Anyone who knows me knows that I probably haven’t bought clothes retail for at least fifteen years. I am the garage sale/thrift store/good will queen! Best purchases so far? An Anne Taylor suit – pants/skirt/jacket for $9, several Coach bags (that I didn’t pay more than $20 bucks) and a Prada purse for $8! I once bought a coach messenger bag at a garage sale for $5 because the zipper was broken. What most people don’t know is Coach has a lifetime warranty. I took it to a Coach store, gave them $20 bucks for shipping and two weeks later I had a working bag!
So yesterday I decided to wear a pair of J. Jill pants I got at Goodwill. They are lined, pleated, very nice and I got them for $4. So once I put the pants on, I was like, well, I need to wear nicer shoes, and so the domino effect happened. If I had nice pants and nice shoes on, I needed a nicer top, put on make up, fix my hair AND wear jewelry! Questions I got?
- “Did you die your hair?”
- “Did you get a hair cut?”
- “Are you going on an interview?”
- “Are you and Tony going out to a special dinner after work?”
I must really look like crap the rest of the time to get such a reaction! And I wasn’t even that dressed up!
I think maybe I won’t wear any makeup today, then they will think I went on an interview at lunch instead of the gym! 😀
Breakfast: bagel sammie!
With probably the best peach I’ve had in a long time.
I ended up doing 42 minutes on the stairmaster while watching Giada at home. She kinda gets on my nerves. Next time you watch her show, see how many times she says “just like that.” I wanted to poke her eyes out by the end of the show if she said it one more time!
Another leftover baked potato became a chili, three pepper baked potato! It was a 7 ounce potato, 1/2 cup of my latest Cincinnati chili, three different colored diced peppers, baby spinach and then a sprinkle of ranch dressing and of course, lots of hot sauce! Lunch comes in at 512 calories, 53 carbs, 46 protein, 12 fat and 8 fiber.
As I was driving home, I noticed one of my favorite trees is starting to turn – I think this is a maple?
I had to stop by the store to pick up some apple cider for my BSI recipe this week – don’t forget Errign (pronounced “Erin” – I love her name!) is hosting this week – you have until October 17 to submit your recipes! I decided to stop at the 50% meat bin, and scored – I actually thought I was getting this 1 pound porterhouse for $6.75 as 50% off – but I got 50% off the lowest price! For $7 I got two 1 pound porterhouse steaks!
I was trying to think what I could do with apple cider when I decided to try to make apple cider marshmallows! Hannah is my marshmallow girl – the first time I made marshmallows the look on her face was priceless! What I love about homemade marshmallows is that they take a long time to melt, so putting them on top of a cup of cocoa is delicious!
I wanted to see if I could sub out the water in the recipe for apple cider – it worked! 😀
Apple Cider Marshmallows
- 1 cup confectioners sugar
- 3 1/2 envelopes unflavored gelatin
- 1 cup cold apple cider, divided
- 2 cups sugar
- 1/2 cup light corn syrup
- 1/4 teaspoon salt
- 2 large egg whites
- 1 tablespoon vanilla extract
First I oil the bottom of a 13×9 pan – not much, about a teaspoon, but I use my fingers to get it up on the sides too. I’ve also learned that you can’t use too much powdered sugar on the bottom – sprinkle powdered sugar all over the bottom of your pan and make sure its all covered.
In a stand mixer, but the gelatin and 1/2 cup cold apple cider and let sit for 5 minutes to soften.
In a heavy pan, heat the sugar, corn syrup, 1/2 cup apple cider and salt over low heat, just to dissolve the sugar. Increase the heat to medium high and boil, without stirring, until it reaches soft ball stage on a candy thermometer (240 degrees). This will take about 12-15 minutes.
Meanwhile, with a hand mixer, beat egg whites just until they hold stiff peaks – about 6-10 minutes.
When it reaches the temperature, add the sugar mixture to the gelatin mixture and beat on high speed until it is white, thick and about tripled in volume.
This part is hard – trying to make it even in the pan because its so sticky. The trick is to get it all the the pan, cover with more powdered sugar, and using your hands, even it out.
Put it in the refrigerator at least three hours, or overnight, uncovered. Using a sharp knife, cut around the edges and put on a cutting board. Once you cut the squares, dip the stick sides into the powdered sugar that is on the board.
Hannah and I both had a taste and we can definitely taste the hint of apple! Not only is this my BSI recipe, but I am submitting this to Christina’s Friday Firsts – first time making apple cider marshmallows!
I had a great week! I did not have the extra licks and tastes this week like I have been. I’ve been around 1500 calories a day, all below 30% of calories from fat. I’ve worked out between 45 and 60 minutes every day this week, and have only had three glasses of wine since Saturday – not bad!
Stats for Thursday
- 1517 calories, 144 carbs, 110 protein, 47 fat,14.9 fiber
- 29% of calories from fat
- 42 minutes on stairmaster
Have a great Friday!
I am so impressed with your marshmellows! They look amazing. I’m glad you said something about the lifetime warranty at Coach. I have a Coach purse (I did not pay full price) but the zipper is funky. Going to get it fixed now!
i love that you made your own marshmallows! fancy time!
It sure is hard to cut out the extra licks and tastes when cooking, isn’t it? It would be great if they didn’t count, wouldn’t it?
oh my goodness that potato looked so good I had to scroll down real fast not to drool! lol 🙂 I ALWAYS get hungry when I stop by your site- even after I eat dinner! 🙂
You look so pretty in that pic! 🙂
I totally laughed out loud when you said something about poking her eyes out. I love your outfit! 🙂 So pretty! I am growing to hate paying full price for things – we have Marshalls & this awesome consignment boutique in town that only takes name brand stuff that’s in style & good condition – I got two tops there last week for less than 15$ and a dress & jeans there for less than 30$ – love it. I think the classiest I get is paying 30-40 dollars for pairs of Levis & most of the stuff I buy at Target! 🙂
Those marshmallows look amazing – can’t wait to see some more entries from people!
Nice outfit! That’s like my daily work “uniform.” Love it.
Such a great week – and with all that amazing food!
Hi Hottie,
I guess I hadn’t made it to your site before. I now know not to come here hungry! Your food photos are too good. And I absolutely love your header. It’s beautiful.
You really did great this week. That’s exactly what I’m going for in week 3!
Happy Friday, Biz!
You look fabulous! That would be very dressed-up for me, too. You sure got some great bargains there. And makeup? I only replenish my makeup when it’s dance recital season…I think the kids wear more in their dress rehearsal + 2 performances than I wear all year!
That was a creative idea for using apple cider. My daughter loves marshmallows, but I’d be afraid that I’d go through the hassle of making them, and then she wouldn’t like the homemade kind. Kids can be so fickle. 🙂
And I loved how colorful and tasty-looking your lunch was! I kind of have a yen for potato skins now.
I rarely buy retail too – and if I do it’s at Marshall’s or TJMaxx at major discount. I just can’t pay full price, it hurts my soul! hehe
Giada has been bugging me lately, too. Johnny pointed out to me how fake she was in her reactions and stuff, so now she seems so exaggerated to me. Another one I cannot STAND is freaking Sandra Lee. OMG next time you watch you have to keep an eye out for her “cupping” hand. She cups her hand under every single spoon, stir, ladle, etc. and it annoys me. It’s this fake little cup like she’s going to drip when there is no threat of a drip anyways. GAH!
Thanks for the Friday Firsts shout out! I think apple cidar marshmallows is so creative! A double dose of fall! 🙂
Yep, I can’t stand Sandra Lee too – even her show about how to save money at the grocery store drives me nuts!
That woman is a booze hound – she constantly looks totally toasted. And her “table scapes” are SUPER ugly. 🙂
First of all, you look very, very pretty in that photo. In other words, “You clean up nice”! 🙂
Secondly, I really want to make those marshmallows! One thing, though, when do you fold in the beaten egg whites? After you add the sugar mixture to the gelatin mixture?
Oops – yep, at the very end fold in the egg whites – not really sure that step is really necessary though!
oh yum! I want an apple cider marshmallow!
Cute! I love the shirt!
Great week! You look great in that picture and I really love the blouse. The marshmallows sound heavenly.
I love the pink shirt in your picture – you look so pretty! 🙂
haha I will definitely pay attention the next time I watch Giada. I do like her, but what’s most annoying to me is how she pronounces about 10 words in her Italian accent….yes, I know she lived there til she was 7, but really?!
You are SO creative with that marshmallow dessert! Even though I’m not a *huge* fruity/dessert person, my fave fruity desserts are pineapple or apple. And of course, who doesn’t love marshmallow??!
Thank you! That bugs the shit out of me too!
Those marshmallows sound really, really good! And I like your top – it’s a gorgeous colour!!
Looks good other than the gelatin.
I knew that about Coach, but only because I am a coach-a-holic. I am a sucker for coach bags. I even brought 4 with me to the island, which is stupid because they are leather or suede and it molds here. I clean them every month or so.
You look so pretty! And the tree is pretty, too! Now the cider marshmallows look and sound divine, but it looks like a lot of work!
Apple cider anything is good in my opinion! lol
I wish I could find the things you do at thrift stores and garage sales. That is great to know about Coach though!
I love the outfit Biz!
And my kids would go nuts if I made home made marshmallows!
Apple cider marshmallows – what a great idea! I think you’re on to something with the flavored marshmallows!
You look great dressed all “nice” – cracks me up that you threw so many people at work. Maybe you’ll get a raise because they think you’re looking for a new job. 😉
I love the thrift store like it is my first born child. My daughter bought her Prom gown this year for 8.98 – no kidding and it was gorgeous.
You inspired me yesterday and I actually curled my hair AND put on make up [is that a good thing?] but I got the same reaction. Wallene [our youngest] asked “Do you and Dad have a date?” Her little friend just looked at me and said “Wow” [as in gee SkippyMom you clean up kind of nice. No filter on this kid.] And when Pooldad got home he said “Um, so did I forget something? Do we have some place to go this evening?”
NO. LOL – I just felt like make up you doofs. Hee. But thanks it was fun.
Oh, those potatoes look good good good.
I’ve never made marshmallows. I’ve never actually liked them (unless burned over a fire). Something about the texture. And the ease of which you could make it a nickname for me.
You look so nice in your new outfit! The apple cider marshmallows was a stroke of genius. Congrats on your success with the Hot 100 goals this week!
OMG – I WANT your lunch! All that color and flavor sounds amazing!!!
Looking good, Biz. Whenever someone puts a tie on at my job we immediately figure they have a job interview or a meeting with the big-wigs.
You just crack me up! You look lovely in the photo. Congrats on such a stellar Hot 100 week. I hope it pays off exactly like you want it to.
I have always wanted to make homemade marshmellows but have been too scared to try….you go girl, yours worked..i cant tell you enough how much i love your blog….
thanks for all the hardwork you do, and you look amazing in that pic…soooo skinny minny…
