Alright, I have to scoot – I made another batch of the lemon poppy seed granola this morning, this time adding the juice of one lemon to the wet mixture. I’ll let you know how it turns out. I also have a broccoli/potato/cheddar soup going that needs to be blended and packed up too.

I’m proud that as of Friday I can officially call myself a Registered Dietitian as I finished my internship and am officially registered with the College of Dietitians of BC. Woot! The risk I took quitting my job 4 years ago, moving home, and going back to school has officially paid off. Now I just need a job. HA!

I’m proud of you too Biz, as said before: you are so rocking Insanity! You even make me think if I should do the full program 🙂 but since half marathon training is priority now it’s not an option. Maybe during the winter months. I’m proud that my runs go better lately after about 1.5 years of struggling.
I think that’s a great idea Fran, although I do have to say, I think Insanity has given me more strength to run faster. 😀 I PR’d on my 5k at lunch yesterday!

I actually really like that salad dressing, the only problem is that its rarely on sale and I have a hard time spending $4.50 on salad dressing – even Tony liked it mixed with salsa – shocker!
