I have to make an apology.  Apparently when I’ve been updating my categories to put my recipes on my side bar, every time I hit update, it sends subscribers an email as if the post is new.  Sadly some of you have been getting 30 posts in your readers for posts that are a couple years old!  Not sure how to fix it, so until I figure it out, I won’t be updating my categories any more.  Sorry about that!

One of my co-workers is doing Cross-Fit.  If you don’t know what that is, just check out this video.  My blog friend Robin Sue also does Cross-fit, she is so toned!

When I did my strength training on Wednesday night, one of the exercises I had to do was an incline bench press.  I typically only use the machines, because it feels safer to me actually.  So I walk over to this (sorry there is a weird dude in the picture and its blurry!)

I had to do two sets – and I lifted the bar to see how heavy it was without any weights.  Um, it was heavy!  I couldn’t even add any additional weights.  I do my two sets of 15 and the last few reps I didn’t think I could get through, but I did. 😀  Then yesterday at work I sent this picture to my cross-fit co-worker and she said “those bars are 45 pounds without weights!”  No wonder it was so hard – here I thought I was being a wuss not being able to add weights to the bar!  That also explains why I was sore yesterday too – I had to do lateral raises and I could only do 10 pounds and it was a struggle.  But, you gotta start somewhere, right?

I woke up late yesterday so I have another installment of “throw shit in a bag.”  I still had some taco meat from my taco salad, so I made a taco egg white spinach dish in the microwave.  1/4 cup taco meat, 1/2 cup egg beaters, baby spinach (4 pts) – put in a bowl and nuked for 2 minutes.  I put some salsa on top, and had another slice of Tony’s corn bread (6 points).  10 points total and really filling!

In an attempt not to have to eat before working out yesterday, I skipped my breakfast insulin all together.  When I left for my run, it was 241 – nice!  I ended up doing a 1 minute walk, 3 minute jog, then 1 minute sprint for 3 miles – finished in 35:10!  I tried to go faster with each sprint.  It was fricken cold though – about 27 degrees?  When I got back to my desk my blood sugar was a perfect 107. 😀

Does your grocery store sell buffalo turkey in the deli?

If so, run and get some – its delicious!   My plate: 1/2 a pita (2), 2 ounces of buffalo turkey (2), 1 slice of baby swiss (1) baby spinach, cucumbers and apples (0) and 1/2 an ounce of pretzels (1).  Love it when you get plates like this for only 6 points!

I had burgers on the menu.  When I got home and started to put stuff together, I could not find the ground beef – I remember buying some too!  And the frozen ground beef I had in the freezer Tony used in his gravy the night before last.  So it was quickly on to Plan B.  I had 3 chicken tenders in the freezer, so I defrosted those in the microwave.  I Pam fried the chicken, then about a minute before they were done, I put 1 slice of ham and 1 slice of swiss cheese on top for a mock chicken cordon blue.  On top a light bun with dijon mustard and pickles and a side of fries, dinner comes in at 11 points.

I am pretty sure pickles count as a veggie, right? 😀

Happy Friday!  This week has been dragging for me – hope the work day goes by fast for me.  Any plans for the weekend?  I think tomorrow when I get back from Weight Watchers I’ll have an American Idol marathon – I have Tuesday, Wednesday and Thursday’s shows on the DVR.  Are you watching it this year?
