I think yesterday was the fourth Friday grill at my office. At first I thought I was only going to have 7 people, but we ended up with 10 – but you know how I cook, there is always plenty of food!
I threw out the question: grilled shredded pork bbq or grilled shredded bbq chicken. I was surprised that the overwhelming choice was chicken!
I decided to marinate the chicken the night before. This marinade is enough for 1.5 pounds of chicken (I grilled 3 pounds).
- 3 tablespoons olive oil
- 2 tablespoons brown sugar
- 1 teaspoon paprikia
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon sea salt
- 1 teaspoon ground pepper
- 1.5 pounds of boneless, skinless chicken breast
Mix the wet rub together and pour over chicken in a large ziploc bag. Just massage the chicken to make sure its evenly coated. Refrigerate at least an hour, but preferably overnight.
Now I REALLY love how my bbq sauce turned out. Some people can’t take the heat, but this had just enough punch of heat, but not too overpowering. It was a huge hit! This recipe again is for 1.5 pounds of chicken – and I made it 6 servings for 3 PointsPlus each.
- 2 teaspoons olive oil
- 2 tablespoons brown sugar
- 1 teaspoon chili powder
- 1 teaspoon dry mustard
- 1/2 teaspoon crushed red pepper (add more for some more zing)
- 2 tablespoons molasses
- 1 tablespoon honey
- 1 cup ketchup
- 2 tablespoons apple cider vinegar
- pinch of salt and pepper
This is so easy – just dump all the ingredients into a medium saucepan and simmer over medium low heat for 20 minutes. That’s it. Once I grilled the chicken I tossed the shredded chicken in the bbq sauce. Holy yum! š
Side note: I need a new bra!
I made the mint glazed fruit salad, brought prepared coleslaw and chips and grilled corn on the cob. Everything turned out so good.
The chicken was definitely the star of the show. It only took about 15 minutes to grill the chicken, then I let if rest for 5 minutes before shredding and adding it in with the bbq sauce – and the best part is that I get to bring home the leftovers š
Tony and I had to pick up Hannah’s fixed car on the way home from work, so we went with our new favorite pizzas – a pizza place by us sells 8″ individual pizza with 3 toppings for only $5. We love it because its portion controlled – typically I would order a 16 inch for us to split, and invariably we eat too much.
I had Italian beef, sausage and yellow peppers – my guess is about 15 points for the whole thing, and I ate 3/4 of it.
So today was my WI. I had no expectations, I didn’t exercise at all over the 4th weekend and only got in 2:55 minutes of exercise for the week. So it’s no surprise that I stayed the exact same:
I’ll take it! So my new goals for the week – exercise on the weekends – and by 9:40 this morning I had already done my Saturday workout.
I got a Living Social coupon for six 70 minute yoga sessions for $20. I went today, told the lady that I had really only done yoga on t.v. and she could not have been nicer.
I started out with some fuel:
There were about 8 other ladies there, all shapes and sizes. But I could tell I was the “newbie” because the instructor kept on saying “Biz, flex your toes!” “Biz, pull your houlders back.” The first time I did downward dog I was like “I know what that is!”
But then the instructor came over and pushed my shoulders back, and pushed my butt down and wow, could I feel the difference. I’d been doing it wrong all this time!
The 70 minute class flew by, my favorite part was at the end, the lights were turned off, a fan was blowing and there was soft music playing – you could hear a pin drop! Definitely going back next week and curious to see how sore I’ll be tomorrow.
Not sure what we have going on today – but its gorgeous! Hope everyone enjoys their Saturday! š
biz, whats the scoop with the mint-glazed fruit salad? is there a recipe for such tasty goodness?
Hurray for not gaining over a holiday! Love the picture of you in grilling action–you’re a lot smaller than you used to be! š
absolutely take it! that’s great!
LOL “i need a new bra”
The chicken looks awesome and i’m loving this new look to your blog!
Pretty new blog look! Very clean and easy to read – I like it! š
That is the perfect shot of you, (wo)manning the grill. You look like you were in your element. Which, you were!
Thanks Shelley – I think I like it š
I LOVE that you made your own sauce -this sounds great!
Great new look!
What an easy BBQ sauce – have to try it.
Thanks Bonnie! Hope you guys are having a great weekend – Jody will be here this afternoon to pick up her food for the week – she LOVED my zucchini lasagna so I am going to make it again this week.
love the food! yummy!
I really need to make BBQ sauce! Sounds like your yoga class was awesome…I’ve never gotten into it.
First – LOVE the new look, I’m also working on a new look for my blog, so tired of it! Second, how did you know I’ve been thinking on making my own barbecue sauce? I will have to try yours:)
Thanks for stopping by my blog! I can’t wait until I can get into yoga myself. Your food looks wonderful and healthy. Have a great weekend!
Again- I am SO jealous of your coworkers! What a spread! mmm to the fruit š And hooray for trying out yoga! Its soooo good for your body. I keep reminding myself that I need to do it more. I plan to incorporate some hot yoga back into my life post baby. Have a great rest of the weekend!
I’m so glad you enjoyed your yoga class! I absolutely LOVE yoga and find that it’s been super helpful when doing it in between running. And yes the last part where you just lay there is the absolute best. š
Great photo of you š
I love savasana (the ending pose of a yoga practice) too – it’s so calming, sometimes I fall asleep for a second š
Love the sound of the rub you made for the chicken (&the bbq sauce!). Do you find that the oil in it makes it easier for the chicken to catch on fire? Whenever I make a marinade with oil, B tells me it’s hard to keep the food from catching..?
Nope, I don’t have flare ups when I use oil in the rub – only when I have really fatty meats like burgers or pork – then I have to be careful! š
You look fantastic in that picture, Biz!
The first time I took a yoga class and they helped me get into downward dog, I was crying it hurt my calves so bad! Now it feels good but man, I’ll never forget how that felt!
Thanks Amanda! I know, as soon as she put me in the right spot I was like “holy shit!” I felt it all down the back of my legs and in a different part of my upper shoulders.
I also went to my first “real” yoga class this summer – I was really surprised how wrong I’d been doing certain things when the teacher came around to give me tips!! š
