Work was so busy yesterday, that I barely had time to eat breakfast, let alone take a good picture of it. While I don’t like plain Greek yogurt, I love it when I add 1/8 of a cup of sugar free pancake syrup – sounds gross, but its good! On the side was a 1.5 ounce rye bread breakfast sammie – breakfast comes in at 9 Points Plus. I mean, its a really crappy picture!
Work was so busy, I didn’t get a bike ride in like I planned, but at least the day went by fast. I ate my lunch at my desk while working – a repeat from last week thanks to my deep freeze, although I think I may have reheated this soup a couple times before freezing it, and the chicken was kind of tough. Lunch comes in at 10 points plus.
I love Tastespotting, even though 85% percent of the pictures I submit come back rejected: “poor lighting,” “composition,” “not sharp,”and actually my favorite rejection: “not a compelling image subject.” But its a great way to get ideas! š I had Tony pull out some flank steak from the freezer. I typed in “flank steak” and found a picture for a grilled flank steak salad with red bell pepper honey vinaigrette. I knew I had all the ingredients at home already, so I was sold. The only differences was that I use jarred roasted red peppers, 1/4 cup of the jarred juice and reduced the olive oil to 1/8 of a cup – so its really a roasted red pepper sauce.
Roasted Red Pepper Honey Sauce
- makes 8, 1/4 cup servings for 2 PointsPlus
Ingredients
- One 12 oz. jar of roasted red peppers, drained (but reserve 1/4 cup of liquid)
- 1/8 cup apple cider vinegar (original recipe called for red wine vinegar, but I like apple cider vinegar better)
- 2 tablespoons honey
- 1/4 teaspoon Mexican oregano
- pinch of salt
- 1/8 cup extra virgin olive oil
Throw everything but the olive oil in a food processor and puree until smooth.
I stole her idea and made a grilled flank steak salad – this was delicious! Baby spinach, 5 oz. of flank steak, 1/4 cup of vinaigrette, and roasted potatoes on the side. Holy cow, this sauce was delicious – you could taste the smokiness of the roasted red peppers, a touch of sweetness from the honey and it was really vinegary, which I love. Very umami sauce! It made a lot and Tony and Hannah won’t touch it with a 10-foot pole so I need to figure out what else to put it on. š
I am stealing both Shelley and Helen’s idea of posting outfits. Both of them have way more fashion sense than I will ever possess. It’s just not my thing, but I have to say, after my size 14 pants literally fell off me last week, it was fun to shop for smaller pants. š
Everyone who knows me well knows that I am a thrift store, Goodwill, garage sale whore. I prided myself on being able to cloth my daughter when I was a single parent for about $20 a season by being a bargain hunter. I literally can’t remember when I’ve actually bought any clothing (other than underwear and bathing suits) in a retail store.
Sometimes its a total miss, but the other day it was a total hit. I found two pairs of pants and 8 tops for $42. The first outfit – a size 12, zipper on the side, gray slacks and black flowered top – this outfit actually was only $2 because they were each on a $1 rack. The shoes are Ann Taylor slip ons, bought for $4 (brand new!) on a previous Goodwill shop. So all together, a $6 outfit. š
And flashback to the beginning of last years 101 Days of Summer Challenge. As you can see in the above picture, I think I will be stuck with the farmers tan for the rest of my life!
I can see a bit of difference just 15 pounds lost makes! Although I am torn about weighing in the week. I tracked nothing over Memorial Day, didn’t get in all the exercise I wanted. I am definitely going, but I know mentally if I have a gain, it might get me down, and if I skip a week, I’ll have that much better results next week. Should I still weigh in?
And I got a ton of emails about threaded eyebrows vs. waxing. I have super sensitive skin, and when I’ve had them waxed, its as if someone punched me above my eyebrows, there is swelling and redness that lasts for days.
Threading hurts like a son of a bitch, but its over in literally 3-5 minutes. And this is how my eyebrows looked 24 hours later, hardly any redness. Let’s all pretend we don’t see my grey hair, shall we?
I wonder if I could have gotten a closer picture? Ha! Alright, off to make some banana muffins to take to work – have a great Friday! Gotta love short work weeks. š

I have been thinking last year’s 101 days of summer challenge a lot too. It’s been a year and bodycapable is going to have it’s 1 yr blogaversary on Tuesday!
That is precisely why I don’t do weigh ins anymore! I don’t want to get depressed because of some random fluctuation in my weight that has nothing to do with real fat loss. I’m rather fond of my current method of monitoring my situation: checking with my goal pants and taking lots of photos with digital camera!

Weigh in tomorrow. The times when you don’t want to go weigh in are when you need to go the most because you are on a little slope here and not going to weigh in can grease the slope. Know what I mean?
Too many times we say, “I won’t go to weigh in, so I have an extra week to get back on track.” But what really happens is that on what would have been weigh in day we are still off track and then it is harder and harder to get back on.

My eyebrows are outta control! Supposedly, thick eyebrows are “in style” so I’m just going to tell myself that because I put off getting them done so long that it’s so much worse when I actually do. The flank steak looks awesome – yum!!! š

Great outfit. You look wonderful! I’m a big fan of eyebrow threading as well. I agree it is more painful that waxing but the redness doesn’t last long. I’m a huge foodgawker fan (although it’s not always good for the diet!), and I’ve never gotten them to accept any of my submissions. I haven’t given up, though, and I just got a DSLR, so hopefully someday. I’m glad to know I’m not the only one who get’s rejected by those sites.
Love the fashion show, and YES that 15 pounds makes a very noticeable difference! Kudos. As to the WI, definitely go. You can ask them not to tell you and not look at it if you’re afraid you’ll get discouraged, but NEXT time, after you’ve been good all week, you’ll love losing from this week’s high. If you don’t WI this week, you’ll work hard all week and seem to stay the same, just getting off the pounds you put on. I’ve done it both ways; believe me WI is better than skipping.
You look great – I really like that outfit! Incredible price, too – I’m so jealous, but I’m just not a good thrift store shopper (or else we don’t have good thrift stores here. No, it’s me.). The way to get rid of that burn line is to wear a pair of runner’s arm sleeves up to the line and go out and sit in the sun. It may hurt – not as bad as eyebrow threading – but you’ll get a burn to match the other one. **Disclaimer**I am only kidding about doing this – although I’ve actually tried something similar in the past. Not the greatest idea.
The roasted pepper honey sauce looks wonderful, love the color. You look terrific in the pictures.
I can relate to you about the waxing…. I also have very sensitive skin and the last time I did it, the top layer of skin ended up coming off with the wax. It was a very sexy look. I have been meticulous with the tweezers ever since because I don’t want to go through it again. I will definitely look into threading next time.
Yeah, I had my eyebrows threaded once, after hearing from a ton of people that it didn’t hurt at all. LIES. ALL LIES. I thought I was going to start sobbing in the chair with the lady bobbing her head back and forth as she ripped out my eyebrows. I haven’t gone back yet…
Weigh in! You’ve worked out and its always a week that you think you did great, you didn’t do as well as you wanted and a week when you thought you didn’t do well that you lose a few! I bet you did great!!
That red pepper sauce looks amazing, you could put it on chicken, maybe add it to a soup or something to use the rest of it up. Maybe even with scrambled eggs!
You can totally see your weight loss. I’d go and weigh in, it holds you accountable. I get my eyebrows threaded too. I recently found a place for 4.00. I was paying 10, so 4 is a steal. I can now go every 2 weeks, although the place is in Long Beach where my aunt lives and its 60 miles away. I just plan my threading around trips to visit my aunt.
Definitely WI! Face the music as I say – you might actually be surprised & see it wasn’t all that bad. I thought for sure I’d have a couple lb gain this week, but it was only 0.8, which I faced & moved onto planning for a loss this week.
Love eye brow threading! I was waxed once & it burned me -ripped the skin right off! I looked hideous – worse than if I left a unibrow! š So now it’s threading & only threading for me!
What an awesome find on the outfit! I’m a clearance rack shopper and will only pay retail if I absolutely love the item and I have a coupon. Otherwise, I know it will go on sale soon enough!

WEIGH IN! I skipped a meeting two Thursdays ago and because of that, I continued bad habits for the next week, leading to a nasty nasty gain at weigh in yesterday morning. You need the accountability and if you see a nasty number, it motivates you to kick its ass for your next weigh in.

I love flank steak too, but I don’t get to have it as often as I’d like because it’s genrally $7.99/lb. and up around here — and very hard to find. Usually if I find it and it’s on sale I try to buy several.
