I can’t believe we are in the last week of 101 days of summer challenge! While I am not complete happy with how I handled the challenge, I have no one to blame but myself. I only have 20 pounds to go to get to my goal of 140 – and I am determined to get there by Christmas. I may start a challenge from Labor Day to New Years – anyone else interested?
I have Jacky to thank for the idea of my lunch yesterday. You guys knew I couldn’t go a whole week without pizza right?! Holy cow, this one hits all the marks – the crust was crispy, the sweetness of the fig against the tang of the goat cheese and the mortadella – I think the balsamic and olive oil greens on top brought this pizza all together.
I made a super easy pizza dough – 1 cup flour, 1/2 cup warm water, 1 tsp. yeast and 1 tsp. salt – I used half of the dough for the pizza below. This whole dough would be 12 points.
Fig, Goat Cheese and Mortadella Pizza
- 1/2 of simple pizza dough
- 4 tablespoons fig (I used the leftover balsamic figs Tony made, but you can buy canned figs)
- 1 ounce goat cheese
- 1 ounce mortadella, sliced
- 1/2 cup mixed greens
- 1 teaspoon balsamic vinegar
- 1/2 teaspoon good olive oil
Heat oven to 425. Roll out dough and pre-bake the dough for 4-5 minutes, or until you can shake it off the pan. Spread figs on the bottom. Dot with the goat cheese and sprinkle the mortadella over the pizza. Bake for 8-10 minutes, until the crust starts to brown.
Chop the greens and toss with the olive oil and balsamic. Toss over the hot pizza and try not to burn your mouth .
The best part is that this whole pizza was only 13 points! And since I only had a banana and a 1 point cheese stick for breakfast, I ate the whole thing. 😀
My pizza fix is satisfied, but I can’t wait to make this one again. Thanks for the idea Jacky!
I did most of the prep work yesterday for my SIL’s birthday Mexican fiesta today. All I have left to make is the cilantro rice and cook the marinated meats. But I still have lunches to make:
- torellini and spinach soup
- thai pork with broccoli and rice
- smoky pinto beans and spinach tacos
- zucchini lasagna
- black bean soup and spinach quesadillas

I was happy with the way this challenge was going – I was keeping up with my nightly yoga etc until August 5th, when my Dad passed away unexpectedly. He had been ill since April but it was still a shock. Things are starting to calm down and get back to normal (or at least, a new normal) so I could really use the routine of a new challenge.
Damn, I wish I could think of somihteng smart like that!
Hmmm…I wonder if I could do something like that with my fresh figs I just picked. Looks delicious.

So we didn’t reach our goals YET but it’s just a matter of time. I know we will get there – slow and steady!
I doubt I will reach 101 pounds lost during by the end of the week since it would be impossible for me to lose 8 pounds by Friday but I’ll get there and so will you. You know we will look back on the summer and remember the celebrations, BBQs and gatherings with family and friends, not the fact that we didn’t see a certain number on the scale. Hi Biz, Sorry to hear you weren’t happy with how the challenge turned out, but I am sure you will continue to improve in the future!! 🙂 I was pretty happy with the summer overall – I *mostly* stuck to my exercise goals (of course with a few vacations from them), and I think I did a good job of cooking more at home and less eating at restaurants (at least when I wasn’t on vacation…that makes it hard to judge overall!).

I’m reasonably happy with the way my challenge went. I don’t know about fat loss, because I decided to start exeperimenting with intuitive eating a few weeks ago: i’ve eaten ice cream, chocolate and everything I usually haven’t allowed myself to eat. I haven’t gone crazy eating what I want, but might have put on some weight. (There’s this roll in my lower belly that wasn’t there two months ago…)
My fitness level has definitely improved.
My motto: The journey goes on.

I joined Curves. Worked out everyday for 3 days. Then Irene came, so they’ve been closed. But when they reopen (Monday? Tuesday?) I’ll start again. I used them a few years ago and trimmed inches off fast and kept them off. Hoping to have the same results this time!
I have received a siegnd for’ letter today from a company called Avon Client Services Limited run by from Trinity Place, Midland Drive, Sutton Coldfield B72 1TX. Tel: 07512048859, offering a320,195 for my RCI Points. Well over the top!! The letter came from the Administration Manager, James Ashworth. Anybody else heard from them? Have Googled them, no joy as a completions company. Have been scammed once and managed to get all my money back from the bank. Not likely to do this again without a thorough check on the company and never going to give out a fee first!
Well, I can’t say that I met my goal of exercising 30 minutes/5 days a week every single week but I did try and that is something. However, I did meet my goal of being down “something” each time I weighed. YES! I didn’t have a wonderfuly healthy summer but if I didn’t have this challenge in the back of my mind I don’t think I would be down 8 lbs either. So if you have another challenge I am completely in, I would love to have a healthier fall and be looking so much better by New Year’s Eve.
I’m making this dough pronto! Maybe tonight?

Thanks for doing this challenge! It really got me exercising when I would rather be lounging and sipping lemonade. 🙂 This week was a little tough as I had to travel for work unexpectedly but I kept moving and did my best. I watched what I ate a little better and the scale moved in the right direction. Still have a few pounds to lose to get back to my original weight but I’m ok with that. I just need to stay focused and have some fun in the kitchen this fall. Would love if you did another challenge!

Well, I did my 10 mile run this week, which was my last long run before the race. Now I taper down until Thursday and then I just rest until the big day. I feel really good about how far I have come with the running. However, the same day I ran 10 miles I found out that the money I had been counting on coming in to pay for my trip to the race is no longer coming. So at this point it is questionable whether or not I will be able to make the trip down to Anaheim for the run. My hotel is paid for, but nothing else, and we have been making just enough to get by, with no savings to pull from. I am extremely disheartened, and just trying to come up with something to make it work. If I’d had a few weeks I might have more options, but with only a week to go, I just don’t see how to get the money together. So if anyone has any genius ideas for me, I would gladly take them!
