Our office closed at 3:00 yesterday afternoon and I knew then that I would be off of work today. It was a scary drive home because it was white out conditions – I could only see about 5 feet in front and behind me, and the road I drive on has a speed limit of 55 – and people were still driving that fast – I was so happy when I finally pulled in our driveway!
I sat in my comfy chair and it was like I was in a snow globe:
The heavy snow didn’t start until around 8:00 at night. It was so windy! Here is what our deck looked like around 9:00 p.m.
Then this morning, here’s how it looks outside our back door:

Yesterday morning I was driving to work when I realized I never put anything together for breakfast. I stopped by McDonald’s, and while my brain was saying “I’ll have oatmeal” my mouth actually said “sausage McMuffin please.” In my head I was like, it’s probably about 8 points. Um, try 11 points!
For lunch I had two servings of my black bean and pork chili with some fritos for some crunch on top – lunch comes in at 9 points:
Aldi sells these potatoes for .69 cents a can. They made a quick side dish for dinner – just sauteed them in a cast iron skillet with a teaspoon of butter and threw in some canned green beans at the end.
I marinated pork chops all day in light Italian dressing. The recipe I was following had a “tuscan” glaze to pour over the chops, but after I made it, it was way too vinegary, so I came up with this mustard sauce. While I can eat mustard with a spoon, it cam be a bit overpowering for Tony. The chicken broth cut the bite, but you still had the mustard flavor.
Biz’s Rosemary Mustard Sauce
4 servings (about 1/8 of a cup) 1 Points Plus
- 1 tablespoon butter
- 1/2 cup chicken broth
- 1/4 cup Dijon mustard
- 2 tablespoons skim milk
- 1 teaspoon lemon juice
- 1 tablespoon orange juice
- 1 tablespoon chopped fresh rosemary
Put all ingredients in a skillet and cook over medium heat, stirring to combine and simmer for 10 minutes.
Then poured the mustard sauce on top: Dinner comes in at 10 points.
- 34 points (including Tony’s famous popcorn last night)
- no exercise
- average blood sugar 107
So in total we got about 17 inches of snow. I’ll be spending the day shoveling, snow blowing, and I’ll certainly be Bizzy in my Kitchen – I have plans to make artisan bread and bagels. 😀
Oh, have to share a proud Momma moment – Hannah made the President’s Deans List for her first semester in college. And just this past week, she got 52 out of 50 on her first math quiz this semester – go Hannah! 😀 So proud of you!

Glad you got home safely. I’ve been getting lots of extra workouts shoveling and chopping ice. I love winter but admit I’m looking forward to spring…only 44 more days…

I about died when i saw the words Rosemary and mustard in the same sentence. I have a mustard, garlic balsamic sauce that i make once in a while, but i love rosemary and was just thinking i wish i had a few more recipes with rosemary, and viola. So thanks. I’m excited to try that one out, might even do it tomorrow for lunch.
Can’t believe you had that much snow, that’s we normally get here, but it must have headed your way because we’ve just had sunny days…-22 sunny days. When it snows it’s more like +22 so i don’t mind the snow because the cloud cover makes it 40 degrees warmer. Still that is a crazy amount of snow.

That is a lot of snow Momma. Wow. I never understand why people think they can still drive the same in those conditions and then wonder why they wipe out or crash into someone else and wonder why.
Dinner looks good, but y’know…I have never been able to do those canned potatoes. They never tasted quite right to me.

So glad you are safe and snuggly at home! When I heard that the Chicago area was going to be hit super hard, I immediately thought of you. We didn’t get it as bad as I had thought, but it’s still nasty out there! Max has been in heaven. For some reason, the little turd loves snow! Enjoy your snow day!
