When Tony and I went out to eat the other night I got sweet potato fries. I didn’t eat them all and was going to just leave them on the plate until Tony said “can’t you make a sweet potato hash with those?”
Genius. This breakfast was so good! Slightly sweet, savory . . . yum!
Sweet Potato Hash (serves 1 for 8 WW points with egg)
- 1 tsp. olive oil
- 2.5 ounces leftover sweet potato fries (or I guess you could use the same amount of diced sweet potato)
- 1 ounce chopped corned beef
- 1/2 ounce cheddar cheese
- pinch of black pepper
- 1 cup shredded zucchini (squeezed dry)
- 1 egg
Heat oil over medium heat. Chop up leftover fries into bite size pieces. Cook for a few minutes, then add zucchini, corned beef and cook a few more minutes. Add cheese and cook another minute. Plate and put a fried egg on top.
The zucchini really bulked up this breakfast and it was so filling. š
It was a beautiful day yesterday, and I felt like walking. I just walked behind my office building and walked on a road that’s a culdesac, so there is hardly any traffic. I told Tony we should bit on this house, but we won’t bid over $150,000 – ha!
Lunch was another salad with a cup of chicken brunswick stew – not sure who’s bowl this is, but I borrowed it – I love it! Lunch comes in at 9 points.
Work was non-stop yesterday, hardly got a break, but at least the day went by fast. I didn’t have anything really planned for dinner, but pasta sounded good. I made a quick sauce with 1 28 ounce can of diced tomatoes, 1/2 cup white wine, 1 teaspoon olive oil, oregano and 8 ounces of cooked ground beef. I need to figure out how to take pictures at night now that’s its dark so soon!
So here is my pasta under flourescent light – this bowl is 12 points.

-1.2! I’ll take it. I plan on making changes this week – exercise over the weekend, which I hardly ever do, and put the wine away – I want to be in the 150’s again next week dammit! š

I made sweet potato tater tots last night and saved the leftovers for a hashy breakfast! I love a big delicious breakfast! Congrats on the weigh in! I’m going to try and get my sweat on this weekend too. My ass is SO flippin’ sore, so it may be really pitiful!

Josh’s mom had some out last night and I nagged a few. They served them with apple butter- it was a fantastic combo! And pasta is always awesome after a long day. This weekend? Football!
