Holy cow. That’s all I have to say about my breakfast yesterday morning. I saw it on Heather’s Dish, who adapted it from Oh She Glows – what’s great about this breakfast is that it would be perfect for a brunch because you could make as many as you needed and they can be baked ahead of time. I just heated it up in my work microwave for 1 minute, then spooned it over 1/2 cup of Chobani and a teaspoon of granola. My changes? I reduced the sugar to 1/4 from 1/2 a cup, and tripled the amount of blueberries – I mean, fruit is free, right?! 😀
This kept me full for hours too, which I was kind of worried about – I ate this at 9:00 a.m. and didn’t have lunch until 1:30!

Ingredients
- 1/4 cup(s) sugar
- 1/4 tsp sea salt
- 1/2 tsp baking powder
- 1 item egg
- 1/4 cup Nonfat, Plain Greek Yogurt
- 1/4 cup(s) fat-free skim milk
- 1 tsp vanilla extract
- 2/3 cup(s) all-purpose flour
- 1 1/2 cup(s) fresh blueberries
- 2 Tbsp unpacked brown sugar
- 2 Tbsp regular butter, divided
- 1/2 tsp ground cinnamon, divided
Instructions
Preheat the oven to 350. Take 4 8 ounce Mason jars and place them on a cookie sheet. Spray with non-stick spray.
In a bowl, combine the sugar, egg, yogurt, milk, 1 tablespoon melted butter and vanilla.
Sift the flour, baking powder, and salt. Stir until just combined. In a smaller bowl, mash together the 2 tablespoons of brown sugar, 2 tablespoons flour, 1 tablespoon of butter and 1/4 tsp. of cinnamon for the streusel.
In each jar, spoon in 3 tablespoons of batter, a sprinkling of blueberries, 1/2 tablespoon of the streusel, and repeat.
Wipe off any excess batter from the outside of the jar. Bake at 350 for 30-45 minutes, or until a toothpick inserted comes out clean. Make sure to let the jars rest for 30 minutes before handling, and let cool completely before screwing the lid on.

The blueberries were so bubbly coming out of the oven, and the cake was so spongy.

The different combination of fruits you can use in this recipe is endless! And Hannah and I thought it might be nice to add some oats to the streusel layer too. YUM!
I am still a bit stuffy, so I walked for 45 minutes on the treadmill at lunch. I ended up watching My First Property on HGTV – I love that show. I think it’s funny that people say to the realtor “I want to have vaulted ceilings, stainless steel appliances, a separate office space, two car garage, and I don’t want to spend more than $150,000.” Right!
Lunch was leftover Spicy Carrot Soup with Chipotle peppers and a ham and cheese sammie on half of a flatout wrap. Lunch comes in at 8 points.
It was just me and Hannah for dinner, so we had breakfast pizzas! My blog friend Mary (go here to see her fabulous photography and recipes!) just made an artichoke and bacon pizza – my mouth waters just thinking about it. But what I loved about the recipe was the garlic sauce she used. While she uses 1/2 of this sauce for a 14 inch pizza, I only needed to use two tablespoons for our pita pizzas.

Ingredients
- 4 Tbsp minced garlic
- 2 Tbsp olive oil
- 2 Tbsp all-purpose flour
- 1 1/2 cup(s) fat-free skim milk
- 4 Tbsp regular butter
Instructions
In a small pan sauté, over medium heat, until very lightly beige: garlic, butter and oil.
Whisk in the flour and briskly whisk in 1 1/2 cups skim milk, stirring constantly until thickened. Set aside to cool. Great base for pizza!

Bake at 400 for 10 minutes. My lunch was on the light side protein wise, and I have to tell you that my blood sugar was starting to drop. I should have reached for a piece of fruit, but I was like “I am just about to eat dinner.” I took my pizza out – and it stuck.
I was able to salvage 3/4 of it, and decided to place it on top of my baking stone to try to crisp up the bottom, and upon removing it from the oven, it fell cheese side down on my cutting board. I have to tell you that I came so close to throwing the f-ing thing in the garbage. Yep, that’s how angry I get when my blood sugar is low!
But I took a deep breath – Hannah being in this situation with me more than once was like “Mom, mine tastes really good!”

Could you use frozen berries for the fresh in your breakfast jar?
I think the frozen berries would work – although I would thaw them first, they will probably just be more juicy since they are frozen. 😀

Sorry about the pizza frustration. Things like that really can set you off, I know. I had an incident with our coffee maker on Saturday (after I had hurt my ankle – I just wanted a damn cup of coffee, you know?!?) and I nearly threw the whole unit into the trash!
