Since reading my new work out book that there are good times and bad times to have starchy foods, I decided to use some leftover mashed potatoes to make some zucchini breakfast pancakes. Mind you, these are not the crispy versions you probably are used to seeing with the crunchy edges. These are more like mashed potato pancakes with a zucchini flavor – fluffy, light and utterly delicious. I just can’t believe I didn’t add any cheese to these!
Zucchini Mashed Potatoes (1 serving, makes 3 generous sized pancakes) 183 calories, 4 fat, 27 carbs, 3 fiber and 10 protein.
- 1 medium zucchini, shredded, squeezed dry
- ¼ cup prepared mashed potatoes
- ¼ cup liquid egg white
- 1 tablespoons of flour
- Pinch of crushed red pepper
- Salt and pepper to taste
Mix everything together and heat a non-stick skillet with Pam. Cook about 3-4 minutes per side, or until golden brown.
I actually made these before work, and assembled them when I got here – added 1.5 ounces of leftover garlic steak, ½ cup scrambled egg whites and topped it off with ¼ of diced avocado.
Lordy, this was so good – I did add some Tabasco though. 😀 I was completely full and totally fueled for my workout at lunch. Breakfast comes in at 408 caloires, 16 fat, 32 carbs, 6 fiber and 33 protein.
I had every intention of swimming yesterday, but saw that they had swim lessons going on when I got to the gym. Um, turns out they have a pool schedule so now I can time it right. So in my attempt to get in some more miles, I decided to do an interval run on the treadmill. I warmed up for 5 minutes, then jogged at 4.3 for 2 minutes, walked for 1 minute at 3.5, then sprinted for 1 minute, then walked another minute then started all over.
Each interval I went faster, until my last minute sprint at 8 mph – which is the equivalent of a 7:30 mile pace! Granted, I could only hold it for a minute, but it felt good. Just think how much longer I could run at that pace 30 pounds lighter!
Lunch was more chili! This time with some chopped avocado on top. Lunch comes in at 486 caloires, 20 fat, 57 carbs, 13 fiber and 25 protein.
I haven’t done a true grocery shop in a couple weeks. I was wondering what I could come up with to make for dinner and I was stumped. I called Tony and asked him what he was in the mood for. He really didn’t know either, but when he said “how about picking up a pizza on the way home?” SOLD!
We normally get a meat lovers pizza, but I decided to go a different route with mine. I actually never thought about asking for less cheese and more sauce before I saw Roz getting cheeseless pizza. But you know I loves my cheese so I ordered a sautéed spinach, banana pepper, green pepper thin crust pizza with extra sauce and less cheese.
I wish I would have taken a picture of Tony’s pizza next to mine, because there was dramatically less cheese on mine. I ended up having 4 squares, and it was perfect. I actually loved the extra amount of sauce. Hannah prefers next to no sauce at all! My guestimate is that my pizza came in at 465 calories, 12 fat, 66 carbs, 6 fiber and 19 protein.

I SIGNED UP FOR A 5K!
I get emails from Living Social – most of the time I can never take advantage of any of the offers because they are never remotely close to where we live. This race is really close to my office, and its September 8th. It’s my first road race since 2008!
My goal? To beat my last time . . .
I’ve been nervous to sign up for an outdoor race, but its time to get out of my comfort zone. I am actually looking forward to it, and hope it isn’t still in the 90’s by September!
Stats for August 2:
- 1449 calories, 48 fat, 169 carbs, 26 fiber and 85 protein
- 47% from carbs, 30 from fat, 23 from protein
- 5k at lunch
- 5.1 miles down, 94.9 miles to hit 100 miles in August

That is great you signed up for a 5k. I really need to get my butt going again on the race end. I have done a few smaller races, but really should sign up for a half again.
Woohoo on the 5K!!! And be like me – just PLAN for it to be hot on race day…that way if it’s actually cooler, you’ll get a pleasant surprise. But that early in September is bound to be warm. No worries, though – you can handle it because you’re the Bizzanator!!!

I’ve never ever had mashed potato pancakes. My mom says my grandma used to always make potato pancakes when she was a kid, and she hated them, and she’s been turned off ever since! Maybe these will change her mind!

I just let out a shriek when I saw your 5K announcement. My son didn’t really get the significance of my excitement when I told him. He said, “oh great mom another race. Am I running it too?!” Yeahhhh Biz, maybe someday we’ll run a race together! That is definitely motivation to keep moving this month.
I am addicted to banana peppers. I just had an egg white omelet with banana peppers, spinach and mushrooms. I also put them on pizza.

I think I need another vacation so I don’t have to think about meal planning. The past couple of weeks I’ve stood in front of the freezer looking at the meats in there trying to decide what to make. Mr. Helen is no help he always says, “Grill something.” OY. That doesn’t help at all with side dishes or actual meals. Sigh.
Hopefully signing up for the 5K will also keep you motivated on your eating plan. Even if you are 5 lbs. lighter by September 8th you’ll fun a little bit faster!
