A couple years ago I saw an ad for bacon salt and knew that Tony would be all over it. I recently got an email from the company with some of their new products, and Justin of J&D’s Foods was kind enough to sponsor a pre-holiday giveaway here at My Bizzy Kitchen!
I am pretty sure we all know someone (maybe even ourselves!) who think anything is better with bacon. This company even makes lip balm that tastes like bacon! So this would be a nice little bacon basket to the bacon lover in your life. Tony and I had bought a 3 pound tub of cottage cheese at Sam’s Club and it was nearing its expiration date. I’ve heard about cottage cheese pancakes so I decided to make them. The first recipe I tried sucked ass. The pancake never came together so into the garbage it went. The second recipe I tried was fantastic! I adapted this from Whole Foods – I left out the sugar but added sugar free vanilla extract, and subbed the milk for buttermilk and the all-purpose flour with gluten free flour.
Biz’s Gluten Free Cottage Cheese Pancakes
- 1 cup gluten free all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup egg whites
- 2 eggs
- 1 cup cottage cheese
- 1/2 cup buttermilk
- 1 tablespoon olive oil
Mix dry ingredients together. Mix wet ingredients together. Combine and mix well. I used a 1/4 cup measuring cup to make each pancake. This recipe made 10 pancakes at 101 calories, 2.9 fat, 11.1 carbs, 3.4 fiber and 7.2 protein for each pancake.
I sauteed 1 apple for the topping with 1/4 cup sugar free pancake syrup and had 2 turkey breakfast sausages.
Since I omitted the sugar in the recipe, these were more like savory pancakes – but so delicious. And filling! I ate this around 8:45 and didn’t eat lunch until 1:30! I am submitting this to Christina’s Friday Firsts 😀
I went to the gym with the intention of banging out a 5k on the treadmill using my walk/job method. But I wasn’t feeling the running – my lungs felt tight and I was struggling at 5.5 mph, so I ended up doing a hill climb walk at 10% incline at 4.0 mph for 45 minutes. It was a sweaty walk though! 😀
Lunch was leftover ancho chili and hominy stew – two servings this time since I forgot corn tortillas to make a quesadilla on the side.
Tony sent me an email in the late afternoon: “fried rice?” Tony makes the best fried rice! I had defrosted two pork chops, so our fried rice was teriyaki pork with veggies.

Did anyone watch 30 Rock last night? They had a flash back to when Liz Lemon (Tina Fey) was younger and the picture stopped Tony and I in our tracks because it looked exactly like I did at that age! I give you Biz circa 1979! I thought I really rocked the Dorothy Hamill bob. And what was with glasses back in the day? I remember having like 4 frames to choose from!
So My Bizzy Kitchen will be posting only Monday through Friday. It’s a whole life balance thing. I know you’ll be sitting in front of your computers Saturday and Sunday wondering . . . “I wonder what Biz is doing?” Ha! 😀

I had a good week – I’ve worked out each day. My weigh in isn’t until Monday so we’ll have to see what the scale says. I still need to drink more water – working on it!

There is definitely no bad way to have bacon, but my favorite is just straight out of the pan. Crispity, crunchity…bacon!

Mmmm….bacon. I love bacon any way I can get it but it’s especially excellent on a pizza with some bbq chicken 🙂
Frying up a whole pound and eating it straight out of the pan would be my preferred method… but that’s not very good for me is it? So, I’ll pick Pasta Carbonara… which also needs to be treated like a special occasion dish!

This isn’t my favorite way to have bacon (which is any way), but a cute story about my daughter. When the church would go camping, the preacher would always say that he would pack two lbs of bacon per day for breakfast – one lb for everyone and one lb for my daughter alone!! She loves bacon and would eat a whole lb for breakfast if I let her!
Man, I think that 10% incline at 4.0 mph for 45 min is a really hard walk. I’ve done 10% incline, but I can’t do 4.0 mph for it, maybe I can do 3.6 mph. And certainly not for 45 min. You’re amazing!!
I got ya on the work-life balance thing. As you see, my posts aren’t all that frequent anymore. Quality over quantity, right? You’ve managed to maintain quality.
My favorite way to have bacon is like the fortune cookie thing: in bed.
That or in my BLT dip: mayo + green onions + lots of bacon + other stuff + King’s Hawaiian bread. MMMMM!!!

I forgot about cottage cheese pancakes. I made some along time ago with oatmeal and they were very good!
Bacon! Bacon! Bacon! Yes I do love it! A BLT is my favorite and second is a butternut squash and pasta dish with hickory smoked bacon! YUM!

There’s an annual Bacon Festival here in Iowa. I like bacon, but not at a festival level. 🙂 My fave way to eat it is crumbled atop a baked potato.

Congrats on the balancing act, I cut down in the spring to two posts a week. It’s a lot of work, as anyone with a blog will know.
I got my neice the bacon salt for xmas once, I never did hear how it was. Have you ever gone to Gene’s Sausage and gotten their double smoked bacon? They make it on site and it comes in slabs for you to slice yourself. There’s nothing like it on this earth. I actually give it away as gifts when I go home to Minnesota.

I made cottage cheese pancakes once and they turned out okay. Your first picture of the apple on top of the pancake looks kind of vulgar. Wonder if it’s just my dirty mind. 🙂
I love bacon salt. My brother buys it and he uses it all the time on his eggs. I use it sometimes, it’s good though. I love applewood smoked bacon, it smells and tastes the best. I bought some at Costco last time and it was disappointedly bland. I’m sticking with applewood. I totally COULD just eat it out of the pan but I love to put a slice on my eggs in the morning. I like using a tsp. of bacon grease too. Yummy!
