First off, if you have a blogger blog, I can’t comment at all. It either gives me an error message, or if I type a comment, hit enter, it just disappears. So know I am reading even if I can’t comment. Am I the only one who’s having this trouble??
There are a couple dishes that I suck at, yet I keep trying over and over to make. The first one is scalloped potatoes. I cannot tell you how many times, even after baking for SEVERAL hours, I brought the dish to the table and the potatoes are still crunchy. š
Next up? Omelets. It’s hit or miss. Sometimes they are gorgeous, other times they just become a scramble. You can see which version I ended up with: Um, I forgot my camera on my desk, so I hope Marisa doesn’t mind me stealing her picture – it looked almost identical!
1/2 cup egg whites, baby spinach, roasted red pepper, 5 oz. of canned potatoes, 1 ounce of deli ham, 1/2 ounce cheddar cheese with a Thomas heart healthy english muffin and champagne grapes. Breakfast comes in at 10 points.
I love champagne grapes, but usually they are too expensive for our budget, so I was thrilled that they had them on sale for 2 for $3. I only bought one, but now wish I would have bought the other.
I did not work out at lunch yesterday. Here’s the story. I love milk. I mean, love it. I once worked at a law firm that had free milk, juice, bagels, peanut butter, etc. in all of their lunch rooms. I literally would have three 8 ounce glasses of milk a day. Until all of a sudden, I couldn’t handle dairy much any more.
While you know I have obviously reintroduced CHEESE with no problem, milk just didn’t work for me anymore. But Sunday I made some banana muffins. The milk container was right there – and I poured myself a glass, and then half of another glass. I went all through the night no problems, until this morning. Let’s just say I didn’t think it was a good idea to be away from the bathroom too long!
I felt fine by the afternoon, but now I need to kick milk back to the curb. My mom always hated milk growing up and still does – she will do heavy cream in her coffee though. š
So lunch? It was delicious. I was inspired by this dish, mainly to use up the baby spinach I had on hand.
Italian Sausage Soup with Cheese Tortellini (makes 8, 1.5 cup servings: 290 calories, 14 fat, 27 carbs, 3.3 fiber and 14 protein = 6 PointsPlus)
- 8 ounces Italian sausage, removed from casing
- 1 tsp. garlic
- 2 cups frozen packaged cheese tortellini
- 6 cups fresh baby spinach
- 4 cups chicken broth
- 4 cups tomato juice
- 2 cups shredded carrots
- 1 tsp. dried oregano
- 2 tablespoons fresh basil (to be stirred in at the end before serving)
Cook cheese tortellini according to package directions. For whatever reason, our tortellini calls for 10 minutes – it takes more like 25 minutes. Drain and set aside.
In a large stock pot, brown the Italian sausage – now I don’t add any additional oil because I think the sausage is enough – just cook until brown and remove to another dish. Add garlic, cook for 1 minute. Add shredded carrots and cook for 3-4 minutes.
Add remaining ingredients and cooked sausage except fresh basil, and simmer for 30 minutes. The last 5 minutes add in the cooked tortellini, heat until warmed. Remove from heat and stir in fresh basil. Serve with shaved Parmesan cheese if desired.
You’ll notice I didn’t add any salt and pepper to this dish because the sausage had so much flavor, but add it if yours needs it.
You know I menu plan and shop from my sale flyer every week. Somehow between the grocery store and home I lost my menu. Now I can pretty much figure out what it was based on what I bought – but I had links to recipes I wanted to try, so now I am just flying by the seat of my pants. š
I knew I had ground beef, chicken wings, and pork chops. Since we had pork kabobs last night, I knew that was out. So I emailed Tony:
Options for dinner:
- Fried chicken wings
- Meatloaf
- Taco salad
- Bacon blue cheese burgers
- Pork chop Milanese with lemon sauce
- Or none of the above?
The answer?
Burger dammit. xoxoxoxo
This burger was on Diners Drive-Ins and Dives from place called Dad’s Kitchen in Sacramento. You cut up raw bacon, put that on the bottom of your burger press, add blue cheese, then your seasoned beef. Smoosh together, then cook, bacon side down until the bacon is nice and crispy.
Then you cook the bacon, bacon side down and put a cast iron skillet on top – I just put a piece of wax paper over the burger. The bacon got nice and crispy.
My burger? 4 ounces of beef, spinach, roasted red pepper, 1/8 cup egg white, 1/8 cup whole wheat panko bread crumbs, salt and pepper. The patty comes in at 8 Points. With the fries, dinner is 12 points.
And on a side note, I didn’t win the sandwich contest I entered. This is the winning sandwich – do you think its a $25,000 sandwich?? I don’t. š Since I didn’t win I have to find the recipe I wrote down – it was a chicken pesto meatball sub with a marinara and olive sauce on asiago cheese garlic bread. š Have a great day!
Second time I have tried this dish ā absolutely delicious! Thanks ever so much for this!
Hmph. You totally should have won that contest.
I remember seeing that episode of DDD and thinking that the burger sounded good. Even “dammit” good!
Wow, all the dishes look fabulous… especially that soup.. Yum!!
I should do a post on my mom’s scalloped potatoes, because they turn out every time. Mmm, scalloped potatoes…just need an excuse to make them now!
When you do, let me know, okay?
I’ve never been able to comment on Blogger blogs that have the comment box directly on the page. It eats my comment EVERY TIME. But I can comment in the one where the comment box pops out- like what’s on my blog.
Both those burgers are so awesome! Such cool ideas! I love the spinach in yours and that’s a cool idea to do the bacon side down and let it get crispy.
Yeah, I agree- not a $25k sandwich. All she did was make a muffaletta on a croissant. Whoopdie do. Maybe one of the judges was from New Orleans. So sorry you didn’t win- your cooking is awesome! You definitely deserved it!!
Thanks Christina!!
I have that problem with blogger blogs too. It sucks! I wonder why.
I’ve kicked milk to the curb too. Coconut milk creamer works for coffee and almond milk for cereal on the rare occasion that I want it. Cheese though? Not giving it up!
I think your sandwich looks good! Sorry you didn’t win. š
The Blogger comment thing is irritating! Does that ever happen on WordPress? I really want WordPress right now. The other thing I really want right now is your burger.
Stupid comment blocker!! GRRR….I’ve had quite a few comments vanish into the big abyss of comments….shame, ’cause a couple of them were pretty darn funny, if I don’t say so myself!!! š Bummer about the sandwich contest. I’m sure the winner bribed, or slept with a judge, because your sandwiches look amazing. Wonder if that last sentence will get through!! Have a great Wednesday Vat!!
Oh I love champagne grapes too. But here’s a tip: get them at Asian markets. They are so much cheaper esp when it’s seasonal and it goes on sale.
I hate blogger blogs. I wish everyone will switch over to wordpress. The commenting platform is so much easier.
Blogger has been making me yell innappropriate things the past few days. SO annoying. Ryan and I have been on a tortellini kick lately. The little pillows of cheese are so tasty!
That winning sandwich sounds disgusting to me. Those judges were obviously on crack. š
We almost always know what they’re going to want for dinner, don’t we? š The blue cheese burger looks SOOOOO good, though!!
P.S. We lose lactase over time, so it’s common to develop lactose intolerance as time goes on. The more “liquid” a dairy product, the more lactose it has…so cheese is usually well tolerated. You may have already known that about lactase, but I think it’s so interesting š
I love love love blue cheese burgers. That looks pretty amazing.
Sorry you didn’t win the sandwich contest. You really should have! Your food is always amazing Biz!
My omelets are hit and miss too. You never know what mood the omelet gods are in! š
I’m so in love with that bacon burger!!! I’ve been craving burgers lately and this would be perfect!
Ick! That 25K burger looks prechewed! Did they just do a drawing??? š
You have me scrolling back up again and again getting all the detail on that burger. I made tuna cakes the other day. Similar to crab, but crab isn’t on the menu yet.
Hey, I thought that breakfast looked familiar! LOL!
I am having trouble commenting on blogs, also! Even the WordPress ones! Blogger comments vanish and WordPress keeps asking for a log-in prompt! It’s getting on my NERVES!
Yum to that soup! I love tortellini and spinach together!
I didn’t think you would mind Marisa! š
I love tortellini in soup! I can’t handle milk either š Almond milk doesn’t upset my stomach.. but cows milk is definitely a killer. I tried to reintroduce it into my diet recently.. no such luck! stomach problems off the wazoo
That 25,000 sandwich sounds GROSS, just sayin’. I loveeeee tortellini!
My thoughts are NO, it does not look like a $25,000 sandwich. But I bet yours does!
I just had a great idea! Why don’t I just move close and you can cook for me too! LOL As always, your recipes look fantastic!
Thanks Pam!
Jeesch, that sandwich does NOT look like a winner. It doesn’t even sound good to me. Yours looks fab though!! š
I hate milk, my mom used to cod liver oil in it………..so bad. When I make scalloped potatoes I par boil the potatoes first because mine were always not done either. š
Your burger looks delicious, my hubby would love it!
OMG, milk with cd liver oil?? Ew! Next time I make scalloped potatoes, I’ll par boil them – maybe that’s the trick I’ve been missing!
I always have to “submit comment” on blogger blogs like 5 times. It’s annoying as hell but I am used to it now, I guess. I can’t do much dairy, either. Heavy cream in my coffee and cheese is about it!
I am not having a problem commenting in general, but some blogs give me fits.
Did you press the other side of the burger as well, or just the first side?
Just the bacon side, I didn’t want to squeeze out the juices and it was super juicy!
I haven’t had any commenting issues yet. Hope you get it figured out!! Oh my about the milk! I (as you probably saw) just found out that I am most likely lactose intolerant, so I feel for you! The soup looks delicious. I can’t wait to make another batch of soup! And such fun burgers. I want fries now! I think your sandwich is a winner š
Yeah, commenting on blogger has been sucky lately. š
My omelettes always look like scrambles, too! I’ve finally given up and just scramble everything together. Lol.
The winning sandwich looks pretty gross to me! Yours however looks delicious…I want to know who the judges were!
That soup looks really yummy, I’ve been eating veggie soup basically every night and want to try something different for next week, so maybe I’ll try this out š
Your burger scared me. :whimper:
I like the ingredients just not like that. heehee
I live in Sacramento, and have really been wanting to go have that burger at Dad’s Kitchen, but never remember when we go out to eat! I will have to go try it and let you know if it is as good as Guy says.
I just put in my Tuesday Ten that I’m having all sorts of issues with both WordPress and Blogger. I’m having the same issue you are with Blogger – as soon as I press post it disappears. What makes it so frustrating is that it’s not all blogs. It seems to be hit or miss from day to day!
My Italian Sausage soup uses orzo pasta but I have to admit the tortellini looks really good too!
You might like the soup I am having for lunch today and will post tomorrow – a lemon orzo soup with spinach – I am bound and determined to finish that container of fresh spinach this week. š
Although I like the fact that the winning sandwich is vegetarian, yours DOES look much better. And, strawberries with olives? Pass!
The soup looks delicious!
Hmmm…wonder if blogger is having issues…sorry.
Love the looks of that soup. I have made similar and LOVE the pasta in it! Best part! Here is the link to my soup if you are interested: http://mykitchenadventures1.blogspot.com/2011/05/chicken-sausage-and-tortellini-soup.html
As for the winning sandwich…seriously, strawberries with all that med type pickled stuff?…um…yuck. and the picture looks yuck too…maybe political on there choice. Your meatball sub looks and sounds way better.
Love that you added chicken sausage to yours – and I can’t comment on your blog. š
Yea, the commenting thing is happening everywhere. I went through a period where I couldn’t comment on the blogger blogs, then as soon as that got figured out, I couldn’t comment on the wordpress blogs. I still can’t unless approved. I THINK that the spam filter is not liking my “suggestive” name with WordPress.
When I sign in to blogger blogs, I have to UNCHECK the button “stay signed in” and then it will let me comment. It’s annoying.
